A rich, crisp, sugar type cookie that is easy to make. The mayonnaise takes the place of the shortening and eggs. My son says it is possibly the world's best cookie.

1 cup white sugar
2 cups all-purpose flour
1 cup mayonnaise
1 teaspoon baking soda
1 pinch salt
1 teaspoon vanilla extract

Steps:

  • Mix together sugar, flour, baking soda, and salt. Add mayonnaise and vanilla. Mix together very well.
  • Shape into walnut sized balls. (The dough will be crumbly). Mash with a fork, sprinkle with sugar. Bake 12 minutes in a 350 degree F (175 degrees C) oven.

1 cup Crisco butter flavored shortening (or regular Crisco
3/4 cup firmly packed light brown sugar
3/4 cup granulated sugar
1 tablespoon vanilla extract
2 large eggs
1/2 cup regular or low fat mayonnaise
2 1/2 cups cake flour
1/2 teaspoon salt
1/2 teaspoon baking soda
2 cups milk chocolate chips
3/4 cup cashew pieces, lightly salted

Steps:

  • Preheat oven to 375 degrees F.
  • Beat the shortening, sugars and vanilla in large bowl with mixer on medium speed until well blended. Beat in eggs, then beat in mayonnaise.
  • Mix together the cake flour, salt and baking soda, then add it to the batter and stir to make a soft dough.
  • Stir in the chocolate chips.
  • Using 2 tablespoons of dough for each cookie, shape into mounds on parchment lined baking sheets OR put them on plastic wrap lined dinner plates and chill until ready to bake.
  • Bake at 375 for 10-12 minutes. Alternatively, bake at 350 for slightly longer.
  • Let cool for 2 minutes, then transfer to a wire rack to cool completely.

1 cup mayonnaise
1 teaspoon vanilla extract
2 cups all-purpose flour
1 cup sugar
3 tablespoons baking cocoa

BROWN SUGAR FROSTING:
1/2 cup packed brown sugar
1/4 cup butter, cubed
2 tablespoons 2% milk
1-3/4 cups confectioners' sugar

Steps:

  • In a large bowl, combine the water, mayonnaise and vanilla until well blended. In a large bowl, combine the flour, sugar, cocoa and baking soda; gradually beat into mayonnaise mixture until blended. , Pour into a greased 9-in. square or 11x7-in. baking pan. Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool completely. , For frosting, in a small saucepan, cook and stir the brown sugar in butter until bubbly. Remove from the heat; stir in milk. Gradually add confectioners' sugar; beat until smooth. Frost cake.

1 ½ teaspoons baking soda
1 ½ cups white sugar
1 ½ cups mayonnaise
⅓ cup unsweetened cocoa powder
1 ½ cups water
2 ¼ teaspoons baking powder

Steps:

  • Preheat oven to 350 degrees (175 degrees C). Lightly grease two 9 inch layer pans.
  • Mix flour, baking soda, baking powder, cocoa, and sugar into a large bowl. Stir in mayonnaise. Gradually add water and vanilla and blend until smooth. Pour batter into prepared pans.

2/3 cup unsweetened cocoa powder
1 1/4 teaspoons baking soda
1/4 teaspoon baking powder
3 eggs

Steps:

  • Preheat oven to 350. Grease and lightly flour 2 9-inch round cake pans, set aside.
  • In medium bowl, combine flour, cocoa, baking soda and baking powder; set aside.
  • In large bowl, with electric mixer at high speed, beat eggs, sugar and vanilla for 3 minutes or until light and fluffy. Beat in hellmanns real mayonnaise at low speed until blended. Alternately beat in flour mixture with water, begining and ending with flour mixture. Pour into prepared pans.
  • Bake 30 minutes or until toothpick inserted in centers comes out clean. On wire racks, cool 10 minutes; remove from pans and cool completely. Frost,if desired, or sprinkle with confectioners sugar.

