CHOCOLATE MAPLE BARS
My family runs a maple syrup operation, and I'm always looking for new ways to incorporate maple syrup into my cooking and baking. These bars are delicious! -Cathy Schumacher, Alto, Michigan

Steps:
- In a large bowl, cream the shortening, syrup and sugar until light and fluffy, 5-7 minutes. Beat in the eggs, milk and vanilla. Combine the flour, baking powder and salt; add to creamed mixture and mix well. Remove half the batter to another bowl., Combine melted chocolate and pecans; stir into 1 bowl of batter. Spread into a greased 13x9-in. baking pan. Add coconut to remaining batter. Spread carefully over chocolate batter. , Bake at 350° until a toothpick inserted in the center comes out clean, about 25 minutes. Cool completely on a wire rack., For frosting, in a small bowl, beat butter until smooth. Gradually add the confectioners' sugar and cocoa. Gradually add syrup, beating until smooth. Fold in marshmallows. Frost bars.

Steps:
- In a mixing bow, cream sugar and shortening. Add syrup and egg and beat well. Combine flour and baking powder; add to creamed mixture. Add vanilla and mix well. Stir in oats and walnuts. Pour into a greased 9-in. square baking pan. Bake at 350° for 35 minutes. Cut into squares while warm. Cool on a wire rack.

CANADIAN MAPLE BARS
Found this recipe in November 1996 Family Circle Magazine. Since I Love, Love Maple I simply had to make these delicious bars. I did use my Amber Maple Syrup as I usually do in all recipes calling for Maple Syrup, it imparts a bit stronger maple flavor into everything I make with it, but feel free to use regular Maple Syrup since cost could be a factor if giving as gifts. Since coconut is not everyones favorite ingredient I suppose you could increase the pecans and leave out the coconut, or replace the expensive pecans as I did once with 2 1/2 cups chopped walnuts.(It does affect the taste though) Cooking time is refrigerate time...no baking needed here.

Steps:
- Graham Layer:.
- Combine crumbs, pecans, coconut, chocolate and butter in bowl. Press evenly over bottom of 13 x 9 x2 inch baking dish. Refrigerate 30 minutes.
- Maple-Cream Layer:.
- Beat confectioners sugar, butter and maple syrup in bowl until smooth and creamy. Spread evenly over graham layer. Refrigerate until firm, for about 3 hours.
- Topping:.
- Melt Semisweet chocolate in cream in saucepan over low heat. Cool to room temperature, about 20 minutes. Pour evenly over maple layer. Refrigerate until firm, for 3 hours.
- Melt white chocolate in small saucepan over low heat. Cool Slightly. Pour into paper cone: drizzle over Chocolate topping. Refrigerate until set, about 10 minutes.
- Cut into 24 two inch squares: cut each square into half for 48 bars.
- This can be frozen, or refrigerated.

MAPLE-NUT-CHOCOLATE CHIP COOKIE BARS
Maple is a flavor that can go far beyond pancakes, as these nutty, chocolaty, frosted bars prove. They're made with a shortcut start from Betty Crocker™ chocolate chip cookie mix, and get finished with a scratch maple buttercream that's well worth a little bit of extra effort.

- Heat oven to 350°F. Spray 9-inch square pan with cooking spray.
- In large bowl, mix cookie mix, 1/2 cup softened butter, the egg and 1/2 teaspoon maple extract with spoon until soft dough forms. Stir in 1/2 cup walnuts. Spread dough evenly in pan.
- Bake 20 to 24 minutes or until toothpick inserted in center comes out clean. Cool completely, about 1 hour 30 minutes.
- In medium bowl, beat powdered sugar, 1/4 cup softened butter, 2 tablespoons of the milk and 1/4 teaspoon maple extract with spoon until smooth and fluffy. If frosting is too stiff to spread, add additional milk, 1 teaspoon at a time. Frost top of bar. Sprinkle 1/4 cup walnuts on top. Cut into 4 rows by 4 rows.
- Store loosely covered.

- Heat oven to 350°F.
- Stir together flour, sugar, cocoa and salt in large bowl; cut in butter until crumbly. Stir in 1 beaten egg. Press mixture evenly onto bottom of ungreased 13x9x2-inch baking pan.
- Bake 25 minutes. Meanwhile, beat sweetened condensed milk, remaining 1 egg and flavoring in medium bowl; stir in pecan halves. Pour over prepared crust, distributing pecan halves evenly. Return to oven.
- Bake 25 minutes longer or until golden. Cool in pan on wire rack. Cut into bars. Store tightly covered at room temperature. About 24 to 36 bars.

CHEWY MAPLE BARS

- Heat oven to 350°F (if using dark or nonstick pan, heat oven to 325°F). Lightly grease bottom and sides of 13x9-inch pan with shortening or spray with cooking spray.
- In large bowl, beat brown sugar, butter, maple flavor and egg with electric mixer on medium speed, or mix with spoon. Stir in flour, baking soda, salt and 1/2 cup of the almonds. Pat dough in pan with lightly floured fingers.
- Bake 15 to 20 minutes or until golden brown. Cool completely, about 45 minutes.
- Meanwhile, in small bowl, stir all Maple Icing ingredients until smooth and thin enough to drizzle. Drizzle cooled bars with Maple Icing; sprinkle with remaining 1/4 cup almonds. Let stand 5 minutes or until set. For bars, cut into 6 rows by 4 rows.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Beat butter and vegetable shortening with brown sugar, egg, vanilla extract, and maple extract until smooth; stir in flour and salt. Lightly press the dough into a 10x15-inch baking dish.
- Bake until the crust is set and lightly browned, about 15 minutes.
- Melt chocolate chips in the top of a double boiler over simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching. Remove crust from oven and spread melted chocolate in a layer on top. Sprinkle with walnuts. Cut bars while still warm; let chocolate set, about 1 hour, before serving.
