2 packets CARNATION BREAKFAST ESSENTIALS® Rich Milk Chocolate High Protein Powder Drink Mix
¾ cup all-purpose flour
½ teaspoon baking soda
½ teaspoon baking powder
¼ teaspoon salt
½ cup applesauce
½ cup plain low-fat Greek yogurt
⅓ cup white sugar
1 egg
¾ teaspoon vanilla extract
½ cup dark chocolate chips

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line 9 muffin wells with cupcake liners or spray with nonstick spray.
  • Whisk powder drink mix, flour, baking soda, baking powder, and salt together in a medium bowl.
  • Whisk applesauce, yogurt, sugar, egg, and vanilla extract in a separate large bowl. Add the flour mixture; mix until just combined. Fold in chocolate chips.
  • Bake in the preheated oven for 7 minutes. Reduce heat to 350 degrees F (175 degrees C) and bake until muffins spring back when touched, an additional 10 to 12 minutes.

This recipe for protein muffins are perfectly moist, fluffy, and need just 5 ingredients! No white flour, no sugar, and no eggs are needed, they pack in over 20 grams of protein!

2 scoops vanilla protein powder (64-67 grams)
1 teaspoon baking powder
1/2 cup almond flour
1/2 cup peanut butter (or any nut or seed butter)
1 cup unsweetened applesauce
1/2 cup chocolate chips (optional)

Steps:

  • Preheat the oven to 180C/350F. Line a muffin tin with 8 muffin liners and set aside.
  • In a large mixing bowl, add your dry ingredients and mix well. Add your peanut butter and unsweetened applesauce and mix until fully combined. Fold through your chocolate chips.
  • Divide the batter amongst the muffin liners and bake for 10-12 minutes, or until a skewer comes out mostly clean.
  • Remove the muffins from the oven and allow them to cool for 5 minutes, before transferring to a wire rack to cool completely.

1/4 Cup Plain Non Fat Greek Yogurt (I used 50g)
1/4 Teaspoon Vanilla Extract
2 Tablespoons Brown Sugar
1/2 Cup Unsweetened Almond Milk (I used Cailfa Farms, any milk works)
1.5 Tablespoons Nestle Mini Chocolate Chips (21g)

Steps:

  • Preheat Oven to 350 degrees.
  • Cut out 6 pieces of parchment paper for lining your muffin pan.
  • In a medium size mixing bowl, combine Kodiak Cakes and baking powder.
  • Add all remaining ingredients and mix.
  • Pour into your parchment paper lined muffin pan.
  • Bake for 15-20 minutes, or until starting to turn golden brown.
