6 tablespoons unsalted butter melted, and 1/2 cup (1 stick), room temperature, plus more for pan
1 3/4 cups all-purpose flour (spooned and leveled), plus more for pan
1/2 cup packed light-brown sugar
1/2 teaspoon salt
1/2 teaspoon baking powder
1 cup confectioners' sugar
1/2 teaspoon pure vanilla extract
2 large eggs
2 containers (5 ounces each) blackberries

Steps:

  • Preheat oven to 350 degrees. Butter an 8-inch square baking pan. Line bottom with parchment paper, leaving an overhang on two sides; butter and flour paper, tapping out excess.
  • Make topping: In a medium bowl, whisk together melted butter, brown sugar, and 1/4 teaspoon salt; add 1 cup flour, and mix with a fork until large moist crumbs form. Refrigerate topping until ready to use.
  • In a medium bowl, whisk together remaining 3/4 cup flour, baking powder, and remaining 1/4 teaspoon salt; set aside. In a large bowl, using an electric mixer, beat room-temperature butter, confectioners' sugar, and vanilla until light and fluffy; add eggs, one at a time, beating well after each addition. Reduce speed to low; mix in flour mixture. Spread batter evenly in pan; sprinkle with blackberries, then chilled topping.
  • Bake until golden and a toothpick inserted in center comes out with moist crumbs attached, 40 to 45 minutes. Cool completely in pan. Using paper overhang, lift cake onto a work surface; cut into 16 squares.

Steps:

  • In a medium bowl, stir together graham cracker crumbs, confectioners' sugar, peanut butter and melted butter. Press firmly into the bottom of a 9x13 inch pan. Melt chocolate chips over a double boiler or in the microwave, stirring occasionally. Spread melted chocolate over the crumb crust. Chill for about 5 minutes, then cut into bars before the chocolate is completely set, then chill until ready to serve.

1 cup white sugar
½ cup applesauce
1 egg, beaten
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
cooking spray
3 cups fresh blackberries
3 tablespoons instant tapioca
1 cup chocolate chips

Steps:

  • Mix sugar, applesauce, egg, and vanilla extract together in a large bowl.
  • Combine flour, baking powder, cinnamon, and nutmeg in a separate bowl. Pour into the applesauce mixture; mix until a thick dough forms. Place dough in the refrigerator.
  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish with cooking spray.
  • Combine blackberries and tapioca in a saucepan over low heat; cook and stir until mixture is the consistency of a runny jam, about 10 minutes. Remove from heat.
  • Turn dough out onto a floured work surface; knead about 10 times. Divide dough into 2 pieces. Roll each piece to 1/4-inch thickness. Press 1 piece of rolled dough into the prepared baking dish.
  • Melt chocolate chips in a microwave-safe glass or ceramic bowl in 15-second intervals, stirring after each melting, 1 to 3 minutes. Spread chocolate over dough.
  • Spread blackberry mixture over the chocolate. Cover blackberry mixture with the second piece of dough.
  • Bake in the preheated oven until top is golden brown, about 30 minutes. Let cool before before slicing, at least 15 minutes.

This recipe swaps out the traditional graham cracker crust for salty pretzels, ups the coconut and adds plump, seasonal blackberries to bring in some summer flare. These bars will leave you with sticky fingers, so be sure to pack napkins!

Nonstick cooking spray, for the pan
2 1/4 cups pretzels
8 tablespoons (1 stick) unsalted butter, melted
2 tablespoons sugar
1/2 cup butterscotch chips
1 1/2 cups unsweetened coconut flakes
3/4 cup almonds, chopped
One 14-ounce can sweetened condensed milk
1 pint blackberries

Steps:

  • Preheat the oven to 325 degrees F.
  • Spray an 8-inch square flameproof pan with nonstick cooking spray. Layer over one slip of parchment paper with edges hanging over. Spray with additional nonstick cooking spray. Set aside.
  • Combine 2 cups of the pretzels, the melted butter and sugar in a food processor and pulse until combined. Transfer to the prepared pan. Using your hands or a spatula, press the crust into the pan.
  • Sprinkle over the butterscotch chips, 1 cup of the coconut flakes and 1/2 cup of the almonds. Gently but firmly press in with clean hands or a spatula. Pour over the condensed milk and spread evenly. Gently but firmly press in the blackberries until they are partially submerged. Top with the remaining 1/4 cup pretzels. Sprinkle over the remaining 1/2 cup coconut flakes and 1/4 cup almonds. Press in the filling with a spatula.
  • Bake until golden brown around the edges, 30 to 35 minutes (see Cook's Note). Turn the oven to broil and broil until the coconut is just toasted, 1 to 2 minutes. Let cool completely in the pan. Once cool, transfer the pan to the refrigerator and chill until fully set, at least 4 hours and up to overnight.
  • Using the parchment paper, remove the bars from the pan and slice into 16 pieces.

1-3/4 cups all-purpose flour
1 cup sugar
1 cup cold butter, cubed
1 large egg
1/2 teaspoon almond extract
1 cup seedless raspberry jam
1/2 cup miniature semisweet chocolate chips

Steps:

  • In a large bowl, combine flour and sugar. Cut in butter until mixture resembles coarse crumbs. Stir in egg and extract just until moistened. Set aside 1 cup crumb mixture for topping., Press the remaining mixture into a greased 11x7-in. baking pan. Bake at 350° for 5 minutes. Spread with jam and sprinkle with reserved crumb mixture. Bake 35-40 minutes longer or until golden brown., Sprinkle with semisweet chips. Return to the oven for 30 seconds or until chips are glossy. Cool completely on a wire rack. Cut into bars.

1 1/2 cups all-purpose flour
3/4 cup sugar
1/8 teaspoon salt
3/4 cup butter (1 1/2 sticks)
2 large eggs
1 cup sugar
1/2 cup sour cream or greek yogurt
1/4 cup + 2 Tablespoons flour
Pinch of salt
16 ounces blackberries, washed and cleaned.

Steps:

  • Preheat oven to 350* Line an 8x8 square pan with non-stick foil, extending up the sides of the pan. In a food processor or a mixing bowl with pastry blender, add flour, sugar & salt. Stir to mix. Cube butter into small pieces and add to food processor or mixing bowl. Blend until mixture is pea sized pieces. Place 3/4 of the mixture into pan and press down tight, creating a crust. Reserve remaining 1/4 of mixture for top crust. Bake for 12 -15 minutes or until edges are just barely golden. While crust is cooling, make filling mixture. In a new bowl, combine eggs, sugar, sour cream (or greek yogurt), flour & salt until well combined. When crust is cool, place clean berries on top. Pour egg mixture over berries. Top with remaining crust mixture. Return to oven and bake for 45 - 55 minutes until center is no longer jiggly and set. Cool bars completely before serving. If not using right away, refrigerate cooled bars.

Steps:

  • Heat oven to 350 degrees. Butter an 8- or 9-inch square pan and line with parchment paper, leaving a 2-inch overhang on two of the sides.
  • In a large bowl, stir together butter, peanut butter, brown sugar and 1/2 cup granulated sugar until smooth and creamy. Add egg and vanilla and beat to combine. Add flour, salt and baking powder and stir to combine.
  • Press about two-thirds of the dough into the prepared pan. In a separate bowl, toss berries with remaining 1/4 cup granulated sugar. Scatter berry and sugar mixture over dough, then crumble remaining dough over top, pulling it apart into big crumbs.
  • Bake on the middle rack until golden brown, 45 to 50 minutes. Sprinkle with flaky salt, if using. Let cool completely before slicing into squares. Store, covered in the refrigerator, for up to 3 days.
