1 (18 1/4 ounce) box moist deluxe yellow cake mix
1 (3 1/2 ounce) package vanilla instant pudding mix
2 eggs
1/4 cup water

Steps:

  • Combine all ingredients until well blended.
  • Spread into greased or non-stick 9x13 inch pan.
  • Bake at 350 F for 25-30 minutes. Consistency will be soft like a chocolate chip cookie and will firm up after cooling.
  • Cool in pan.

1 tablespoon cornstarch
1 teaspoon baking soda
1 teaspoon kosher salt
1 cup unsalted butter (room temperature)
1 cup light brown sugar
¾ cup granulated sugar
1 teaspoon vanilla extract
2 large eggs
2 cups chocolate chips2,3

Steps:

  • Preheat the oven to 350°F and line a large jelly roll pan4 with parchment paper and spray with nonstick cooking spray. Set aside.
  • In a medium bowl, whisk together the flour, cornstarch, baking soda, and salt. Set aside.
  • In a large bowl with a hand mixer or a stand mixer fitted with a paddle attachment, cream together the butter, sugars, and vanilla until pale.
  • Add the eggs one at a time mixing just until combined. Scrape down the sides of the bowl as needed.
  • Add the flour mixture to the butter mixture and mix just until combined.
  • Mix in the chocolate chips.
  • Spread the cookie dough out on the parchment-lined jelly roll pan and use your hands or a rubber spatula to spread the dough all the way to the edges. It might seem like there isn't enough dough, but trust me, there is.
  • Bake for 17 to 20 minutes. The edges should be a nice golden brown, the cookies should look a little ripply, and the center will still be soft. Allow the cookies to cool for 20 to 30 minutes in the pan before using a pizza cutter to slice them into squares.5

1 cup (2 sticks) unsalted butter
1 1/2 cups firmly packed dark brown sugar
2 large eggs
1 teaspoon pure vanilla extract
2 cups all-purpose flour (see Cook¿s Note)
1/2 teaspoon baking soda
1 teaspoon fine salt
One 12-ounce bag (a scant 2 cups) semisweet chocolate chips

Steps:

  • Position the rack in the middle of the oven and preheat to 350 degrees F.
  • Put the butter in a microwave-safe bowl, cover and microwave on medium power until melted. Alternatively melt the butter in a small saucepan. Brush some butter on the inside of a 9-by-13-inch pan and cool the remaining butter slightly. Whisk the remaining cooled butter, brown sugar, eggs and vanilla in a large bowl until smooth.
  • Whisk the flour, baking soda and salt in another bowl. Stir the dry ingredients into the wet ingredients with a spoon or spatula, taking care not to over mix. The batter should be thick and all of the flour mixture should be fully incorporated. Fold in the chocolate chips.

This is such an easy chocolate chip cookie. No special equipment, no creaming -- a perfect cookie to do with kids. We love how versatile this dough is, too. It makes an awesome rocky road bar cookie.

1/2 cup (1 stick) unsalted butter
3/4 cup packed dark brown sugar
3/4 cup sugar
2 large eggs
1 teaspoon pure vanilla extract
1 (12-ounce) bag semisweet chocolate chips, or chunks
2 1/4 cups all-purpose flour
3/4 teaspoon baking soda
1 teaspoon fine salt

Steps:

  • Evenly position 2 racks in the middle of the oven and preheat to 375 degrees F. (on convection setting if you have it.) Line 2 baking sheets with parchment paper or silicone sheets. (If you only have 1 baking sheet, let it cool completely between batches.)
  • Put the butter in a microwave safe bowl, cover and microwave on medium power until melted. (Alternatively melt in a small saucepan.) Cool slightly. Whisk the sugars, eggs, butter and vanilla in a large bowl until smooth.
  • Whisk the flour, baking soda and salt in another bowl. Stir the dry ingredients into the wet ingredients with a wooden spoon; take care not to over mix. Stir in the chocolate chips or chunks.

  • For a Rocky Road Bar:
  • Lightly butter a 9 by 13-inch baking pan. Make the batter as per cookie recipe and fold in 1 cup chopped walnuts along with the chocolate chips. Spread batter in prepared pan. Bake until the edges are light brown and the batter sets, about 45 minutes. Cool slightly and cover surface with 4 cups marshmallows and 1 cup chocolate chips. Broil at least 8 inches from the heat until marshmallows turn golden brown, about 2 minutes. (Keep an eye on the marshmallows, and turn the pan frequently--they go from golden to char in a wink.) Cool, cut and serve.

4 oz dark chocolate chunk, or your preference

Steps:

  • In a large bowl, whisk together the sugars, salt, and butter until a paste forms with no lumps.
  • Whisk in the egg and vanilla, beating until light ribbons fall off the whisk and remain for a short while before falling back into the mixture.
  • Sift in the flour and baking soda, then fold the mixture with a spatula (Be careful not to overmix, which would cause the gluten in the flour to toughen resulting in cakier cookies).
