1 box brownie mix, prepared according to package instructions
24 oz cream cheese
¾ cup sugar
3 eggs, beaten
2 teaspoons vanilla extract
1 lb semi-sweet chocolate chips
2 cups heavy cream

Steps:

  • Preheat oven to 350˚F (180˚C).
  • Prepare the brownie batter and pour into greased springform pan.
  • Bake until set, about 20-25 minutes.
  • Meanwhile, beat the cream cheese and sugar until incorporated. Add beaten eggs and vanilla, and beat again until smooth.
  • Remove brownies and lower oven temperature to 325˚F (165˚C).
  • Pour cheesecake batter over brownie bottom, and bake for 50 minutes until set and slightly jiggly.
  • Remove cheesecake and refrigerate for 4 hours, or overnight.
  • Heat or microwave whipping cream to just before boiling and pour over chocolate chips. Stir continuously until the chocolate is melted and smooth.
  • Allow the ganache to sit for 10-15 minutes.
  • Transfer cheesecake to a baking pan with a wire rack. In a circular motion starting from the inside out, pour the ganache glaze over the cheesecake making sure to cover all sides.
  • Allow ganache to cool and set for 30 minutes.
  • Enjoy!

2 cups white sugar
4 eggs
1 cup all-purpose flour
1 teaspoon vanilla extract
½ teaspoon salt
2 cups chopped walnuts

Steps:

  • Preheat oven to 350 degrees F. Grease a 9x13 inch baking pan.
  • In 3-quart saucepan over very low heat, melt butter or margarine and chocolate, stirring the mixture constantly. Remove from heat, and stir the sugar into the chocolate. Allow the mixture to cool slightly. Beat in the eggs one at a time, mixing well after each, then stir in the vanilla. Combine the flour and salt; stir into the chocolate mixture. Fold in the walnuts. Spread the batter evenly into the prepared pan.
  • Bake in oven 30 to 35 minutes. Brownies are done when toothpick inserted into center come out clean. Cool in pan on wire rack.

Steps:

  • Lightly oil a standard size loaf pan before lining it with plastic wrap. Set aside. Prepare double boiler (or place a large glass bowl over a pot of simmering water like THIS). Add all of the chocolate (unsweetened and chips) to double boiler and allow to melt, stirring frequently. Once chocolate is almost melted, carefully remove top of double boiler (containing chocolate) and continue to stir until all of the chocolate is melted. Allow to cool slightly while preparing other ingredients.In large bowl, blend softened butter and cream cheese until smooth. Add partially cooled chocolate to the butter-cream cheese mixture (chocolate shouldn't be hot) and blend well with hand mixer. Add stevia and vanilla and blend well. Taste for sweetness and adjust if needed. Stir in half of nuts. Pour the fudge mixture into the lined loaf pan and spread it out evenly (consider hitting the pan on the side of the counter). Top the fudge with the remaining chopped nuts. Refrigerate for atleast minutes or longer before cutting into smaller pieces. Keep fridgerated until ready to serve.

1 tsp salt
2 tbsp unsweetened cocoa powder
12 ounces dark chocolate
1 1/2 sticks unsalted butter (6 ounces)
1 1/2 cups sugar
1/2 cup brown sugar

2 tsp vanilla extract
8 ounces softened cream cheese
1/4 cup sour cream
1 egg
1 tsp vanilla extract
1/3 cup sugar

Steps:

  • Grease an 8-inch baking pan set aside.
  • Preheat oven to 350 degrees F.
  • In a large bowl, combine the all-purpose flour, salt, and cocoa powder. Set aside.
  • Melt butter and chocolate in a heatproof bowl over a pot of simmering water, making sure the water doesn't touch the bowl. Stir until smooth.
  • Stir in the sugar and then remove from the heat.
  • Let the sugar and chocolate mixture cool down a bit.
  • Add the eggs one at a time and mix until well incorporated.
  • Stir in the vanilla extract.

6 tablespoons (85 grams or 3 ounces) butter, cut into small pieces
3/4 cup (150 grams or 5.3 ounces) granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup (70 grams or 2.5 ounces) all-purpose flour
1/4 teaspoon salt
8 ounces (227 grams) full fat cream cheese, at room temperature
1/4 cup (50 grams or 1.7 ounces) granulated sugar
1/2 teaspoon pure vanilla extract
1 large egg (, at room temperature)
2 tablespoons heavy cream ((optional))

Steps:

  • Start with making the brownies:
  • Preheat the oven to 350F/175C. Line a 8×8-inch baking pan with parchment paper.
  • In a large heat-proof bowl, put the chocolate and butter and melt in the microwave in 20 second-intervals, stirring in between each interval, until melted (or set it over a saucepan of simmering water, stirring occasionally). Add the sugar and whisk until combined. Add the eggs, one at a time, and whisk just until combined. Add the vanilla and stir. Do not over mix. Sift the flour and salt over the chocolate mixture and fold, using a rubber spatula, just until mixed.
  • Set aside ½ cup of the batter and pour the rest into the prepared pan. Smooth the top.
  • To make the cheesecake:
  • Using a mixer, beat the cream cheese on medium speed until smooth. Add the granulated sugar and beat just until light and smooth. Scrape the sides and bottom of the bowl as needed. On low speed, beat in the egg and vanilla extract until combined. Add heavy cream and beat just until combined. Pour into the pan, on top of the brownie batter.
  • Take the reserved ½ cup of brownies batter and spoon dollops on top of the cheesecake batter. With a knife or a skewer, swirl the two batters together, to get a marble effect.
  • Bake for 30-40 minutes until the cheesecake filling is set, slightly puffed and just beginning to brown. A toothpick inserted into the center of the brownies should come out with a few moist crumbs. Let the brownies cool completely and then refrigerate them for at least one hour until they are firm enough to cut. Once firm, lift them out of the pan using the parchment paper and cut into squares.

¾ cup sugar
3 eggs
2 tsp. vanilla

Steps:

  • Preheat oven to 350 and grease a 9 inch springform pan generously.
  • Pour prepared brownie mix into pan and bake for 20 mins until just set on top. Let cool 2 mins. Lower oven to 325.
  • While it is baking prepare the cheesecake.
  • Beat cream cheese and sugar.
  • Add eggs and vanilla until smooth.
  • After you cool the brownie 2 mins, very slowly and carefully scoop the cheesecake mix on top. Some brownie may bubble up, that's ok but go slowly to avoid too much of this.
  • Bake entire cake at 325 for 50 mins.
  • Cool and chill overnight.
