HEALTHY BANANA CHOCOLATE OATMEAL MUFFINS

Steps:
- Preheat oven to 350 degrees. Grease a muffin pan with non stick cooking spray. In a large bowl combine the oats, sugar, cinnamon, salt and baking soda.
- In a medium bowl combine eggs, honey, mashed bananas, vanilla, milk and coconut oil.
- Add the wet ingredients into the dry ingredients. Stir until combined, do not overmix.
- Fold in the chocolate chips.
- Scoop batter evenly into prepared muffin tin. Bake for 30 minutes or until set and the tops are slightly brown.
- Allow the muffins to cool in the pan for 10 minutes then remove to cool completely.

- Preheat the oven to 375 degrees F. Line a muffin tin with paper or silicone liners, or lightly spray with cooking spray.
- In a large bowl, combine the flour, oats, brown sugar, baking powder, baking soda, and salt.
- In another bowl whisk together the eggs, oil, milk, and mashed bananas.
- Pour the wet ingredients into the dry and stir until just combined. Fold in the chocolate chips.
- Divide the batter between the muffin cups, they will be quite full.
- Bake for 16-18 minutes, or until a toothpick inserted in the center of a muffin comes out clean.

- Stir together oats and milk in a small bowl and set aside.

- Preheat the oven to 375 degrees F. Line a muffin tin with liners.
- Whisk together the flour, oats, baking soda, powder, salt and cinnamon in a bowl.
- In a large bowl, whisk together the eggs and sugars until combined. Whisk in the oil and vanilla extract until combined. Whisk in the mashed bananas.
- Stir in the dry ingredients with a spoon until just combined - do not overmix. Stir in the chocolate chips.
- Fill the muffin tins about ¾ of the way full. Bake the muffins for 18 to 20 minutes, or until set in the center. Let cool before serving!

- Preheat oven to 400 degrees F (200 degrees C). Grease 12 muffin cups or line with paper liners.
- Stir whole wheat flour, rolled oats, sugar, baking powder, baking soda, and chocolate chips together in a bowl. Make a well in the center. Whisk eggs in a separate bowl until frothy; mix applesauce, skim milk, and banana into eggs. Pour moist ingredients into well made in dry ingredients; stir just to moisten. Batter will be lumpy. Steps:
- Add sugar to mashed bananas and mix.
- Add beaten egg and mix.
- In a separate bowl mix all dry ingredients.
- Add dry ingredients to the banana mixture and mix well.
- Mix in applesauce.
- Add chocolate chips and Stir.
- Spoon into medium size muffin tin (I use paper muffin cups so they won't stick) and fill 3/4's full.
- Bake for 20-25 minutes at 350.
- Enjoy!

- Combine oats and milk and allow to stand for 15 minutes. Preheat oven to 400 degrees F (205 degrees C). Grease each cup of one 12-cup muffin tin.
- Stir egg, oil, 1/2 cup of the brown sugar, chocolate chips and 1/2 cup of the pecans into the oat and milk mixture.
