MEATY COUNTRY BREAKFAST SCRAMBLE

Meaty Country Breakfast Scramble image

A meaty, stick to your bones, simple dish that will please the whole family. A real meat and potatoes basic dish, a definite comfort food. I developed this on my own after not being fully satisfied from frozen pre-made skillet/scrambles. For this dish I recommend you break out two large skillets. The meal, in my opinion, almost tastes better the second time around. A definite meal ideal for leftovers.

Provided by Shaman Chef

Categories     One Dish Meal

Time 45m

Yield 1 Scramble, 6 serving(s)

Number Of Ingredients 12

1 (16 ounce) O'Brien potatoes
1 (1 lb) breakfast sausage
1 (8 ounce) ham, diced (or julienne works just as well)
2 bell peppers, chopped (color of your choice, I mix it up depending on the season)
1 (8 ounce) button mushrooms, sliced
12 large eggs
8 green onions, chopped
3 teaspoons salt (or to taste)
4 teaspoons black pepper (or to taste)
4 teaspoons vegetable oil
2 cups cheddar cheese, shredded
1 cup milk

Steps:

  • Get 2 large skillets / sauce pans.
  • In the first pan put enough oil to lubricate and brown the potatoes O'Brien on med to high heat, stirring occasionally (per package directions, yours may vary).
  • In the second pan brown the breakfast sausage.
  • In a bowl beat the eggs along with the milk and set aside.
  • Just as the sausage finishes browning, toss in the ham with it to put a little color on it (it's diced and pre-cooked generally, so this should go quick).
  • Right after you add the ham to the sausage, add the green onions, bell peppers, and mushrooms to the potatoes O'Brien in the first pan, and sauté the potatoes and veggies together for about 5 minutes.
  • Once the ham has browned slightly, drain the fat, and add the sausage and ham to the first pan with the potatoes and veggies and stir the mixture together, then stir occasionally.
  • After dumping the sausage and ham, put the pan back on the heat and use it to scramble your eggs (the grease from the sausage will do a wonderful job lubricating the pan and imparting a little flavor to the eggs).
  • Once the eggs are scrambled fold them into the first pan, do not over mix, or you will turn the texture to mush.
  • Top the mixture with cheese, and gently stir to mix in the cheese,.
  • Serve and enjoy!

BUFFET-STYLE FLUFFY OVEN SCRAMBLED EGGS FOR A CROWD

Buffet-Style Fluffy Oven Scrambled Eggs for a Crowd image

This is the method that restaurants use to serve eggs for a buffet brunch --- for cheesy eggs mix in 1-1/2 cups shredded old cheddar cheese or you may sprinkle the cheese on top after removing from the oven --- 2-1/2 cups half and half cream and milk will produce ultra fluffy eggs, for a firmer texture reduce to 2 cups--- NOTE this recipe was tested using large eggs I cannot promise the same results using small or extra large eggs --- if you are serving these eggs at a buffet some side ideas would be salsa, green onions, cheddar cheese and soft buns :)

Provided by Kittencalrecipezazz

Categories     Breakfast

Time 30m

Yield 12 serving(s)

Number Of Ingredients 6

1/3-1/2 cup butter, melted
24 large eggs
1 1/2 teaspoons salt (I use seasoned salt)
fresh ground black pepper (optional and to taste) or white pepper (optional and to taste)
1 1/4 cups half-and-half cream
1 1/4 cups milk (or use 2-1/2 cups all milk)

Steps:

  • Set oven to 350 degrees F (set oven rack to lowest position).
  • Spray a 13 x 9-inch glass baking pan with cooking spray then pour the melted butter into the pan.
  • In a bowl whisk eggs and salt until smooth and well blended.
  • Gradually whisk in the half and half and milk; pour into the baking pan.
  • Bake uncovered for 10 minutes.
  • Remove the pan from the oven then stir the eggs; return to oven and bake another 15-20 minutes or until the eggs are just set (to insure soft fluffy eggs do not overbake as the eggs will cook more after removing from the oven).
  • Serve immediately.

EGGPLANT BRUNCH SCRAMBLE

Eggplant Brunch Scramble image

Yes you can have eggplant for breakfast. It is delicious and good for you. I try to limit the meat in my diet and this really tastes great! This coming from a Sicilian! Try it once ,it will be a favorite. Eggplants are very abundant right now, take advantage of the bounty. I make extra eggplant to use in another recipe with parmesean or penne and spegghetti sauce. Well worth the time spent!

Provided by Sassygirlsmom

Categories     One Dish Meal

Time 40m

Yield 2 platters, 10-12 serving(s)

Number Of Ingredients 10

2 eggplants
1 tablespoon garlic powder
4 tablespoons salt
water, to cover eggplant in a gallon size zip locked baggie
1 cup plain flour
1/4 cup canola oil
1 dozen egg
salt and pepper
salsa (to go latin)
pork gravy and sauted onion (taste like egg foo young)

Steps:

  • peel and slice eggplant into 1 inch slices.
  • place in zip locked bag and add.
  • water to cover, salt and garlic powder
  • close and place in fridge for 3 hours or overnight.
  • When ready, drain eggplant, dry each slice (this is important),.
  • dredge in flour (self rising or plain).
  • place each slice in hot oil in a cast iron skillet and brown to perfection on each side.
  • Do in batches.
  • HINT: If adding more oil, give it time to get hot again before adding more slices. This will allow your eggplant to get brown not soggy!
  • Put browned eggplant on cookie sheet in oven on 400 for about 15 minutes
  • whip 1 dozen large eggs in large bowl. Add salt and pepper sparingly(remember there is salt on the eggplant)
  • Pour 1/2 into the oiled iron skillet on med heat, let eggs set. Turn stove down to low.
  • Then add slices of eggplant to eggs (in two batches) it will look like a big daisy.
  • then turn over in skillet and finish eggs till set again. Don't overcook eggs!
  • Serve on a warm platter with options of either salsa or pork gravy and sauted onions.
