Rich and Creamy Grand Marnier Truffles are made with just 8 simple ingredients.

1 pound (454g) dark chocolate (finely chopped )
1 cup (227ml) heavy cream (aka whipping cream)
6 tablespoons (85g) unsalted butter (room temperature, cut into small cubes )
1/4 cup (57ml) Grand Marnier
1/2 cup (42g) cocoa powder (sifted )
24 ounces (567g) dark chocolate (finely chopped )
flaky sea salt

Steps:

  • Place the chopped chocolate in a medium-sized heatproof bowl. Set aside until needed.
  • In a small saucepan over medium heat, bring the cream to a boil. As soon as it begins to boil, remove the cream from heat.
  • Pour the hot cream over the chopped chocolate and allow the mixture to sit, untouched, for a minute. Then whisk until smooth.
  • Stir in the butter and Grand Marnier and vigorously whisk until smooth and shiny.
  • Set aside and cool to room temperature. Then tightly cover the bowl with plastic wrap and refrigerate for 2 and ½ hours or until firm enough to scoop.
  • Place the cocoa powder in a wide shallow dish and set aside.

1/2 lb good bittersweet chocolate, such as lindt
1/2 lb good semisweet chocolate, such as ghiradelli
1 cup heavy cream
2 tablespoons Grand Marnier, optional
1 tablespoon brewed coffee
1/2 teaspoon good vanilla extract
confectioners' sugar
cocoa powder

Steps:

  • Chop the chocolates finely with a sharp knife.
  • Place them in a heat-proof mixing bowl.
  • Heat the cream in a small saucepan until it just boils.
  • Turn off the heat and allow the cream to sit for 20 seconds.
  • Pour the cream through a fine-meshed sieve into the bowl with chocolate.
  • With a wire whisk, slowly stir the cream and chocolates together until the chocolate is completely melted.
  • Whisk in the Grand Marnier, if using, coffee, and vanilla.
  • Set aside at room temperature for 1 hour.
  • With 2 teaspoons, spoon round balls of the chocolate mixture onto a baking sheet lined with parchment paper.
  • Refrigerate for 30 minutes, until firm.
  • Roll each dollop of chocolate in your hands to roughly make a round ball.
  • Roll in confectioners' sugar, cocoa powder, or both.
  • These will keep refrigerated for weeks, but serve at room temperature.

Had an extra box of vanilla wafers and wanted to make something other than rum balls for the holidays. This is a wonderful variation on traditional rum or bourbon balls.

3 1/4 cups finely crushed vanilla wafers
1 cup powdered sugar
3 tablespoons unsweetened cocoa powder
4 tablespoons light corn syrup
1/2 teaspoon orange extract
1/2 cup Grand Marnier or 1/2 cup other orange liqueur
1/3 cup granulated sugar (for rolling)

Steps:

  • In very large bowl, combine wafer crumbs, cocoa, and powdered sugar. Mix thoroughly.
  • Add corn syrup, orange extract, and Grand Marnier and stir until large ball forms. If too crumbly add small amounts of corn syrup or liqueur until mixture sticks together well.
  • Roll in your hands to form into 1 inch balls (I used a small cookie scoop and then rolled into balls).
  • Roll balls in granulated sugar and place on wax-paper lined tray.
  • Store in airtight container for a few days to build flavor. Place wax paper between layers of cookie balls to prevent sticking together.
  • If desired, can roll in powdered sugar or cocoa instead of granulated sugar. If sugar disappears while balls are being stored, roll again in sugar before serving.

Steps:

  • Grind chocolate wafers and almonds together in a food processor until pulverized. Add 1½ cups powdered sugar, process to combine. Add Grand Marnier and corn syrup, process until mixture forms a moist mass. Break off small pieces of dough and roll into 1 inch balls. Place remaining 1 cup powdered sugar in a wide bowl, roll each ball in sugar to coat. Store loosely packed between layers of waxed paper in a tightly covered tin. Makes 1½ dozen. Best if prepared 1 week before serving.

About 1 to 2 tablespoon unsalted butter, softened
About 1/4 cup white sugar
4 tablespoons unsalted butter, cut into bits
7 ounces bittersweet or semisweet chocolate, chopped finely
2 tablespoons Grand Marnier
4 egg yolks
8 egg whites
1/2 teaspoon cream of tartar
1/4 cup white sugar

Steps:

