CRAZY CHOCOLATE CAKE
My sisters and I always requested this cake for our birthdays. Now, my daughters ask for it for their birthdays!

- Mix all ingredients right in a 9 x 13 inch pan.
- Bake at 350 degrees F (175 degrees C) for 35 minutes. Remove from oven and cool. Frost with your favorite frosting.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
- In a large bowl, sift together the flour, sugar, baking soda and cocoa. Measure and combine water, oil, vinegar and vanilla. Pour liquid ingredients into flour mixture and beat until smooth. Pour into prepared pan.
- Bake in the preheated oven for 40 to 45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

- Grease and flour 8 inch square cake pan.
- Put all ingredients except 1/2 cup boiling water in a large bowl.
- Pour 1/2 cup of boiling water over above ingredients and beat about 2 minutes with electric mixer.
- Pour into baking pan.
- Spread evenly.
- Bake at 350 degrees for 40 minutes.

CHOCOLATE CRAZY CAKE
This is a cake that my grandmother used to make for birthdays and special events. I always would request it for my birthday because I like the pudding topping better then frosting. The cake is very moist and a bit more dense then regular cakes. I am going to write it down the same way that she had it written down before she passed away :) The recipe is for a 9x13 cake

Steps:
- Preheat oven to 350°F.
- Cake:.
- Mix together the flour, sugar, cocoa, salt, baking powder and baking soda.
- Make 3 hole.
- Add the vanilla to one well, vinegar to another, and oil to the last.
- Pour the 2 cups of water over it and mix well.
- Pour into a well oiled pan and bake 35-40 minutes.
- Topping:.
- Mix together sugar, corn starch and shaved chocolate in a sauce pan.
- Add the 3 cups of boiling water.
- Cook till smooth and thick.
- Add in the vanilla and butter, mix well.
- Pour over cake while the pudding is still warm. The cake doesn't have to cool before you do this either.
WACKY CAKE
Steps:
- Preheat 350 degrees F.
- Place the dry ingredients in a bowl. Make 3 small holes in the mixture. Pour the vanilla in one hole, the vinegar in another and vegetable oil in another. Pour water over the top and mix. Pour into a lightly greased 8 by 8 inch pan. Bake for 30 to 35 minutes.

- In first hole, put 6 Tbsp oil.
- In second hole, put 1 tsp vanilla.

CRAZY DARK CHOCOLATE CAKE
Found this in Cotton Country Collection by The Monroe Louisiana Junior Charity League that my DB and DSIL gave me for Christmas in 1981. I started using the Hershey's Special Dark Cocoa a few years ago with rave results. Its this chocoholic's dream cake. It is incredibly moist and rich, as well as easy. I use a disposible pan and take this to potlucks all the time. You can also mix in a bowl with the same results. (If you use the frosting recipe make sure you use whole milk, I made the mistake of using skim once and it came out so thin that even twice the amount of sugar would thicken it and it was too sweet after that to eat.I had to scrape it off and add more cocoa.)

- Sift into an ungreased 9x13" cake pan the flour, sugar, baking soda and cocoa, blend well. Make a well in the middle of the dry ingredients and add the oil, vinegar and vanilla. Pour the water over all the ingredients and mix with a fork untill smooth and well blended, making sure to get into the corners. Bake at 350º for 20 to 25 minutes or until the center springs bake when tapped or a toothpick inserted comes out clean. Cool completely and frost as desired.
- Frosting.
- Melt the butter and stir in the cocoa. Alternating between the two, mix in the milk and powdered sugar. Beat to spreading consistency; adding more milk or sugar as needed. Stir in the vanilla. Makes about 2 cups frosting.
