½ cup butter
2¾ cups semi-sweet or dark chocolate chips
1 cup light brown sugar
1 tablespoon vanilla extract
4 eggs
1 cup all-purpose flour *
½ teaspoon kosher salt
4 ounces cream cheese (softened)
¼ cup butter (softened)
⅓ cup creamy peanut butter
2 cups powdered sugar
1-2 tablespoons heavy cream or milk (only as needed)
⅔ cup brown rice flour
⅓ cup tapioca starch

Steps:

  • Preheat the oven to 325°F. Line a 9x13 pan with parchment paper or line it with foil and grease it very well with butter. Melt the butter in a large saucepan, over medium heat. When the butter has melted, add 2 cups of chocolate chips and stir with a wooden spoon until they have melted.
  • Remove from the heat, add the sugar and stir to combine. Add the vanilla and then whisk or stir in the eggs, one at a time. When the mixture is smooth and shiny, slowly add the dry ingredients to the mixture in the saucepan.
  • Stir in ¾ cup of chocolate chips. Spread the mixture into the bottom of the prepared pan. Bake for 28-32 minutes, just until an inserted toothpick shows moist crumbs. Let the bars cool completely before frosting.
  • In a large mixing bowl, combine the cream cheese, butter, and peanut butter. Beat with an electric mixer (with the wire whisk attachment if possible) until thoroughly combined.
  • Gradually add the powdered sugar and beat until fluffy. The frosting should be thick, creamy, and spreadable. If it becomes too thick to easily spread, add a tablespoon of cream or milk and beat again, adding additional liquid only if necessary.
  • Gently spread the frosting over the completely cooled brownies and chill for 1-2 hours until firm. Slice into bars. Store the remaining brownies in an airtight container in the refrigerator or freezer.

Nonstick vegetable oil spray

4 ounces bittersweet (not unsweetened) or semisweet chocolate, coarsely chopped
1/2 cup (1 stick) unsalted butter
1 1/2 cups sugar
4 large eggs
1 teaspoon vanilla extract
1/2 cup all purpose flour
1/4 teaspoon salt
Frosting
1 cup creamy peanut butter (do not use old-fashioned or freshly ground)
3 tablespoons unsalted butter, room temperature
2/3 cup powdered sugar
1 teaspoon vanilla extract

Steps:

  • For brownies:
  • Preheat oven to 350°F. Line 13x9x2-inch baking pan with aluminum foil, leaving 2-inch overhang on both short sides. Spray foil with nonstick spray. Combine both chocolates and butter in heavy small saucepan. Stir over low heat until melted and smooth. Cool to barely lukewarm. Using electric mixer, beat sugar, eggs, and vanilla extract in large bowl on high speed until mixture thickens and is pale yellow, about 5 minutes. Reduce mixer speed to low; beat in flour and salt, then melted chocolate mixture. Transfer mixture to prepared baking pan.
  • Bake brownies until tester inserted into center comes out with moist crumbs still attached, about 20 minutes. Transfer baking pan to rack; cool 15 minutes. Press gently on edges of brownies to level with center. Cool completely in baking pan.
  • For frosting:
  • Combine peanut butter and butter in medium bowl. Using electric mixer, beat until smooth. Add powdered sugar and vanilla extract and beat until well blended and smooth. Spread frosting evenly over brownies in pan. Refrigerate at least 1 hour. Using foil as aid, lift out brownies from pan. Cut into squares. (Can be prepared 1 day ahead. Cover and keep refrigerated. Let stand at room temperature 30 minutes before serving.)

10 tablespoons unsalted butter (cubed)
¾ cup granulated sugar
½ cup light brown sugar
¾ cup unsweetened cocoa powder
½ teaspoon salt
1 tablespoon instant coffee granules
½ teaspoon baking powder
2 large eggs (cold)
2 teaspoons vanilla extract
⅔ cup all purpose flour
½ cup chocolate chunks or chocolate chips
walnuts (if desired)
1/2 cup 1 stick unsalted butter, softened
3/4 cup creamy peanut butter
2 1/4 cup powdered sugar
2 tablespoons milk
1 teaspoon vanilla
1/4 cup semi sweet chocolate chips

Steps:

  • Preheat oven to 350 degrees. Line a 9 x 9 or 8 x 8 pan with aluminum foil or parchment paper. Lightly spray with cooking spray or grease with butter. Set aside.Add butter to a medium saucepan and cook over medium heat until light brown / caramel in color. 5-10 minutes. Make sure to keep and eye on it so butter does not burn. It also helps to use a light colored saucepan for this.
  • Pour browned butter into a large bowl along with both sugars, cocoa powder, salt, instant coffee granules and baking powder. Stir until combined and allow to rest for 5 minutes or until the mixture has cooled down.
  • Stir in the eggs and vanilla and mix until batter has a nice sheen to it.
  • Fold in the flour and chocolate chunks or chips and stir until combined. (Do not over mix)
  • Pour the batter into the prepared pan and bake for 20-25 minutes or until the top is set and a toothpick comes out clean.
  • Cool completely and lift out the aluminum foil or parchment paper.Frost with peanut butter frosting and drizzle with melted chocolate.
  • Cut into 9 brownies and serve.
  • In a stand mixer with the paddle attachment cream butter and peanut butter until light and fluffy, 2-3 minutes.
  • Add in powdered sugar, milk and vanilla and mix until smooth and lump free.
  • Set aside until you are ready to frost your brownies.
  • Melt chocolate in a small saucepan or in the microwave in 15 second intervals until melted.Pour the chocolate into a small ziplock bag and cut a small snip in the corner off of the bag.Set aside until you are ready to drizzle your brownies.

