1/2 cup butter, softened
3/4 cup sugar
1 large egg
1 teaspoon vanilla extract
1 cup all-purpose flour
1/3 cup baking cocoa
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup chopped almonds
1/2 cup miniature semisweet chocolate chips
12 ounces white candy coating disks, melted
12 ounces dark chocolate candy coating disks, melted
2 ounces milk chocolate candy coating disks, melted

Steps:

  • In a large bowl, cream butter and sugar. Beat in egg and vanilla. Combine the flour, cocoa, baking soda and salt; gradually add to the creamed mixture. Stir in almonds and chocolate chips. Cover and refrigerate for 2 hours. Divide dough in half. Shape into two 8-in. rolls; wrap each in plastic wrap. Refrigerate for 3 hours or until firm., Unwrap and cut into 1/4-in. slices. Place 2 in. apart on greased baking sheets. Bake at 350° for 8-10 minutes or until set. Remove to wire racks to cool., Dip half of the cookies in white coating; allow excess to drip off. Place on waxed paper. Repeat with remaining cookies in dark chocolate coating. , Place milk chocolate coating in a resealable plastic bag; cut a small hole in one corner of the bag. Pipe designs on cookies. Let stand for 30 minutes or until set.

1/4 teaspoon baking powder
1/4 teaspoon salt
1 stick unsalted butter, at room temperature
2/3 cup sugar
1 large egg

4 ounces milk chocolate, chopped

Steps:

  • Position racks in the upper and lower thirds of the oven and preheat to 350 degrees F. Line 2 baking sheets with parchment paper. Whisk the flour, baking powder and salt in a medium bowl. Beat the butter and sugar in a large bowl with a mixer on medium-high speed until fluffy, about 3 minutes. Beat in the egg and vanilla. Reduce the mixer speed to medium low; beat in the flour mixture in 2 batches until combined.
  • Transfer the batter to a resealable plastic bag and snip the corner to create a 1/2-inch opening. Pipe the batter into 1/2-by-3-inch strips, about 2 inches apart, on the prepared baking sheets. Bake, switching the pans halfway through, until the cookies are golden around the edges, about 15 minutes. Let cool 5 minutes on the baking sheets, then transfer to racks to cool completely.
  • Line a baking sheet with parchment. Put the chocolate in a microwave-safe bowl and microwave in 30-second intervals, stirring, until smooth. Dip the cookies halfway in the chocolate, letting the excess drip off, then place on the prepared baking sheet. Refrigerate until the chocolate just sets, 10 to 15 minutes.

1 box chocolate cake or brownie mix
1 pound butter, room temperature (4 sticks)
1 cup powdered sugar, plus more for dusting
1/2 cup chocolate sauce or ganache
1 teaspoon vanilla extract

Steps:

  • Prepare the cake mix according to manufacturers directions. Pour the batter into a greased 9 by 12-inch cake pan and bake according to package instructions. Remove the cake from the oven and refrigerate for 30 minutes.
  • With an electric mixer in a large bowl, beat the butter on medium speed for 5 minutes, then add the sugar, chocolate and vanilla extract. Continue to mix for 2 to 3 minutes, stopping during the mixing to scrape down the sides of the bowl. Remove the cake from the oven and apply the chocolate mixture to the top of the cake with a spatula. It should be 1/2 to 3/4-inch thick. Return the cake to the refrigerator and allow the topping to set. Remove the cake from the pan with spatula and cut into 3 by 1-inch fingers with a sharp knife. Arrange on a serving tray and dust with powdered sugar.

1 teaspoon vanilla
2 1/2 cups Gold Medal™ all-purpose flour
1 cup semisweet chocolate chips
2 teaspoons shortening

Steps:

  • Heat oven to 350°F. In large bowl, beat butter, powdered sugar and vanilla with spoon. Stir in flour. (If dough is crumbly, mix in 1 to 2 tablespoons butter or margarine, softened.)
  • Roll dough 1/2 inch thick on lightly floured surface. Cut into small shapes by hand or use cookie cutters. Place 1/2 inch apart on ungreased cookie sheet.
  • Bake 14 to 16 minutes or until set and bottoms are light golden brown. Immediately remove from cookie sheet to wire rack. Cool completely, about 30 minutes.
  • In small microwavable bowl, microwave chocolate chips and shortening uncovered on High 1 to 1 1/2 minutes or until melted; stir until smooth. Dip half of each cooled cookie into melted chocolate. Place on waxed paper until chocolate is set.

Peanut Butter Fingers with Salty Milk Chocolate Glaze image

Nut cookies in the shape of "sticks" or "fingers" were kind of a thing back in the day. I substitute bread flour instead of all-purpose for chewiness, which is a must for a peanut butter cookie in my opinion.

