4 cups apple juice
1/2 cup Red Hots candy
1 package (1-3/4 ounces) powdered fruit pectin
4-1/2 cups sugar

Steps:

  • In a large saucepan, combine the apple juice, candies and pectin. Bring to a full rolling boil over high heat, stirring constantly. Stir in sugar; return to a full rolling boil. Boil and stir 1 minute. , Remove from heat; skim off foam. Ladle hot mixture into six hot sterilized half-pint jars, leaving 1/4-in. headspace. Wipe rims. Center lids on jars; screw on bands until fingertip tight., Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 5 minutes. Remove jars and cool.

12 small apples (4 lb.), stemmed, well chilled
2 cups sugar
1/2 cup water
1 pkg. (0.14 oz.) KOOL-AID Cherry Flavor Unsweetened Drink Mix

Steps:

  • Wash apples, then dry completely. (Note: In order for the sugar syrup to stick to the apples, the apples need to be well chilled before washing, drying and dipping in the syrup.) Insert wooden pop stick into stem end of each apple.
  • Cover baking sheet with parchment; spray with cooking spray. Bring sugar and water to full rolling boil in medium saucepan on medium-high heat. Cook 8 to 9 min. or until syrup registers 238ºF on candy thermometer. Remove from heat. Immediately whisk in dry drink mix until blended.
  • Dip apples, 1 at a time, into sugar syrup, turning to evenly coat each apple. Hold apple over pan to allow excess syrup to drip off. Place apples, 2 inches apart, on prepared baking sheet. Let stand 10 min. or until firm. Serve immediately or refrigerate up to 2 days before serving.

7 cups apple juice
1 cup red cinnamon candies
8 cups white sugar
1 (1 3/4 ounce) box sure-jell pectin
1/2 teaspoon butter

Steps:

  • Measure apple juice and cinnamon candies into an 8 quart saucepan.
  • Heat and stir to melt candies.
  • Measure sugar into a separate bowl.
  • Stir in fruit pectin into fruit juice in saucepan.
  • Add butter.
  • Bring to a boil (rolling) stirring constantly.
  • Quickly stir in all sugar.
  • Return to full rolling boil and boil EXACTLY 1 minute, stirring constantly.
  • Remove from heat.
  • Skim off foam and ladle into pint jars leaving 0.125 inch head space.
  • Process in a boiling water bath for 5 minutes at altitudes up to 1000 feet.

2 envelopes unflavored gelatin
1 package (3 ounces) lemon gelatin
1/2 cup chopped walnuts

Steps:

  • In a large saucepan, combine the sugar, applesauce and gelatins; let stand for 1 minute. Bring to a boil over medium heat, stirring constantly. Boil for 15 minutes. Remove from the heat; stir in walnuts and vanilla., Immediately pour into a greased 11x7-in. baking dish. Cover and refrigerate overnight. 1 1/2 cups corn syrup
1 (3-ounce) box cherry gelatin dessert mix
1/2 cup hot water
6 Granny Smith apples, washed and dried
6 wooden candy apple sticks
1 cup chopped nuts

Steps:

  • In a saucepan over medium-low heat, combine glaze and corn syrup. Simmer for 20 minutes.
  • Dilute gelatin mix in hot water and pour in saucepan with glaze. Stir and continue to cook until temperature on a candy thermometer is between 180 and 200 degrees F.
  • Shove wooden candy sticks into bottom of apples, far enough to secure inside. Dip each apple in syrup and turn until completely coated. Immediately roll bottom half of apples in nuts. When cool arrange on parchment-lined tray.

1 cup buttermilk

3 large Granny Smith Apples

  • In a bowl, combine the instant vanilla pudding and buttermilk and beat for 2 minutes, or until fully combined and thickened.

A crystal clear jelly is what you are after here, so look for cooking apples - you want firm, crisp fruit that will hold up to stewing and straining without falling apart. Once the apples are cooked and their juices are extracted, the resulting jam is reminiscent of floral honey and tart citrus. Serve with a buttery croissant, warm toast, as a filling for pastries or a glaze for fruit tarts and cakes.

