- Make cookies as directed on pouch; cool completely.
- In small microwavable bowl, microwave white baking chips uncovered on Medium (50%) 60 to 90 seconds, stirring every 30 seconds, until chips can be stirred smooth. Take half of the cookies, and carefully dip each cookie halfway into melted chips; wipe off excess. Place on cooking parchment paper-lined tray; sprinkle with desired candies.
- Repeat melting and dipping steps with semi-sweet or Special Dark™ chocolate chips and remaining cookies. Let stand until coating is firm, 1 to 2 hours.

EASY CHOCOLATE BISCUITS
Try this basic recipe for fail-safe biscuits every time. Make a batch of chocolate chip cookies, or adapt it to include nuts, fruit or your favourite sweets

Steps:
- Beat the butter and sugar together with an optional pinch of sea salt in a bowl until light and fluffy, then beat in the eggs one at a time. Sift over the flour and cocoa powder and beat into the butter mix, then fold through the chocolate chips. The mix can be made up to 2 days ahead and chilled or frozen for a month, or used straight away.
- To bake, heat oven to 190C/170C fan/gas 5. If the mix is at room temperature, place evenly spaced spoonfuls on parchment-lined baking sheets, allowing 2 tbsp for each cookie. If the mix is fridge cold, you can roll it into 40g balls before baking. The balls can be frozen and the biscuits baked from frozen, but they'll need a few minutes more. Bake for 12-15 mins until spread out and crusty around the outside. Leave to cool slightly and enjoy warm, or leave to cool completely and eat cold. The biscuits will keep in a tin for three days.
- As an optional extra, the biscuits can be dipped in chocolate. To do this, melt your chosen type of chocolate in a bowl over a pan of simmering water or in the microwave. Leave to cool a little, then dip half of each biscuit in the chocolate and leave them on parchment-lined trays somewhere cool to set. Again, the dipped biscuits will keep for up to three days in a tin or lidded plastic container.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking sheet.
- Combine the powdered hot chocolate, sugar, baking powder, oats, and flour. Mix in the butter or margarine.
- Beat the eggs with the milk. Stir the beaten eggs into the flour mixture and mix until combined.
- Drop tablespoons of dough onto the prepared baking sheet. Let sit for 5 minutes then bake at 350 degrees F (175 degrees C) for 10 to 15 minutes. Let cookies cool on baking sheet for 5 minutes before removing or eating.

- Sift together the flour, cocoa, baking powder and salt; set aside. In a medium bowl, cream together the butter and sugar until smooth. Beat in the egg. Gradually stir in the sifted ingredients to form a soft dough. Divide dough into 2 pieces, flatten and wrap in plastic wrap. Refrigerate for 2 hours.
- Preheat the oven to 375 degrees F (190 degrees C). On a lightly floured surface, roll the dough out to 1/8 inch in thickness. Cut into desired shapes with cookie cutters. Dough is sticky so be sure to add more flour to the rolling surface as needed. Place cookies 1 1/2 inches apart onto cookie sheets.
- Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

CHOCOLATE CHRISTMAS BISCUITS

- Mix the flour, cocoa, icing sugar and a pinch of salt in a bowl. Rub in the butter and then mix in eggs. Knead quickly with your hands to a smooth dough. Wrap in foil, press into a flat disc and chill for 30 minutes.
- Heat the oven to 180C/fan 160C/gas 4. Line a couple of baking sheets with baking parchment. Roll out the pastry on a lightly floured worksurface to about 3mm thin. Cut out shapes from the dough. Put the biscuits on the baking sheets - it's best to put similarly sized cookies together. Bake for 7-10 minutes, depending on the size of the biscuits.
- Knead the off-cuts of the dough together and chill again for 15 minutes. Roll, cut and bake as before. Cool completely.
- When cooled, the cookies can be decorated with chocolate or icing and sugar pearls and sprinkles.
CHOCOLATE CHRISTMAS MICE COOKIES
These use Chocolate-Covered Cherry Mice(recipe previously posted). These are easy to make and a great project to do with children. No baking required, just use Hershey's chocolate kisses, double stuffed Oreos, maraschino cherries and chocolate chips to "build" your Christmas mice!

Steps:
- Carefully twist Oreo cookies apart. Set aside the ones with the cream filling on them; save plain halves for another use. (You could make crumbs for pie crust).
- In microwave, melt chocolate chip, paraffin and butter; stir until smooth.
- Holding cherry by stem, dip in melted chocolate, then press onto the bottom of a chocolate kiss.
- Place cherry and kiss onto the cream filling of the cookie. Let stem extend over the edge.
- Make ears for your mouse by placing sliced almonds between the cherry and the kiss (before the chocolate sets).
- Place in refrigerator until chocolate sets.
- With green decorative gel, pipe holly leaves on white cream of cookie by the mouse.
- Pipe holly berries between the leaves with the red gel.
- Pipe eyes on each chocolate kiss.
- Store in airtight container at room temperature.
- TIPS:.
- I used Almond Bark instead of the chocolate chips and eliminated the need for shortening.
- Maraschino cherries need to have stems and be well-drained.
- Keep chocolate hot by putting in a bowl over a steaming pan of water.
- I used a teapot, took the lid off and placed my bowl over it after melting chocolate in microwave.
- You can use a clean eyebrow tweezer or something else to grasp the cherries by the stems to dunk in chocolate.
- Make extras because everyone at your party will want one to take home to show around and to use as a pattern to make their own!
