SPECIAL K BARS
This easy no-bake recipe features chewy peanut butter cereal bars topped with a chocolate and butterscotch frosting.

Steps:
- Grease a large bowl with butter and place the Special K in the bowl.
- Grease a 9x13 or 8x11 baking dish. The 9x13 will make thinner bars, the 8x11 bars will be thicker (as pictured).
- Place sugar and corn syrup in a saucepan over medium heat. Heat the mixture stirring occasionally, until the edges start to bubble. Remove the saucepan from the heat and immediately stir in the peanut butter.
- Working quickly (before the mixture cools), pour the peanut butter mixture over the Special K and stir until combined. Scoop into the prepared baking dish and press into an even layer. Proceed with the frosting.
- Place chocolate chips and butterscotch chips in the bowl of a double boiler. Cook, stirring frequently, until melted and smooth. Note: make sure the boiling water is not touching the bottom of your bowl, only the steam.
- Immediately pour the frosting over the bars and smooth into an even layer. Sprinkle with flaky sea salt. Allow several hours for the frosting to firm up, then cut and serve.

- Mix together karo, honey and sugar and bring to a boil in microwave measuring cup. Do not over heat or it will bubble over.
- Stir frequently while heating in 1 minute increments or less. Mix in peanut butter or leave it out.
- Mix this into the cereal and pour carefully into a glass dish of you choice.
- Melt butterscotch chips in the microwave with 1/2 of the butter it takes about 2 minutes stir frequently. Pour on top of cereal mixture and spread well.
- Melt chocolate chips in microwave with the other 1/2 of the butter it takes about 2 minutes stir frequently. Pour on top of the butterscotch chip layer.
- Sprinkle with left over chips. Refrigerate about 1 1/2 hours until chocolate is firm. Cut around edges slice into squares.
SPECIAL K BARS
This recipe is different than the others I saw on this site. This is the most requested recipe I have from my students. It IS so good, it IS like candy! Hope you try it and give it a thumbs up.

- 1. Place the sugar, syrup and butter in a heavy bottom pan. Bring to a boil over medium high heat. Boil one minute. Remove from heat.
- 2. Add peanut butter stir until melted and well blended.
- 3. Add the cereal and stir until cereal is well coated. ( If you want smaller pieces of corn flakes just crush them a bit with your hands before adding to the peanut butter mix). I think corn flakes taste better than Special K cereal. Use what you have on hand, I have used rice krispies and that works well too.
- 4. Place in a buttered 9x13 pan.
- 5. Melt the chocolate and butterscotch chips in the microwave or in a double boiler. Watch carefully if using the microwave, start with a minute and stop to stir every 15 minutes until chips are melted and smooth when you stir them. Spread over the bars. Place in fridge to set the chocolate. Cut and enjoy.
CHOCOLATE BUTTERSCOTCH PEANUT BUTTER CEREAL BARS
If these bars have been refrigerated for more than 1 hour, let them stand for 10-15 minutes before cutting. Freeze.

CHOCOLATE BUTTERSCOTCH CARAMEL BARS

- Preheat the oven to 350 degrees F. Line a 9-inch square baking pan with aluminum foil and spray with nonstick spray.
- Mix together the flour, oats, brown sugar, baking powder and salt in a bowl. Cut in the butter with a pastry cutter until the mixture resembles coarse crumbs. Sprinkle the mixture into the prepared pan and pat lightly to pack it slightly.
- Bake until light golden brown on top and done in the middle, watching to make sure it doesn't burn, 30 to 35 minutes. Allow to cool for 15 minutes.
- Spoon the dulce de leche into a microwave-safe bowl and microwave to just slightly soften it, about 45 seconds. Scoop it on top of the oatmeal base and use an offset spatula to spread it out to the edges and into an even layer. Sprinkle on a layer of peanuts so that they completely cover the caramel and use your hands to gently press them into the caramel. Sprinkle on the butterscotch chips and mini chocolate chips in generous layers.
- Note: The warmth of the cookie base and caramel should slightly soften the butterscotch and chocolate chips. When that happens, use your hands to very gently press the chips just enough to anchor them together (but not enough to misshape them). If the pan isn't warm enough, pop it into the oven for 30 seconds or so and gently press the chips to anchor them together.
- Chill the bars for 2 to 3 hours to make them easy to slice. Remove them from the pan, place on a cutting board and use a long serrated knife to cut into small squares (they're rich!). Serve cold or at room temperature.

- Line a jelly roll cookie sheet with non stick foil. (Cookie sheet with 4 edges). Set aside.
- In a large pot, mix together corn syrup & sugar.
- Cook over medium heat, stirring until sugar melts & mixture comes to a boil. Mixture should be clear. Remove from heat.
- Add Peanut Butter and mix until Peanut Butter melts and is well blended into sugar mixture.
- Add 8 cups of cereal to sugar mixture and mix well with a long spatula.
- Transfer mixture into pan and press it down carefully with spatula or buttered hands, making sure not to burn yourself.
- In a microwave safe bowl add chocolate chips and butterscotch chips. Cook in 30 second intervals until mixture is creamy and smooth, stirring between each cook time.
- Spread chocolate over top of bars and let bars cool and chocolate harden.
- Once bars are set, lift foil and bars out of pan and place on a cutting board.
- Cut into squares & devour!
- Store extras (if you have any) in an air tight container for up to 5 days.

- In a large mixing bowl, mix sugar and Karo syrup; microwave on high for 3-4 minutes, or until sugar is completely dissolved. Remove after sugar is dissolved. Do not boil. This is important. Bars will be hard as concrete if mixture continues to boil.
- Remove bowl from microwave; add crunchy peanut butter to the sugar mixture and stir until smooth. Stir in the Special K cereal and mix well.
- Pat the mixture firmly into a lightly buttered 13X9 inch pan. Using a lightly buttered or greased piece of waxed paper works great for patting down the mixture.(To make thicker bars -- use a 9x9 pan).
- In a medium bowl, combine the chocolate and butterscotch chips and microwave for about 3-4 minutes until melted; stirring once or twice during melting.
- Spread over top of cereal mixture. Refrigerate just long enough to set the chips.
- Remove, and cut into bars.