3 1/2 pounds cooking apples, such as Granny Smith, Pink Lady, Jonagold, Braeburn or Honeycrisp, or a combination, scrubbed
4 cups granulated sugar
1/4 cup lemon juice (from about 2 lemons), plus more as needed
1/2 teaspoon kosher salt (Diamond Crystal)

Steps:

  • Cut the apples into 1-inch pieces without peeling or coring, but discard any damaged or spoiled spots.
  • Place the apples in a large nonreactive pot and pour in 8 cups water. Bring to a boil over medium-high heat. Lower heat to maintain a simmer and cook without stirring until the apples soften, 35 to 40 minutes.
  • Remove from the heat. Set a fine-mesh sieve lined with cheesecloth or a muslin bag over another large pot, and pour the contents of the pot into the sieve. Do not press on the apples to prevent the jelly from becoming cloudy. You should have at least 7 cups of juice. Some apple varieties absorb more water and may need 2 to 8 hours for the juice to naturally strain out. If that's the case, refrigerate the pot.
  • Place a small plate in the freezer to use for testing the setting point of the jelly. Set the pot with the juice over medium-high heat. (Discard the fruit.) Add the sugar and lemon juice, and stir until the sugar is dissolved. Bring to a boil, skimming and discarding any foam that rises to the surface. Reduce the heat to medium and simmer until the liquid reduces by about three-quarters and a candy or deep-fry thermometer registers 225 degrees, 40 to 50 minutes. To test for doneness, spoon a small amount of liquid onto the cold plate from the freezer and return to the freezer to cool completely, about 2 minutes. Drag a spoon through the jelly. The setting point has been reached if it wrinkles and the wrinkles hold their shape. If they don't, continue to cook the jelly and test every few minutes on the cold plate.
  • Once the jelly is done cooking, add the salt, stir to dissolve and adjust with more lemon juice, if needed, for a nice balance of sweet and tart with a floral taste. Ladle the hot liquid into clean, sanitized jars, screw on the lids and follow steps to can, or allow to cool to room temperature and store in the refrigerator for up to 4 weeks.

2 pounds McIntosh and 1 pound Granny Smith, cut up with cores and skin
3 3/4 cups water
Sugar
2 tablespoons fresh lemon juice
Coarse salt

Steps:

  • Combine fruit and water in a saucepan. Bring to a boil, reduce to a simmer, and cook, partially covered, mashing occasionally with a potato masher, until fruit is very soft, 10 to 15 minutes. Transfer mixture to a fine sieve set over a heatproof bowl; let drain without pressing on fruit, 4 hours. Strain again through sieve lined with damp cheesecloth. Measure juice; you will have 3 to 4 cups.
  • In a large heavy-bottomed pot, bring juice to a boil. Add 3/4 cup sugar for each cup of juice. Add lemon juice and 1/4 teaspoon salt. Return to a boil and cook, stirring frequently, 8 to 12 minutes. To test if jelly is done, dip a large metal spoon in, lift it horizontally above pot, and let mixture drip back in. Jelly is done when mixture has thickened slightly and drops of it slide together off spoon in a sheet. (Temperature should register 221 degrees on a candy thermometer.) Skim foam from top.
  • Ladle jelly into clean containers, leaving 3/4 inch of headroom. Let cool completely. Cover, label, and refrigerate up to 1 month, or freeze up to 1 year.

1 (1 ounce) envelope instant caramel-flavored hot chocolate mix (such as Land O Lakes® Cocoa Classics®)
½ cup boiling water
½ cup coconut milk
1 (.25 ounce) package gelatin (such as Knox ®)
¼ cup white sugar
2 drops yellow food coloring
½ cup butterscotch schnapps

Steps:

  • Halve apples cutting them from the stem down. Use a melon baller to hollow the apples, leaving enough flesh for the shells to hold their form. Squeeze lemon juice over the apples to reduce browning; arrange onto a baking sheet.
  • Stir hot chocolate into boiling water in a saucepan off heat until smooth. Stir coconut milk into the cocoa mixture. Sprinkle gelatin over the cocoa mixture and leave undisturbed 1 to 2 minutes.
  • Place saucepan over medium-low heat. Stir gelatin into the cocoa mixture. Add sugar; stir to dissolve sugar into the mixture. Drop yellow food coloring into the mixture. Remove saucepan from heat and cool mixture slightly.
  • Pour cocoa mixture into the apple shells. Refrigerate 8 hours to overnight.
  • Cut each apple half into 4 wedges; serve immediately.