Yield Makes 12 fingers

Number Of Ingredients 18

Cookies:
1 1/3 cups [185 g] bread flour or all-purpose flour
3/4 tsp baking soda
1/2 tsp baking powder
3/4 tsp table salt
1/2 cup [110 g] unsalted butter, at room temperature
1/2 cup [100 g] granulated sugar
1 cup [200 g] packed light brown sugar
6 Tbsp [90 ml] vegetable oil
1 cup [260 g] creamy peanut butter (not all-natural)
1 egg
1 egg yolk
1 Tbsp pure vanilla extract
Glaze:
3 1/2 oz [100 g] milk chocolate
1/8 tsp table salt
1/4 cup [60 ml] heavy cream
Flaky sea salt for sprinkling

Steps:

  • Grease an 8-by-8-by-2-in [20-by-20-by-5-cm] pan with nonstick cooking spray or softened butter, line with parchment paper, leaving some overhang on the sides, and grease again.
  • For the cookies:
  • In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. In the bowl of a stand mixer fitted with the paddle attachment, cream the butter and sugars on medium-high speed until light and fluffy, 3 to 5 minutes. Add the oil and peanut butter and continue to mix until fully incorporated, scraping down the bowl with a rubber spatula as needed.
  • Decrease the mixer speed to medium-low and add the egg and yolk, one at a time, beating well and scraping the bowl after each addition with a rubber spatula. Add the vanilla and mix to combine. Add the dry ingredients all at once, mixing just to combine.
  • Cover the bowl with plastic wrap and refrigerate for 24 to 36 hours.
  • Preheat the oven to 350°F [180°C].
  • Press the dough into the bottom of the prepared pan, making it as flat and even as possible. Bake for 22 to 27 minutes, until browned and dry to the touch. Let cool.
  • Freeze for about 10 minutes (this helps immeasurably with making clean cuts). Alternatively, you can tightly wrap the pan and freeze for up to a week before bringing back to room temperature and cutting and glazing.
  • Lift the bar cookie from the pan using the parchment paper sling. Trim off all four edges, then slice the bar in half horizontally and vertically cut each half into 6 slices, creating 12 fingers.
  • For the glaze:
  • Line a baking sheet with parchment paper and set aside. Place the chocolate and salt in a small heatproof bowl. Heat the cream in a small saucepan over medium heat, until just boiling.
  • Pour the hot cream over the chocolate and let sit for 1 minute. Mix the chocolate and cream together until the two are combined. If the chocolate is not completely melted, place in a pan set over simmering water and melt on the stove top over low heat.
  • Dip the top of each finger in the glaze, double-dipping for a thicker coat if you so desire, and place on the prepared baking sheet. Sprinkle flaky sea salt over each one. Refrigerate until the chocolate sets, about an hour.
  • Serve the fingers cold from the fridge or at room temperature. The cookies will keep in an airtight container on the counter or in the refrigerator for up to 3 days.

1 tablespoon butter
1 tablespoon granulated sugar

Steps:

  • Preheat oven to 350°F In a medium bowl, stir together flour, cocoa powder, baking powder, and salt. Set aside.
  • Combine the 2 cups chocolate pieces and 2 tablespoons of the butter. Cook and stir over low heat until melted. Set aside to cool slightly.
  • Beat remaining butter on medium speed 30 seconds. Beat in brown sugar. Beat in eggs, one at a time, scraping bowl after each addition. Beat in melted chocolate mixture and vanilla. Beat in flour mixture on low speed. Stir in 1 cup semisweet chocolate pieces.
  • Drop by rounded teaspoonfuls 2 inches apart onto ungreased cookie sheet. Bake in preheated oven 8 to 10 minutes or until edges are firm and surface is lightly cracked. Let sit 10 minutes and transfer to wire rack; finish cooling. Dip each cookie one-third to halfway into chocolate ganache. Place on wire rack until ganache is set.
  • Chocolate Ganache: In saucepan, combine whipping cream, 1 tablespoon butter, and granulated sugar. Bring just to boiling, stirring to dissolve sugar. Remove from heat. Place remaining semisweet chocolate pieces in bowl. Pour hot cream mixture over chocolate; let stand for 5 minutes. Stir until smooth. Cool to room temperature.

1/3 cup sugar
1 egg
1/2 teaspoon vanilla extract
1 tablespoon milk, plus an additional 1/4 cup for the chocolate dip
2 ounces bittersweet chocolate

Steps:

  • Preheat oven to 325 degrees. Mix the flour, salt, baking powder and pepper in a bowl. Set aside. Grease 2 cookie sheets with 1 tablespoon of the butter. Cream the remaining butter. Gradually add the sugar and continue beating until incorporated. Add the egg, vanilla and 1 tablespoon milk. Add the flour mixture all at once. Beat until smooth.

Yield Makes about 50 fingers

Number Of Ingredients 11

1 cup butter, softened
1 cup powdered sugar
1 egg
1 teaspoon vanilla extract
2 3/4 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1/2 cup sliced almonds
2 tablepoons Icing Glue (see below)
1/4 cup powdered sugar
1 teaspoon water

Steps:

  • 1. In a large mixing bowl, beat the butter until smooth and creamy.
  • 2. Add the sugar, egg, and vanilla extract and mix well.
  • 3. Add the flour, baking powder, and salt and beat until completely mixed.
  • 4. Cover the dough and refrigerate for 30 minutes.
  • 5. Preheat the oven to 325°F.
  • 6. With your hands, roll a heaping tablespoon of dough into a finger shape for each cookie. If the dough gets sticky and hard to work with, put it back in the refrigerator for a little while. Place fingers on an ungreased cookie sheet about 3 inches apart.
  • 7. Use a butter knife to make knuckle marks on the finger cookies. Slightly flatten the front of the finger to create a nail.
  • 8. Bake 20-25 minutes, until fingers are slightly golden. Remove from the oven and let cool. Meanwhile, prepare the Icing Glue. Mix together powdered sugar and water in a small bowl until the consistency is similar to that of a paste.
  • 9. Attach almond slice fingernails to the tips of the fingers with Icing Glue. Let glue dry for about 30 minutes.
