- Line shallow baking pan with foil; lightly grease foil. Toss garbanzo beans with 2 Tbsp. of the dressing. Place in prepared pan. Bake 10 to 15 min. or until crisp. Set aside.
- Cook bacon in large saucepan until browned. Add garlic; cook 2 min. or until softened. Drain. Add spinach to saucepan; cook 5 min. or until wilted, tossing lightly.
- Arrange spinach mixture on serving plate; top with garbanzo beans and drizzle with remaining dressing.

- Heat a skillet over medium heat. Add oil and garlic. Saute garlic in oil 2 or 3 minutes. Add spinach to the pan in stages. Fill the pan with leaves and turn leaves in warm oil until they wilt. I saw this recipe made on an Italian cooking show, it was all in Italian, but the recipe was so easy to follow I didn't need to know the language. You can use either fresh spinach, or frozen, but if you do, make sure the excess moisture has been squeezed out. I served it with roasted chicken.

- Season the duck breasts with the salt and pepper to taste. Heat the oil in a large cast-iron skillet over medium heat until almost smoking. Add the duck and cook for 3 minutes. Turn and cook until crisp and brown on the outside and still rare in the center, about 3 minutes longer. Remove the duck from the pan and set aside; keep warm.
- Gradually place the spinach in the skillet, and stir-fry until barely wilted, adding more as room allows. Place in a bowl and toss with the beans. Add the vinegar to the skillet and cook, stirring with a wooden spoon and scraping up any browned bits stuck to the bottom of the pan. Add to the spinach mixture and toss to combine. Season with salt and pepper to taste.
