CHOCOLATE-CRUSTED BANANA BLONDIES
A buttery chocolate crust and a rum-scented, banana-imbued butterscotch blondie form two distinct layers that harmonize with every bite. The contrast between crunchy bottom and chewy topping is the whole point of the exercise.

- Heat oven to 375 degrees. Line a 9-by-13-inch baking pan with parchment, and grease with butter.
- Melt 1 stick of butter in a saucepan over low heat or in microwave. Put the chocolate wafer cookies in the bowl of a food processor and process to make fine crumbs. Add the light brown sugar, melted butter and a pinch of salt. Process until the mixture is the consistency of damp sand. Dump the mixture into the pan and press it into an even layer. Bake for 7 to 10 minutes, or until the surface is firm. Remove the pan and set aside.
- Reduce oven heat to 350 degrees.
- In a large skillet over medium heat, melt 12 tablespoons butter, then let it cook until the foam subsides and butter turns a deep nut brown, about 5 minutes. Cool.
- In a large bowl, whisk together bananas, eggs, dark brown sugar and rum. Whisk in brown butter. In a separate bowl, whisk together flour and fine salt. Fold into batter along with the toasted walnuts. Pour the mixture over the prepared crust and spread evenly. Sprinkle top with flaky salt if using.
- Transfer pan to oven and bake until the top is firm and a toothpick inserted in the center emerges with a few crumbs attached (or clean) but not wet, 45 to 55 minutes. Cool completely on a wire rack; cut into 24 bars.

- Preheat oven to 350°. Line an 8×8 baking dish with foil and spray with cooking spray. Set aside
- In bowl of stand mixer combine melted (or browned) butter and sugar. Mix until combined. Add in egg and vanilla and continue mixing until incorporated. Stir in salt, flour and banana until batter is smooth and even. Spread in prepared pan.
- Bake for 25-30 minutes until center is set.
- Transfer pan to wire rack to cool.
- Frost the blondies when they are mostly cooled.
- In a medium saucepan melt butter. Add brown sugar and milk and stir until mixture comes to just a boil. Remove from heat, allow to cool for 5 minutes.
- Stir in powdered sugar with a whisk.
- Spread on top of blondies and allow frosting to set and blondies to cool completely before cutting into squares.

- Preheat oven to 350° F. Line an 8x8 baking dish with parchment paper or foil and spray with cooking spray. Set aside
- In a large bowl combine the melted butter and brown sugar. Mix until combined. Add vanilla and egg, mix until fully incorporated. Add four and stir until combined. Next add the mashed banana and chocolate chips. Stir just until combined without over mixing. Pour into greased pan. Bake for 22-28 minutes.
- Cool for at least 10 minutes before cutting. Cut into 9 large bars or 16 small squares. Store covered in fridge for up to 1 week.

- In a medium bowl, combine flour, baking powder and salt.

- Preheat oven 200C | 390F. Spray a 9x9-inch OR 8x11-inch baking pan with cooking spray, wipe excess over with a paper towel and set aside.
- Combine bananas, oats, chickpeas and milk into a food processor and blend until smooth (for about 3 - 4 minutes). Add the peanut butter, baking powder, honey, sugar and salt and blend again for a further 2 minutes. Scrape the sides of your processor to make sure all ingredients are being processed, and add half the chocolate chips into the batter. Process again for a further minute or two, until all ingredients have blended together and the batter is thick and creamy.
- Pour batter into prepared pan and top with remaining chocolate chips. Bake for approx 20 - 25 minutes (depending on your oven) until a toothpick inserted into the centre comes out clean. They should be firm to the touch, but they will still be quite soft on the inside and still quite moist when taken out. They will set and firm as they cool. Don't over cook these - or they will become dry.