Instead of trying to find the perfect mix of eggs and butter, the mayo comes in and gives the best of both worlds. The cookies are fluffy without being too cakey and gooey-soft without being undercooked. The mayo adds weight without making them heavy or dense. They'll stay moist and flavorful even the next day!

2 cups all-purpose flour (see Cook's Note)
1/3 cup unsweetened cocoa powder
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
1 stick (8 tablespoons) unsalted butter, at room temperature
3/4 cup packed light brown sugar
1/4 cup granulated sugar
1/3 cup mayonnaise
2 teaspoons pure vanilla extract
1 large egg
5 ounces dark chocolate, chopped, or 1 heaping cup chocolate chunks

Steps:

  • Preheat the oven to 375 degrees F. Line 2 baking sheets with parchment.
  • Whisk together the flour, cocoa, baking soda and salt in a medium bowl. Set aside.
  • Cream the butter and both sugars with an electric hand mixer on medium speed (fit a stand mixer with the paddle attachment) until fluffy and pale brown, 2 to 3 minutes. Beat in the mayonnaise, vanilla and egg until fluffy and combined, about 30 seconds. Add the flour mixture and beat on low speed until mostly combined, then add all but 1/4 cup of the chopped chocolate. Stir by hand until completely combined and there is no dry flour visible.
  • Place 5 dough scoops onto each prepared baking sheet using a 1/4 cup ice cream scoop, spacing them 2 to 3 inches apart. Divide the remaining chopped chocolate between the scoops, pressing a little into the top of each one (see Cook's Note).
  • Bake until the cookies are browned and just set on top, but still very soft, 10 to 12 minutes. Let the cookies cool on the baking sheet for 10 minutes. Serve warm or room temperature. Store in an airtight container at room temperature for up to 5 days.
  • Cook's Note: When measuring flour, we spoon it into a dry measuring cup and level off the excess. (Scooping directly from the bag compacts the flour, resulting in dry baked goods.)
  • This dough is great for freezing for up to 6 months. Freeze on the baking sheet until firm and then transfer to a resealable bag. Bake from frozen for 12 to 14 minutes.

After all, cakes rely on eggs and fat for tenderness and richness, and mayo is made of exactly those things, plus some salt and vinegar to give it tang. But you don't taste the tanginess of the mayo, and if you didn't tell anyone it was there, they would never know. Which is to say, don't let a lack of eggs or butter stop you from making cake. This cake is ridiculously good for the small amount of effort you put into it.

1/4 cup/25 grams unsweetened cocoa powder (Dutch-processed or natural)
1 to 2 ounces chopped bittersweet chocolate (optional)
3/4 cup/180 milliliters boiling water, or use hot coffee, Earl Grey tea or mint tea
2/3 cup/160 milliliters mayonnaise
1/4 teaspoon kosher salt
1 1/2 teaspoons baking soda
3/4 cup/150 grams granulated sugar
1 teaspoon vanilla extract, or a dash of bourbon or whiskey (optional)
1 1/2 cups/190 grams all-purpose or cake flour
Flavorless oil or another grease, for the pan
Confectioners' sugar, for finishing

Steps:

  • To a large mixing bowl, add cocoa powder and chopped bittersweet chocolate (if using). Pour in boiling liquid, and let it sit for a few minutes, then whisk until smooth. The chocolate will have melted, if you used it, and the cocoa dissolved.
  • Whisk in mayonnaise, salt, baking soda, 3/4 cup granulated sugar until smooth. Then whisk in a teaspoon of vanilla extract, if you have it (or a dash of Bourbon or brandy or just leave it out entirely). Finally, whisk in 1 1/2 cups flour (either all-purpose or cake flour), mixing vigorously to eliminate any lumps.
  • Grease an 8- or 9-inch pan (square, round, star-shaped, anything is good). Pour the batter into the pan, and bake at 350 degrees for 22 to 40 minutes, until the top springs back when the center is lightly pressed. The deeper the pan, the longer it will take to bake through.
  • Let cool, and sprinkle with confectioners' sugar to finish.
