Bake a showstopping cake for Easter. This one is so easy and the kids can decorate it by filling the pretzel nest with their favourite chocolate eggs

200ml vegetable oil , plus extra for the tin
250g plain flour
6 tbsp cocoa powder
2 tsp baking powder
1 tsp bicarbonate of soda
280g soft light brown sugar
250ml buttermilk
2 tsp vanilla extract
3 large eggs
200g marshmallows
100g butter , chopped into chunks
2 tbsp cocoa powder
75g salted pretzels , crushed
4 shredded wheat biscuits , crushed
chocolate eggs, to decorate
150g slightly salted butter , softened
2 tbsp cocoa powder
300g icing sugar
4 tbsp milk

Steps:

  • Heat oven to 180C/160C fan/gas 4. Oil and line two 20cm round cake tins. Add the flour, cocoa powder, baking powder, bicarb, sugar and a large pinch of salt to a bowl. Mix with a whisk, squeezing any large lumps of sugar through your fingers, until you have a fine, sandy mix.
  • Whisk the oil with the buttermilk in a jug. Stir in the vanilla and eggs, then pour the wet ingredients into the dry and mix until there are no more streaks of flour. Divide the mixture between the tins and bake for 25 mins. Test the cakes by inserting a skewer into the centre - if there is any wet mixture on the skewer, return the cakes to the oven for 5 mins more, then check again. Leave the cakes to cool in the tins for 15 mins, then transfer to wire racks to cool fully.
  • Next, make the nest. Clean one tin and line it with some oiled baking parchment. Put the marshmallows and butter in a heatproof bowl and microwave on high for 1 min, stirring halfway through (or heat gently in a pan on the hob). Continue microwaving in 20-second blasts until you get a runny mixture. Stir in the cocoa, pretzels and shredded wheat until well combined. Tip the mixture into your lined tin and use the back of your spoon to create a nest shape. Leave to cool at room temperature for a few hrs, or chill in the fridge if you need it to set faster.
  • To make the icing, beat the butter, cocoa, icing sugar and milk together until smooth, adding a splash more milk if the mixture is too stiff. Assemble the cake by stacking the sponges with icing in between, topping with more icing and the nest. Fill your nest with as many chocolate eggs as it will hold, then serve. It may be easier to cut the cake if you remove the nest - you can then chop the nest into chunks and serve alongside the cake.

15 vanilla creme-filled chocolate sandwich cookies, divided
1 pkg. (2-layer size) yellow cake mix with pudding in the mix
1-1/4 cups water
1/4 cup oil
3 eggs
1 can (16 oz.) ready-to-spread vanilla frosting
1-1/3 cups BAKER'S ANGEL FLAKE Coconut

Steps:

  • Preheat oven to 350°F. Split 11 of the cookies in half, leaving filling on 1 side of each cookie. Reserve split cookies with filling for brim of hat. Coarsely chop plain split cookies and remaining 4 whole cookies; set aside.
  • Beat cake mix, water, oil and eggs in large bowl with electric mixer on low speed until moistened. Beat on medium speed 2 min. Stir in chopped cookies. Pour 3 cups of the batter into greased and floured 9-inch round cake pan and 3/4 cup of the batter into greased and floured 10-oz. glass custard cup. Spoon remaining batter into 8 paper-lined medium muffin cups.
  • Bake 15 to 20 min. or until toothpick inserted in centers of cake in custard cup and cupcakes comes out clean. Remove to wire racks to cool. Continue baking cake in cake pan 10 to 15 min. or until toothpick inserted in center comes out clean. Let cakes stand in custard cup and cake pan 10 min. Remove to wire racks to cool completely.
  • Place 9-inch cake layer on serving plate; spread top with some of the frosting. Place cake round from custard cup, top side down and slightly off-center, on top of 9-inch cake layer. Reserve 1/3 cup of the frosting for spreading onto tops of cupcakes; frost side and top of bonnet with the remaining frosting. Sprinkle with coconut; press coconut gently into frosting to secure.
  • Halve reserved split cookies; place, filling side up and rounded edge out, around brim of hat. Decorate cupcakes with reserved frosting and candies. Cut cake into 12 pieces to serve. Serve with cupcakes.

