CHEWY CHOCOLATE SNOWCAPS



Chewy Chocolate Snowcaps image

Dense and rich with the flavor of toasted pecans and dark chocolate, these cookies evoke brownies or fudge. They are made with egg whites for leavening and contain no flour, so they are a great gluten-free alternative. The batter comes together fast, although it will seem like the egg whites can't possibly provide enough moisture. Just keep stirring with a strong spoon and a very thick batter will quickly materialize.

Number Of Ingredients 7

3 cups/300 grams confectioners' sugar
3/4 cup/90 grams dark cocoa powder
1/2 teaspoon/6 grams kosher salt
5 ounces/135 grams 72 percent chocolate, preferably with nibs, chopped
1 1/2 cups/135 grams chopped, toasted pecans
4 large egg whites, room temperature
1/2 cup/100 grams sugar cubes, crushed, for the tops

Steps:

  • Heat oven to 325 degrees. Whisk together sugar, cocoa and salt. Stir in chocolate and pecans. Beat egg whites until slightly stiff, then stir into chocolate mixture until just until incorporated. (Do not overmix.) You can use a stand mixer on low or a sturdy spoon and a large bowl.
  • Crush sugar cubes and place in a shallow bowl. Using a small ice cream scoop or a melon baller, spoon up dough to create a scoop about the size of a golf ball. Lightly dip the top of the cookie into the sugar and then place on a parchment-lined baking sheet, about 2 inches apart.
  • Bake until cookie tops are dry and crackled, about 12 to 15 minutes. Rotate sheets if using more than 1 at a time. The cookies should be dry and crunchy on the outside, chewy on the inside and capped with a nice sprinkling of chunky sugar.
  • Transfer sheets to wire racks and let cookies cool completely. Can be stored in an airtight container for 3 days.

Devil's Peaks with Milk and White Chocolate image

Paper cone cups
1/2 cup (1 stick) unsalted butter, softened at room temperature
1 1/2 cups light brown sugar, packed
2 eggs
1 teaspoons pure vanilla extract
6 tablespoons unsweetened cocoa powder, Dutch-process
1 1/2 teaspoons baking soda
1/4 teaspoon salt
1 1/2 cups sifted cake flour
2/3 cups sour cream
3/4 cups hot coffee
4 ounces milk chocolate, melted over hot water
4 ounces white chocolate, melted over hot water

Steps:

  • Preheat the oven to 350 degrees F. Lightly butter and flour the paper cone cups. Loosely ball 1 square foot of foil and place into 1 section of a muffin tin. Repeat until the tin is full. Press down the center of each ball, creating an indentation that will allow the cone cups to stand upright in the oven as they bake. Place cone cups into foil.
  • In a mixer fitted with a whisk attachment (or using a hand mixer), cream the butter until smooth. Add the sugar and eggs and mix until fluffy, about 3 minutes. Add the vanilla, cocoa, baking soda and salt and mix. Add half of the flour, then half of the sour cream, and mix. Repeat with the remaining flour and sour cream. Drizzle in the hot coffee and mix until smooth. The batter will be thin.
  • Pour into the prepared cones, filling 3/4 of the way up and bake until the tops are firm to the touch and a toothpick inserted into the center comes out clean (a few crumbs are okay), about 20 to 25 minutes. Let cool for 30 minutes. With a serrated knife, trim off any cake that has overflowed so the top (which will become the bottom) is flat. Carefully peel off the paper cone to unveil the cake and invert them onto a wire rack. Drizzle melted milk chocolate and white chocolate over the "peaks" in thin spattery lines and let set up in the refrigerator.

4 - large eggs whites at room temperature
1 teaspoon(s) cream of tartar
1 cup(s) plus 2 tablespoons superfine granulated sugar
1 teaspoon(s) prue vanilla extract
1 1/2 cup(s) dark chocolate chips

Steps:

  • PREHEAT oven to 225F and line 2 baking sheets with parchment paper.
  • IN the bowl of an electric mixer, beat egg whites on low-medium speed with the whisk attachment until the whites become foamy. Add the cream of tartar and turn speed up to medium, beating until just fluffy. Add the sugar gradually, so it incorporates into the whites slowly without collapsing them. Once all the sugar has been added, add the vanilla and increase the speed to high, whisking until the meringue is firm and glossy, about 5 to 7 minutes.
  • PLACE meringue mixture into a decorating bag with a medium-size nozzle attached. Pip 24 bite-size "kiss"-shape meringues onto the trays and place in the oven. Bake for 1 hour undisturbed then turn off heat and leave in the oven overnight to really dry out.
  • MELT chocolate over a double-boiler or in the microwave on medium power for 30 second. Holding each meringue by the peak dip the bases in chocolate so the bottom half of the meringue is coated. Let any excess chocolate drop of before placing on the cookie sheet lined with wax paper. Allow to set at room temperature - do not put in the fridge. Once set, store in an airtight container.

