4 large ripe bananas
3 tablespoons unsweetened cocoa powder
3 tablespoons heavy cream
3 tablespoons maple syrup
1/2 cup salted, roasted peanuts, finely chopped
Special equipment: six 3- to 4-ounce ice-pop molds

Steps:

  • Break the bananas into chunks, and puree in a food processor until the mixture is smooth and creamy. Add the cocoa powder, cream and maple syrup, and puree until combined. Spoon the banana mixture into ice-pop molds, and freeze until firm, 8 hours or overnight.
  • Spread the peanuts on a plate. Run hot water over the ice pops to help loosen them, then unmold, roll them in the peanuts and serve (or keep them frozen on a parchment-lined baking sheet until ready to serve).

3 tablespoons all-purpose flour
3 tablespoons baking cocoa
4 cups milk
10 Popsicle molds or plastic cups (3 ounces) and Popsicle sticks

  • In a large saucepan, combine the sugar, flour and cocoa. Gradually stir in milk until smooth. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. 6 ounces good-quality chocolate, at least 54 percent cacao
2 cups whole milk
1/2 cup cream
1/4 cup sugar
2 tablespoons unsweetened cocoa
2 teaspoons vanilla
1/2 to 1 teaspoon kosher salt, to taste

Steps:

  • Break up chocolate and put into a blender. Bring milk, cream, sugar and cocoa to a light boil and immediately remove from heat. Pour milk over chocolate, add vanilla and salt and allow to sit for a few minutes to soften chocolate. Blend until chocolate and milk are emulsified and the mixture is smooth.
  • Pour into eight 3-ounce paper cups (there may be a little left over), or use ice pop molds. If using the small cups, place in freezer for about 1 hour before inserting wooden craft sticks so the sticks will stand straight.
  • Freeze well for 24 hours. Pops may be taken out of paper cups and stored in a heavy freezer bag.

12 ounces semisweet chocolate, finely chopped
1 1/2 cups heavy cream
1 1/2 teaspoons pure vanilla extract
Pinch of kosher salt
1/4 cup confectioners' sugar
2 tablespoons creamy peanut butter
Cooking spray
2 tablespoons coconut oil or roasted peanut oil
1/4 cup salted roasted peanuts, finely chopped

Steps:

  • Put 4 ounces chocolate in a medium bowl. Bring 1/2 cup heavy cream to a simmer in a small saucepan; pour over the chocolate and let sit 5 minutes. Add the vanilla and salt and whisk until smooth; set aside to cool to room temperature.
  • Combine the remaining 1 cup heavy cream, the confectioners' sugar and peanut butter in a large bowl. Beat with a mixer on medium-high speed until stiff peaks form, 2 to 3 minutes. Fold the peanut butter whipped cream into the cooled chocolate mixture in three batches until just incorporated but still airy. Freeze until the mixture is firm enough to scoop, about 30 minutes.
  • Lightly coat a 1 1/2-inch ice cream scoop or tablespoon with cooking spray. Scoop balls of the frozen mousse onto a parchment-lined baking sheet (about 1 heaping tablespoon per ball). Gently press a lollipop stick halfway into each ball. Freeze until firm, at least 1 hour.
  • Meanwhile, combine the remaining 8 ounces chocolate and the coconut oil in a small microwave-safe bowl. Microwave in 30-second intervals, stirring, until the chocolate is melted and smooth; set aside to cool.
  • Put the peanuts in a small bowl. Loosen the mousse balls from the baking sheet with a small offset spatula. One at a time, dip the balls into the melted chocolate, letting the excess drip back into the bowl. Return to the baking sheet and sprinkle with the peanuts while the chocolate is still wet. Return to the freezer until ready to serve.

3 cups low-fat milk (1% or 2% milk fat)
1 cup sugar
3/4 cup unsweetened cocoa powder (preferably Dutch-process)
1/4 cup light corn syrup
1 teaspoon pure vanilla extract
Equipment: 8 (1/3-cup) or 10 (1/4-cup) ice pop molds and 8 or 10 wooden sticks (if necessary)

Steps:

  • Heat milk, sugar, cocoa powder, corn syrup, and 1/4 teaspoon salt in a 2-quart heavy saucepan, stirring, until sugar has dissolved. Remove from heat and stir in vanilla. Cool to room temperature or quick-chill in an ice bath. Pour into molds and freeze 30 minutes. Insert sticks (if using), then freeze until firm, about 24 hours.
  • Run hot water over molds (or dip in hot water) to loosen pops before unmolding.
