CHOCOLATE COVERED STRAWBERRY FRENCH TOAST
Steps:
- Heat up your griddle to medium head and coat with a small amount of non stick spray.
- Chop up your strawberries and place them in a small bowl with the sugar, stir to coat the strawberries in the sugar and then set aside.
- In a pie plate mix the eggs, milk, cinnamon and vanilla together with a whisk.
- Using a medium heart cookie cutter, cut out a heart in the middle of 4 slices of bread.
- Dip your bread into the egg mixture and place on your griddle.
- Cook until each side is golden brown and then flip to cook the other side.
- Continue doing the same until all your french toast is made.
- Place a piece of french toast without a heart cut out on a plate, spoon 1/4th the strawberries on top of the bread, place a piece of bread with the heart shape cut out on top.
- Place a few raspberries and the heart piece of french toast on the side of the other toast.
- Drizzle the french toast with chocolate syrup and sprinkle with powdered sugar.

COOKIE COATED CHOCOLATE STRAWBERRIES

Steps:
- Line a sheet pan with parchment paper and set aside.
- Place the cookies in a shallow bowl.
- Melt the chocolate and coconut oil together in a double boiler or in the microwave in a microwavable bowl, microwaving for 30-second increments and stirring after each until smooth. Dip the strawberries into the chocolate as far up to the stems as you can go, then let any excess drip off, and scrape off one of the sides of each. Roll the strawberries in the crushed cookies and place on the parchment paper, scraped-sides down. Enjoy immediately, or refrigerate until ready to serve.
CHOCOLATE AND STRAWBERRY STUFFED FRENCH TOAST
Steps:
- In a large bowl, whisk together the eggs, milk and vanilla. Set aside.
- Place 1 tablespoon of ricotta in the center of 4 of the pieces of bread and spread around slightly. Top with about 6 slices of strawberries and a teaspoon of chocolate chips. Cover each with another piece of bread to make a "sandwich".
- Spray a large nonstick skillet or griddle with cooking spray and preheat. Carefully dip each of the "sandwiches" into the egg mixture until completely moistened. Then place on the skillet and cook over a medium heat for 3 to 4 minutes per side, until the outside is golden brown and the center is warm and chocolate is melted.
- Transfer to serving places. Top with remaining strawberries and sprinkle with confectioners' sugar.

STRAWBERRY FRENCH TOAST
This makes an elegant looking breakfast or brunch and can be made up the night before then grilled in the morning. I have used fresh strawberries and just blended them to use in making the sauce. Top with whipped cream.

Steps:
- Cook and stir almonds in a skillet over medium high heat until fragrant and toasted, 3 to 5 minutes.
- Add enough water to reserved strawberry liquid to equal 1 cup liquid.
- Stir 1/2 cup sugar and cornstarch together in a saucepan over medium heat. Gradually stir strawberry liquid into sugar mixture; cook, stirring constantly, until mixture is clear and thick, 3 to 5 minutes. Stir strawberries and almonds into sugar mixture.
- Beat cream cheese, 2 tablespoons sugar, and vanilla extract together in a bowl. Whisk milk, eggs, 1 1/2 teaspoons sugar, cinnamon, and nutmeg together in a bowl.
- Slice bread at 1 1/2-inch intervals about 3/4 of the way through. Cut a slit in the center of each slice to form a pocket, and fill each pocket with 1 rounded tablespoon of the cream cheese mixture. Separate slices from loaf by cutting each slice the rest of the way through the loaf.
- Dip bread slices in egg mixture to coat completely.
- Melt butter on a griddle over medium-high heat. Working in batches, cook bread slices on preheated griddle until golden brown, 2 to 5 minutes per side. Serve French toast with strawberry-almond mixture.