1/2 cup salted butter
4 oz unsweetened chocolate
3 eggs
1 1/2 cups white sugar
1/8 tsp salt
1 tsp vanilla
3/4 cup all purpose flour
3/4 cup creamy peanut butter
1/2 cup salted butter, (softened)
1 1/4 cup powdered sugar
1/2 tsp vanilla
1/4 tsp salt
1 tbsp milk of your choice
1/3 cup peanut butter baking chips
1/3 cup milk chocolate baking chips

Steps:

  • Preheat oven to 325. Butter a 9x9 square pan.
  • Melt butter and chocolate in a small saucepan over low heat.
  • In a different bowl, whisk eggs, sugar, salt, & vanilla.
  • Slowly whisk in the melted chocolate and butter.
  • Pour batter into prepared pan.
  • Bake the brownies for 25-30 minutes, until a toothpick inserted about 2 inches from the sides is clean. (Be very careful not to overbake!)
  • Let the brownies cool on a wire rack.
  • Using an electic or stand mixer, beat the butter and peanut butter on low-medium until smooth.
  • Slowly add the powdered sugar a little bit at a time until it's all combined.
  • Add salt & vanilla. Slowly add in milk.
  • Increase the speed to high and beat until well combined and smooth. (Scrape the sides of the bowl halfway through).
  • Let the brownies cool completely before frosting. Once the brownies are cool, spread the frosting evenly over the brownies.
  • Top the frosting evenly with the baking chips. Cut, serve and ENJOY!

Steps:

  • Preheat the oven to 350 degrees F. Line one 12-cup standard muffin tin with paper cupcake liners.
  • Put the butter, cocoa powder and chocolate in a large bowl. Pour the boiling water over and let stand 5 minutes. Whisk until smooth, and then whisk in the sugar, vanilla and eggs. Whisk in the flour, baking powder, salt and baking soda until just combined. Stir in the chocolate chips. Divide the batter among the prepared liners so they are about three-quarters full.

YUM... there is only this one word to describe these. Yum. I've adapted this from a brownie mix when I was in need of a peanut butter chocolate fix! Preparation time includes chilling.

1 low-fat brownie mix (or use a regular one)
1/4 cup egg substitute
1 tablespoon canola oil (or any nuetral oil)
1 (12 ounce) container white frosting (or vanilla)
1/2 cup creamy peanut butter (or reduced fat)
6 ounces dark chocolate chips
2 tablespoons butter (or margarine)

Steps:

  • Make brownies as directed using oil, egg substitute, and water. Bake as directed in a 13 by 9 pan.
  • After allowing brownies to fully cool (about 1 hour), mix peanut butter and frosting together using an electric mixer. Spread on brownies. (Yes, it is kind of thick.).

½ cup butter, softened
½ cup peanut butter
½ cup white sugar
½ cup brown sugar
1 egg
1 teaspoon vanilla extract
1 cup all-purpose flour
½ teaspoon baking soda
1 pinch salt

⅔ cup peanut butter
⅔ cup confectioners' sugar
¼ cup shortening
½ cup milk
1 teaspoon vanilla extract
¾ cup frozen whipped topping, thawed

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Grease a 9x9 inch baking pan.
  • In a medium bowl, blend together the butter, 1/2 cup peanut butter, white sugar, brown sugar, egg and 1 teaspoon of vanilla until smooth. Combine the flour, baking soda and salt; stir into the sugar mixture. Spread evenly into the prepared pan.
  • Bake for 20 minutes in the preheated oven, until firm. Remove from the oven and sprinkle with chocolate chips. Let stand for a minute, then spread the chips to form a layer.
  • To make the topping, blend together the 2/3 cup peanut butter, confectioners' sugar and shortening. Gradually stir in the milk and 1 teaspoon vanilla. Gently mix in the whipped topping. Chill. When brownies and topping are both cooled, spread topping onto brownies and cut into bars.

  • Preheat oven to 350°F. Line 13x9x2-inch baking pan with aluminum foil, leaving 2-inch overhang on both short sides. Spray foil with nonstick spray. Combine both chocolates and butter in heavy small saucepan. Stir over low heat until melted and smooth. Cool to barely lukewarm. Using electric mixer, beat sugar, eggs, and vanilla extract in large bowl on high speed until mixture thickens and is pale yellow, about 5 minutes. Reduce mixer speed to low; beat in flour and salt, then melted chocolate mixture. Transfer mixture to prepared baking pan.
  • Bake brownies until tester inserted into center comes out with moist crumbs still attached, about 20 minutes. Transfer baking pan to rack; cool 15 minutes. Press gently on edges of brownies to level with center. Cool completely in baking pan.
  • Combine peanut butter and butter in medium bowl. Using electric mixer, beat until smooth. Add powdered sugar and vanilla extract and beat until well blended and smooth. Spread frosting evenly over brownies in pan. Refrigerate at least 1 hour. Using foil as aid, lift out brownies from pan. Cut into squares. DO AHEAD Can be prepared 1 day ahead. Cover and keep refrigerated. Let stand at room temperature 30 minutes before serving.
