TOLL HOUSE CHOCOLATE CHIP COOKIES
In the 1930s, Ruth Wakefield, the inventor of the chocolate chip cookie, ran the Toll House Inn, a popular restaurant in eastern Massachusetts, with her husband. Using an ice pick, Wakefield broke a semisweet chocolate bar into little bits, mixed them into brown-sugar dough, and the chocolate chip cookie was born. In 1939, she sold Nestlé the rights to reproduce her recipe on its packages (reportedly for only $1) and was hired to write recipes for the company, which supposedly supplied her with free chocolate for life. This recipe is very close to Mrs. Wakefield's original (hers called for a teaspoon of hot water and 1/2-teaspoon-sized cookies), and the one you'll still find on the back of every yellow bag of Nestlé chocolate chips.

CHOCOLATE CHIP COOKIES A LA GESINE
Steps:
- In a saucepan, melt the butter over low heat. Bring to a simmer and simmer until the butter starts to brown and gives off a nutty aroma. Pour the butter into the bowl of a stand mixer, discarding the darkest bits that are at the bottom of the pan, and allow to cool slightly, about 5 minutes.
- In the meantime, in a large bowl, whisk together the flour, cornstarch, salt, baking powder and baking soda for 30 seconds to evenly distribute the leavening. Stir in the grated unsweetened chocolate.
- Add the brown and granulated sugar to the browned butter and mix until smooth and slightly fluffy. Add the eggs one at a time, mixing until just combined. Scrape down the bowl, add the vanilla and briefly mix. Add the flour mixture and mix on low speed until the dough just comes together. Add the chocolate morsels and chopped chocolate and mix until just combined. Cover with plastic wrap and refrigerate at least 20 minutes if you are baking the same day (or allow to stay covered in the fridge for 12 to 24 hours if baking later).
- Preheat the oven to 375 degrees F. Line 2 baking sheets with parchment paper.
- Scoop the dough with a medium cookie scoop (1.5 ounces) and place 3 inches apart on the prepared baking sheets; press the cookies very slightly to flatten. Bake, opening the oven and gently slamming the baking sheets halfway through the baking process, until the edges are slightly golden brown, 10 to 12 minutes.

NESTLE TOLL HOUSE CHOCOLATE CHIP COOKIES (HIGH ALTITUDE)
It took me almost two years to clue into the fact that most of my formerly successful baking recipes were failing because I moved to a high altitude location. I've yet to try this high altitude recipe for chocolate chip cookies (from the back of the Toll House bag), but certainly plan on it the next time as the cookies I've baked with the regular Toll House recipe turn out flat as can be. The recipe specifies high altitude as 5,200 feet (or 1,585 meters). Feel free to substitute your favorite baking chip -- I like the chocolate caramel swirled kind.

URBAN LEGEND CHOCOLATE CHIP COOKIES
You may have heard this story...a woman asks to buy a cookie recipe and is told it will cost 'two-fifty.' She thinks this means $2.50, but then she gets her credit card bill back and finds out it is $250.00. Outraged, she spreads the recipe far and wide to try and get her money's worth. I first heard this story 6 years ago and was given a recipe on a sheet of paper which bore the date '1986.' The supposed originator of the recipe was a well-known cookie company. I have since heard this tale again several times, with the recipe originating from different upscale department stores. True story? Who knows, but it's a darn good cookie. Here's my version.

- Preheat oven to 375°F.
- Combine butter, sugars, eggs, vanilla & milk in a large mixing bowl. Mix until completely blended.
- Combine in a separate bowl: salt, baking soda, baking powder, unbleached flour, old fashioned oats and the 1 cup (2 packets) of maple brown sugar oatmeal (the "secret" ingredient!).
- Slowly add dry ingredients to the butter/sugar mixture. Stir or blend until dough is formed. Add chocolate chips.

- Bake for 11-13 minutes (varies by oven and pan).

CHOCOLATE CHIP COOKIES ALA TALL OAKS INN
The secret is out on the cookies baked at Tall Oaks Inn. The owner (my sister-in-law) had to sign a non-disclosure agreement on the recipes for Chocolate Chip, Peanut Butter, Cracked Sugar and Brown Sugar Pecan Rounds. These cookies were kept in cookie jars in the dining room for all the guests to enjoy whenever they needed a sweet fix. Now that the Inn has closed, the recipes were released. I am posting this recipe as it was given to me. You can cut everything in half to make a smaller batch. My favorite is the the Brown Sugar Pecan Rounds. NOTE: Stock photo
