OLD FASHIONED CHOCOLATE COVERED CHERRIES
Old Fashioned Chocolate Covered Cherries are a favorite of ours around Christmas. They make the sweetest gift for friends and family.

- Drain cherries and set on paper towel to dry
- In a medium bowl, combine butter and corn syrup until smooth. Stir in powdered sugar and knead to form a dough. Chill to stiffen if necessary.
- Wrap each cherry in about 1 tsp of dough. Chill until firm.
- In a microwave-safe bowl melt chocolate chips with oil for about 20 seconds at a time (stirring each time) until chocolate is just melted and completely smooth.
- Dip each cherry in by its stem and place on wax paper-lined sheets. Place in an air-tight container (like a large tupperware) and store in a cool place for TWO WEEKS (yes, it is a long time-- but patience... I promise they taste best if you wait until the fondant softens)!

HOLIDAY CHOCOLATE COVERED CHERRIES
I make these every year for Christmas goodies and my husband hides them from everybody! They take about two weeks for the centers to get soft. This is a Southern Living recipe that's at least 20 years old. When you buy the cherries check the servings in the jar. You need 50 cherries, give or take a few.

Steps:
- Drain the cherries; pat dry on paper towels, and set aside.
- In mixer bowl beat butter, corn syrup, and salt until well combined.
- Stir in powdered sugar and knead until smooth (mixture will be very stiff).
- Shape 1/2 teaspoon of sugar mixture around each cherry (make sure the cherries are dry so the sugar mixture will stick).
- Place on waxed paper-lined baking sheet and place in the freezer until cherries are firm.
- At this point you can place them in a container or freezer bag and return to the freezer for dipping later when it's convenient.
- Melt chocolate chips and shortening in glass heat-proof bowl, stirring often so the chocolate doesn't burn.
- Dip each cherry in chocolate and place on a waxed paper-lined baking sheet.
- A carving fork works great for dipping the cherries.
- Chill until firm and store in the refrigerator.

- On a lightly floured surface, knead the mixture into a large ball. Roll into 1 inch balls. Flatten the balls into 2 inch circles. - Drain the cherries, reserving the juice. Let dab the cherries gently with a paper towel so that they are as dry as possible. Set them aside on paper towels to continue to dry while you prepare the sugar filling.
- In a medium size bowl, mix 3 cups powdered sugar, butter and 1/4 cup cherry juice together. Add in the last cup of powdered sugar, 1/4 of a cup at a time, until the mixture forms a soft dough. Refrigerate the dough for 20 minutes.
- Roll the dough into 1 inch balls. Make small balls, about 1 inch in diameter. Flatten the dough balls between the palms of your hands, dusting your hands with powdered sugar if necessary. Fold the dough over the cherry to completely cover it, then roll it into smooth ball again.
- Refrigerate the covered cherries for 20 minutes. Melt the chocolate in a double boiler or in the microwave.* Holding the cherry by the stem, dip it in the melted chocolate and allow the excess to drip off. Place the chocolate covered cherry on a baking pan that has been covered with wax paper. Repeat with the remaining cherries.