  • Coat a large straight sided porcelain baking dish or souffle mold (about 8-inches diameter and 4- deep) with the softened butter. Alternatively, you can use eight individual straightsided porcelain ramekins. Coat evenly and generously all the way to the top, making sure to get the corners. Sprinkle in some sugar and toss around to coat the bottom and sides of the mold or molds. Place molds in the refrigerator to chill (if using individual molds, place them on a cookie sheet first.)
  • Preheat oven to 400 degrees. Find a medium metal bowl that completely covers the top of a small saucepan. Place 3 inches of water in the saucepan and bring to the simmer. Turn off the heat. Place cut up butter and chocolate in the bowl and place bowl over pan of hot water. Let sit for 2 minutes then stir. It should be completely melted; if not, remove the bowl, bring the water back to a simmer, turn off the heat and replace the bowl. Stir until smooth. Stir in the Grand Marnier. Set aside to let cool to room temperature. Place egg yolks in the bowl of an electric mixer fitted with the whip. Beat egg yolks at medium speed until opaque and lightened in color, about 3 minutes. Add to cooled chocolate mixture.
  • Bring medium pot of water to a boil. Clean mixer bowl and whip well, and dry them. Place egg whites in bowl and whip at high speed 2 minutes, then reduce speed to medium and add the cream of tartar. Whip until soft peaks form then slowly add the granulated sugar down the side of the bowl while continuing to whip until firm peaks form. Take 1/3 of the whites and whisk into chocolate mixture to lighten it. Fold in remaining whites with a large rubber spatula, trying not to deflate the whites. Fold gently but thoroughly until no white streaks remain. Remove coated molds from the refrigerator. Fill mold or molds with souffle mixture, up to 1/2-inch from rim. Run your thumb around the inside of each mold to form a shallow groove all around. When all molds have been filled transfer to the oven and bake until risen and top is evenly dried, about 10 minutes for individual soufflJs and about 25 minutes for a large. Serve immediately.
  • Classic souffle technique: egg yolks combined with flavoring base, lightened with whipped egg whites and baked until risen. Very important that all equipment used for beating whites be scrupulously clean. Running thumb around mold encourages an even rise.

1/2 cup heavy cream
1 tablespoon Grand Marnier or other orange-flavored liqueur
1/4 teaspoon coarse salt
Unsweetened cocoa powder, for rolling

Steps:

  • Place chocolate in a bowl. Bring cream, Grand Marnier, and salt to a simmer in a small saucepan. Pour over chocolate, and let stand for 2 minutes. Whisk until smooth.
  • Pour chocolate mixture into an 8-inch square baking dish, and refrigerate until chilled, about 30 minutes.
  • Scoop balls of chocolate mixture using a tablespoon or a 1-inch ice cream scoop. Roll balls in cocoa powder, tossing, until fully coated. Shake off excess.

This recipe is the ultimate version after many holiday seasons of experimenting. They require at least a week of aging, tucked away in a tin out of sight and out of mind. Once unveiled they are the perfect sweet to end a gala evening.

1 cup hazelnuts, skinned & toasted
1 1/2 cups confectioners' sugar
1 tablespoon instant espresso powder
1/2 cup grand marnier orange liqueur
2 1/2 tablespoons light corn syrup
1/2 cup granulated sugar

Steps:

  • Pulverize the chocolate wafers and hazelnuts together in a food processor. Add the confectioners' sugar and process to combine.
  • Dissolve the espresso in the Grand Marnier and add to the chocolate crumbs along with the corn syrup. Process until the mixture forms a moist mass.

1 cup heavy cream
4 tablespoons unsalted butter
2 teaspoons light corn syrup
1 pound 2 ounces finely chopped semisweet chocolate, plus 12 ounces more for dipping
6 tablespoons Grand Marnier (or other orange-flavored liqueur)

Steps:

  • Very finely chop 12 ounces semisweetchocolate, and sift to remove powderyresidue; set aside in a small bowl. In a small saucepan, bring cream, butter, and corn syrup to a full boil overmedium heat. Turn off heat. Add 1 poundchocolate; gently swirl pan to coverchocolate with cream, but do not stir. Let stand, undisturbed, 5 minutes. Stir Grand Marnier into theganache.
  • Slowly whisk until combined. Transfer mixture to a large bowl; refrigerate,stirring every 15 minutes.
  • After 45 minutes, mixture will thickenquickly, so stir every 3 to 5 minutes untilthick enough to scoop, 10 to 20 minutesmore. Using two spoons or a small ice-cream scoop, form into 1-inch balls; transfer to a parchment-lined baking sheet.
  • Chill until firm, but not hard, about 10minutes. Remove from refrigerator; rollin palms to form a ball, and press gentlywith fingers to create irregular shapes.Chill until ready to dip, up to 1 week.Place remaining 12 ounces chocolate ina heatproof bowl over a pan of simmeringwater; stir occasionally until chocolatemelts. Remove from heat; cool slightly.
  • Removecenters from refrigerator. Using onehand, dip one center into melted chocolate, then roll around in your hand tocoat evenly, letting excess drip back intopan. Place truffle in bowl of reserved choppedchocolate. With yourclean hand, cover truffle with chocolate. Letsit in bowl 20 seconds.
  • Lift out, and set on a parchment-linedbaking sheet. Repeat with remainingtruffles. If your kitchen is warm, refrigerate 5 minutes to set. You can storetruffles in airtight containers up to 1week at a cool room temperature.