  • Split 11 of the cookies in half, leaving filling on 1 side of each cookie. Reserve split cookies with filling for brim of hat. Coarsely chop plain split cookies and remaining 4 whole cookies; set aside.
  • Beat cake mix, water, oil and eggs in large bowl with electric mixer on low speed until moistened. Beat 2 minutes at medium speed. Stir in chopped cookies. Pour 3 cups of the batter into greased and floured 9-inch round cake pan and 3/4 cup batter into greased and floured 10-oz. glass custard cup. Bake at 350°F for 25 to 30 minutes or until toothpick inserted into centers comes out clean.
  • Divide remaining batter evenly into 6 to 8 paper-lined medium muffin pan cups. Bake at 350°F for 15 to 25 minutes or until toothpick inserted into centers comes out clean. Let stand in pan for 10 minutes. Remove from pan; cool completely on wire rack.
  • Place cooled 9-inch cake layer on serving plate; frost top of cake with some of the frosting. Place cake round from custard cup, top side down, slightly off-center on top of cake layer. Reserve 1/3 cup frosting for cupcakes; frost side and top of bonnet with remaining frosting. Sprinkle with coconut; press gently into frosting. Halve reserved split cookies; place filling side up and rounded edge out around brim of hat. Decorate cupcakes with reserved frosting and candies.

2 tablespoons cocoa
1 Betty Crocker™ Super Moist™ dark chocolate or devil's food cake mix
3 eggs
1/2 cup butter
1 cup water
1 cup good quality dark chocolate, chopped
3 cups powdered sugar
3 tablespoons light corn syrup
1/4 cup heavy whipping cream
1/4 teaspoon peppermint extract
2 to 3 tablespoons of milk
Bunch fresh mint sprigs
2 large chocolate bunnies, unwrapped
10-12 pastel malted candy eggs

Steps:

  • Heat oven to 350°F. (325°F for dark or nonstick pans). Generously spray 12-cup fluted tube cake pan with baking spray with flour. Sprinkle with cocoa to coat pans; tap to remove excess cocoa.
  • In a large bowl, beat cake mix, eggs, butter and water with electric mixer on low speed 30 seconds. Beat on medium speed 2 minutes, scraping bowl occasionally. Stir in chocolate.
  • Spoon batter into pan. Bake 35 to 40 minutes or until top springs back when touched lightly in center. Cool in pan 10 minutes. Place cooling rack or heatproof serving plate upside down over pan; turn rack and pan over. Remove pan. Cool completely, about 2 hours.
  • In medium bowl, beat powdered sugar, corn syrup, cream, and peppermint extract on low speed until blended. Beat on medium speed until smooth and creamy. Add just enough milk to the icing to make it thin enough to stick to a spoon, dripping off of the spoon slowly when tipped down toward bowl.
  • Spread icing onto cooled cake. Place a bunch of mint sprigs in the center of cake. Add a chocolate bunny in center of the mint sprigs. Press malted eggs around the top and sides of the cake. Press a second chocolate bunny onto the side of the cake. Garnish with additional mint sprigs, as desired.

Steps:

  • Heat oven to 190C/fan 170C/gas 5 and put 16 gold cases into a fairy-cake tin. Tip all the ingredients for the cake into a mixing bowl and beat for 2 mins with an electric hand-whisk until smooth. Divide between the cases so they are two-thirds filled, then bake for 12-15 mins until risen. Cool on a wire rack.
  • For the frosting, microwave the chocolate on High for 1 min. Cream the butter and sugar together, then beat in the melted chocolate. Spread on the cakes and decorate with Maltesers and chocolate eggs.

1 pkg. (3.9 oz.) JELL-O Chocolate Flavor Instant Pudding Pudding
1-1/2 cups cold milk
2 cups thawed COOL WHIP Whipped Topping
2-2/3 cups BAKER'S ANGEL FLAKE Coconut
1 chewy fruit snack roll
15 jelly beans

Steps:

  • Heat oven to 350°F.
  • Prepare cake batter as directed on package. Pour 3 cups batter into greased and floured 1-1/2-qt. metal or ovenproof glass bowl; pour remaining batter into greased and floured 12-inch pizza pan. Bake batter in pizza pan 15 min. and batter in bowl 45 to 50 min. or until toothpick inserted in centers comes out clean. Cool cakes in pan and bowl 10 min. Remove to wire racks; cool completely. If necessary, cut thin slice from flat side of bowl cake so it will sit flat. Cut round cake horizontally into 3 equal layers.
  • Beat pudding mix and milk in bowl with whisk 2 min. Place pizza pan cake on large serving plate; spread with 1 cup COOL WHIP. Place bottom layer of bowl cake on center of frosted pizza pan cake; spread with 2/3 of the pudding. Cover with middle cake layer; spread with remaining pudding. Top with remaining cake layer, rounded-side up.
  • Frost layered bowl cake with remaining COOL WHIP; sprinkle with coconut. Decorate with remaining ingredients to resemble Easter bonnet.
