1/2 cup whole hazelnuts, toasted
1 tablespoon confectioners' sugar
1 tablespoon plus 1/2 cup butter, divided
2 tablespoons plus 1 cup all-purpose flour, divided
2 large eggs, separated, room temperature
2/3 cup sugar
1/4 teaspoon vanilla extract
1 teaspoon baking powder
1/8 teaspoon salt
Additional confectioners' sugar, optional

Steps:

  • In a food processor, combine the hazelnuts and confectioners' sugar; cover and process until nuts are finely chopped. Set aside. Melt 1 tablespoon butter; brush two 12-shell madeleine pans with butter. Dust with 2 tablespoons flour; tap pans to remove excess flour and set aside. Place remaining 1/2 cup butter in a saucepan; melt over low heat until it turns a light amber color, 4-5 minutes. Set aside to cool., In a large bowl, beat egg yolks and sugar until thick and a pale lemon color. Stir in melted butter and vanilla. Combine the baking powder, salt and remaining flour; stir into butter mixture just until combined. In a small bowl, beat egg whites on high speed until stiff peaks form; fold into batter. Gently fold in reserved nut mixture., With a tablespoon, fill prepared pans two-thirds full. Bake at 325° until golden brown, 18-20 minutes. Cool for 2 minutes before inverting pans onto wire racks to remove cookies. Cool completely. Lightly dust with additional confectioners' sugar if desired.

1/2 cup granulated sugar
2 large eggs
Grated rind of one lemon
4 ounces (one stick) butter, melted
3/4 teaspoon baking powder
3/4 cups all purpose flour
1/4 teaspoon salt

Steps:

  • Preheat oven to 375. Beat sugar and eggs together until thoroughly blended. Add lemon rind and melted butter. Mix to blend. Sift together dry ingredients. Add all at once to egg mixture. Stir just to blend. Allow mix to sit at room temperature for approximately 10 minutes. While mix is resting, generously butter Madeleine molds. Spoon mix into molds, filling approximately 3/4 full. Bake approximately 15 minutes or until edges are golden brown. Turn over immediately onto cooling screen. Wipe out each mold cavity, rebutter and fill again until desired number or all mix is used. Store in airtight container until ready to use.;

Yield Makes about 4 small or 2 large cakes

Number Of Ingredients 9

8 tablespoons (1 stick) unsalted butter
4 large eggs
2/3 cup sugar
1/4 teaspoon salt
1 teaspoon vanilla extract
Zest of 1 lemon, grated
1 cup sifted all-purpose flour

White Chocolate Ganache for Chocolate Glazed Madeleines

Steps:

  • Heat oven to 350 degrees.
  • Coat the molds first with vegetable-oil spray, then lightly rub with room-temperature butter. Do not leave any lumps of butter in the indentations of the mold.
  • Set molds on a baking tray. To keep them level, prop them up with loosely crumpled aluminum foil.
  • Melt the butter and allow it to cool while proceeding with the recipe.
  • Using the whisk attachment on an electric mixer, beat together the eggs and sugar until tripled in bulk, 10 to 12 minutes.
  • Add the salt, vanilla, and lemon zest, mixing thoroughly. Add the flour in 3 batches, very quickly shifting speed from low to high after each addition. Add the melted butter in the same manner.
  • Using the whisk, scrape sides and bottom of the bowl, carefully blending batter so the butter doesn't settle to the bottom.
  • Fill the prepared molds three-quarters full. Bake until golden, about 10 minutes, depending on size of mold. Invert cakes onto wire racks as soon as they are removed from oven. When thoroughly cooled, glaze with Chocolate or White Chocolate Ganache.

Madeleine is a shell-shaped confection that is a lovely marriage of small cake and cookie, For true madeleines, you need madeleine molds, which are sold at nearly all cookware stores. However, any mold that holds a quarter cup of batter will work, although the results won't be immediately recognizable as madeleines. But, just as a rose by any other name smells as sweet, so does a madeleine in any other shape taste as sweet.

3/4 cup unbleached all-purpose flour
1/4 cup Dutch-processed cocoa powder
3/4 cup baking soda
1/2 teaspoon salt
1/3 cup fudge chocolate syrup (homemade or purchased, such as Fudge Sweet brand)
2 tablespoons frozen orange juice concentrate
1/4 cup strong brewed coffee
2 teaspoons coffee liqueur
1 large egg, at room temperature
1 large egg white, at room temperature
1/3 cup granulated sugar
1/2 teaspoon pure vanilla extract
1/2 teaspoon chocolate extract

Steps:

  • Preheat oven to 350°F Spray 10 madeleine molds with vegetable oil spray.
  • Sift together the flour, cocoa, baking soda, and salt, the sift again into a large bowl. In a small bowl, combine the fudge sauce, orange juice concentrate, coffee and liqueur. Mix well and set aside.
  • In the bowl of an electric mixer, combine the egg, egg white, sugar, vanilla, and chocolate extracts and beat on high speed until the mixture doubles in volume. Reduce the speed to low and gradually add the Fudge Sweet mixture, beating just until incorporated. With the mixer at low speed, gradually add the dry ingredients. Stop the mixer and scrape the sides of the bowl often during the process. Do not overmix,.
  • Spoon the batter into the madeleine molds, filling each one-third full. Set the molds on a baking sheet and bake for 15-20 minutes, until firm. Invert onto a wire rack and cool.

5 eggs
225 g sugar
115 g flour
12 g baking powder
115 g ground hazelnuts
225 g butter, browned

Steps:

  • Heat butter over low heat watching carefully until a light brown colour. Remove from heat and cool.
  • Lightly mix the eggs with sugar. Add the flour, baking powder and ground hazelnuts and mix until combined.
  • Add the cooled butter and mix again. Cover with cling film, then rest in the fridge overnight.
  • Preheat oven to 180°C Grease a madeleine tray with butter and flour.
  • Pipe the mixture into the moulds. Bake for 10mins. Remove from oven and leave for 2 minutes.
  • Serve while still warm.
