ASHLEY'S BANANA BREAD WITH CHOCOLATE CHIP SAUCE

3/4 cup (1 1/2 sticks) butter
1 1/2 cups sugar
2 large eggs
4 ripe bananas, mashed
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1/2 cup buttermilk, well shaken
1 cup chopped pecans
8 ounces milk chocolate chips
1 cup heavy cream

Steps:

  • For the banana bread: Preheat the oven to 350 degrees F. Grease two 9-by-5-inch loaf pans with cooking spray.
  • With an electric mixer, cream the butter and sugar together until light and fluffy. Add the eggs one at a time, beating well after each addition. Beat in the bananas and vanilla. Sift the flour together with the baking soda and salt. Add the flour and buttermilk to the banana mixture, working in stages, and beginning and ending with the flour. Fold in the pecans.
  • Pour the batter into the prepared loaf pans and bake for 55 minutes. Cool slightly in the pan before turning the loaves out onto wire racks to cool completely.
  • For the chocolate chip sauce: Add the chocolate chips to a heat-proof bowl. Heat the heavy cream in a small saucepan until hot but not boiling. Pour the hot cream over the chocolate and stir until chocolate is fully melted. Serve over slices of banana bread.

2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
3 ripe bananas, mashed
1 tablespoon milk
1 teaspoon ground cinnamon, or to taste
½ cup butter, softened
1 cup white sugar
2 eggs
1 cup semisweet chocolate chips

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a 9x5-inch loaf pan, preferably glass.
  • Mix flour, baking powder, baking soda, and salt in a bowl. Stir bananas, milk, and cinnamon in another bowl. Beat butter and sugar in a third bowl until light and fluffy. Add eggs to butter mixture, one at a time, beating well after each addition. Stir banana mixture into butter mixture. Stir in dry mixture until blended. Fold in chocolate chips until just combined. Pour batter into prepared loaf pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 70 minutes. Cool in the pan for 10 minutes before removing to cool completely on a wire rack before slicing.

4 eggs
2 cups milk
1 cup white sugar
1 tablespoon vanilla extract
4 cups cubed French bread
2 bananas, sliced
1 cup semisweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.
  • In a large mixing bowl, mix eggs, milk, sugar, and vanilla until smooth. Stir in bread, bananas, and chocolate chips, and let rest 5 minutes for bread to soak. Pour into prepared pan.
  • Line a roasting pan with a damp kitchen towel. Place loaf pan on towel inside roasting pan, and place roasting pan on oven rack. Fill roasting pan with water to reach halfway up the sides of the loaf pan. Bake in preheated oven for 1 hour, or until a knife inserted in the center comes out clean.

So it's time to sweeten the deal: this chocolate chip banana bread recipe combines two of your favorite things into one - now, you can have your chocolate and eat it too!

3 ripe bananas
⅓ cup butter, melted
½ cup sugar
1 egg, beaten
1 teaspoon vanilla extract
1 teaspoon baking soda
salt, to taste
1 ½ cups all-purpose flour
½ cup mini chocolate chips

Steps:

  • Preheat oven to 350˚F (180˚C).
  • In a bowl, add the bananas and mash until smooth. Add in the melted butter and stir until well combined.
  • Add the sugar, egg, vanilla, baking soda, salt, and flour, and stir until the batter is smooth.
  • Add in the chocolate chips and pour the batter into a greased loaf pan. Top with additional chocolate chips.
  • Bake for 50 minutes to an hour, or until a toothpick comes out clean.
  • Cool completely before serving.

1 1/4-lb. loaf challah bread
3 large eggs
1 1/2 cups milk
3/4 cup half-and-half
3/4 cup mashed overripe bananas, about 2 large
1 1/2 cups maple syrup
1 tsp. ground cinnamon
3 to 4 gratings fresh nutmeg
1 tsp. vanilla extract
3/4 cup mini chocolate chips
Caramel Sauce (recipe follows)

Steps:

  • Cut bread into 3/4-inch slices. Trim away crust, then cut bread into 3/4-inch cubes, to make 8 cups. Set aside any additional for another use. Place bread in large bowl. In separate medium bowl, whisk eggs until well beaten. Whisk in milk, half-and-half, banana, maple syrup, cinnamon, nutmeg and vanilla. Pour mixture over bread. Add chocolate chips. Mix with rubber spatula until bread is well moistened. Set aside for 30 minutes. Set rack in center of oven. Preheat oven to 350ºF. Lightly coat an 8-inch round, nonstick cake pan (or deep-dish glass pie plate) with cooking spray. Scoop soaked bread mixture into pan, filling it to top. Bake until top is browned and puffed, and knife inserted into center comes out clean, about 50 minutes. Set on wire rack until almost completely cool. Run sharp, thin knife around edge between pudding and pan. Gently unmold pudding onto plate, then invert it back onto another plate, so browned side is up. To serve, cut pudding, lukewarm or at room temperature, into 8 wedges. Pour warm Caramel Sauce over and serve, with dollop of whipped cream if desired.

2 ripe bananas (sliced crosswise)

1/2 cup chopped toasted walnuts (or use pecans)
1/2 cup caramel sauce (room temperature)
3 cups half-and-half cream
3 large eggs
4 ounces cream cheese, softened
1/2 teaspoon cinnamon
vanilla ice cream

Steps:

  • Set oven to 325 degrees.
  • Butter a 9-inch baking dish.
  • Spread the bread cubes into the bottom of the baking dish.
  • Arrange the banana slices over the top of the bread, then sprinkle with chocolate chips and nuts.
  • Drizzle the caramel sauce over top.
  • In a bowl beat cream with eggs, cream cheese and cinnamon until smooth and combined; pour evenly over the top.
  • Let stand at room temperature for 20 minutes.
  • Bake for about 45-50 minutes to 1 hour.
  • Let stand for 15 minutes before serving.
  • Serve warm topped with ice cream.