I found this gem on a slip of paper in a cookbook I got at a yard sale. The candies get great flavor from browned butter. I've received many requests for this recipe over the years.

1/4 cup butter
3 cups sweetened shredded coconut
2 cups confectioners' sugar
1/4 cup half-and-half cream
1 cup semisweet chocolate chips
2 teaspoons shortening

Steps:

  • Line a baking sheet with waxed paper; set aside. In a large saucepan, cook butter over medium-low heat until golden brown, about 5 minutes. Remove from the heat; stir in the coconut, sugar and cream. , Drop by rounded teaspoonfuls onto prepared baking sheet. Refrigerate until easy to handle, about 25 minutes., Roll mixture into balls, then shape each into a cone. Return to baking sheet; refrigerate for 15 minutes. , Meanwhile, in a microwave, melt chocolate chips and shortening; stir until smooth. Dip bottoms of cones into chocolate; allow excess to drip off. Return to waxed paper to harden. Store in an airtight container in the refrigerator.

2 (12 ounce) packages Sweets, candies, confectioner's coating, white
1 (14 ounce) package chocolate sandwich cookies (such as Oreo®)
black pearlized sugar sprinkles
orange Tic Tac® candies, cut in half
1 (12 ounce) package pink candy melts
candy-coated milk chocolate pieces (such as M&Ms®) as needed

Steps:

  • Empty 1 bag white candy melts into a microwave-safe bowl. Microwave at 50% power for 1 minute. Stir and continue to microwave in 15- to 30-second intervals until candy is almost completely melted. Let sit for about 1 minute and stir until smooth. Set the second bag of white candy melts aside.
  • Dunk a cookie in the white melted candy. Use a fork to turn it over to ensure it's completely coated on all sides. Transfer to a parchment-lined baking sheet. Place 2 sprinkles in the middle for eyes. Place 1 half of a Tic Tac® under the eyes for a nose. Place 4 more sprinkles in a semi circle on the bottom for the mouth. Repeat for remaining cookies, melting the second bag of white candy melt as needed.
  • Place the baking sheet in a cool, dry area for about 25 minutes so candy coating can harden. Do not place in the freezer or the snowmen will sweat.
  • Melt the red candy melts as in step 2.
  • Cut any excess chocolate off around each cookie. Dip the top part of each cookie in the red melted candy to make a hat and add an M&M® for a design. Place on a new parchment-lined baking sheet and allow to harden, about 25 minutes. Cut off any excess chocolate before serving.

1/4 cup unsweetened cocoa powder
4 teaspoons instant espresso
1 teaspoon baking powder
1/8 teaspoon salt

1 large egg
4 ounces bittersweet or semisweet chocolate, melted and cooled
1 tablespoon milk
Confectioners' sugar, for coating

Steps:

  • In a medium bowl, sift together flour, cocoa, espresso, baking powder, and salt. With an electric mixer, cream butter and brown sugar until light and fluffy. Beat in egg until well combined; mix in cooled chocolate. With mixer on low, gradually add flour mixture; beat in milk until just combined. Flatten dough into a disk; wrap in plastic. Freeze until firm, about 45 minutes.
  • Preheat oven to 350 degrees. Line two baking sheets with parchment. Shape dough into 1-inch balls. Pour confectioners' sugar (about 1/2 cup) into a medium bowl; working in batches, roll balls in sugar two times, letting them sit in sugar between coatings.
  • Place on prepared baking sheets, 2 inches apart. Bake until cookies have spread and coating is cracked, 12 to 14 minutes; cookies will still be soft to the touch. Cool cookies on a wire rack.

1 cup finely chopped walnuts, optional
1 package (10 to 12 ounces) white baking chips

Steps:

  • Cream butter and sugar until light and fluffy. Beat in eggs and vanilla. In another bowl, whisk flour and salt; gradually beat into creamed mixture. Add chocolate chips and, if desired, walnuts; mix well. Divide dough in half. Shape each into a disk; wrap in plastic. Refrigerate until firm enough to roll, about 30 minutes., Preheat oven to 325°. On a lightly floured surface, roll each portion of dough to 1/4-in. thickness. Cut with a floured 2-in. triangle-shaped cookie cutter. Place 2 in. apart on ungreased baking sheets. Bake until edges begin to brown, 10-12 minutes. Cool on pans 2 minutes. Remove to wire racks to cool completely., Meanwhile, in a microwave, melt white baking chips; stir until smooth.
