300g stoned date , chopped
6 large eggs , separated
350g light muscovado sugar
200g wholemeal flour
2 tsp baking powder
100g cocoa
5 tbsp custard powder
5 tbsp light muscovado sugar
50g cocoa powder
1.2l skimmed milk

Steps:

  • Cover the dates with boiling water and set aside to soften for 30 mins.
  • Heat oven to 160C/140C fan/gas 3 and line a 20 x 30cm baking tin with baking parchment. Drain the dates, reserving the liquid, then whizz the dates to a purée with 100ml of the soaking liquid.
  • Beat the egg whites in a large bowl with an electric whisk until stiff peaks hold on the end of your whisk. Add half the sugar and beat until thick and glossy.
  • In another bowl, beat the yolks and remaining sugar until pale. Whisk in the mashed date mixture, then fold into the egg white mixture until well combined. Mix the flour, baking powder and cocoa with a pinch of salt. Sprinkle over the wet mixture and very gently fold in until well combined. Gently scrape into the tin and spread to the edges. Bake for 35-40 mins until a skewer poked in comes out clean.
  • Meanwhile, mix the custard powder, sugar and cocoa together in a saucepan. Stir in dribbles of milk until you get a smooth paste. Gradually add more milk until it's all incorporated with no lumps. Put over a medium heat and warm, stirring constantly, until thick and just bubbling.
  • Cut the warm cake into slabs and pour over the hot chocolate custard to serve.

3 large eggs, separated
1/4 teaspoon cream of tartar
1 1/4 cups milk
1/3 cup chocolate flavored syrup
1/4 cup all-purpose flour
3/4 teaspoon vanilla extract
marshmallow cream or whipped cream, optional

Steps:

  • In small mixing bowl at high speed, beat egg whites with cream of tartar until stiff but not dry, just until whites no longer slip when bowl is tilted.
  • In small mixing bowl, at high speed, blend or beat yolks, milk, syrup, flour, and vanilla until smooth.
  • Gently, but thoroughly, fold into beaten whites.
  • Place 6 (6 ounces) lightly greased custard cups in large baking pan.
  • Pour egg mixture into cups.
  • Place pan on rack in preheated 350ºF oven.
  • Pour very hot water into pan to within 1/2 inch of top of custards.
  • Bake until puffed and cake tester or wooden pick inserted near center comes out clean, about 30 to 35 minutes.
  • Remove promptly from hot water.
  • Cool at least 5 minutes before serving.
  • Top with a dollop of marshmallow fluff or whipped cream.
  • Makes 6 servings.

1/2 cup sugar
Pinch of kosher salt
2 tablespoons all-purpose flour
1 teaspoon cocoa powder
2 1/2 ounces bittersweet chocolate, broken into small pieces
2 tablespoons unsalted butter
3/4 cup milk
2 large eggs, separated
1 teaspoon pure vanilla extract
1/2 cup coarsely chopped toasted hazelnuts, as garnish

Steps:

  • Heat oven to 325 degrees. Butter a 5-cup pudding bowl, and set aside.
  • Combine 5 tablespoons sugar with salt, flour, and cocoa in a large bowl. Set aside.
  • Combine chocolate and butter in a heat-proof bowl, and melt over simmering water.
  • In a small saucepan, bring milk just to a simmer. Immediately add to chocolate mixture. Beat egg yolks. Stir a little chocolate mixture into yolks; add yolks to mixture. Add vanilla; stir until well combined. Stir into flour mixture.
  • Beat whites with remaining 3 tablespoons sugar until stiff, and fold into batter. Pour into pudding bowl, and place on a rack in a deep roasting pan. Pour boiling water into pan halfway up the sides of the bowl. Bake until pudding is set, 40 to 45 minutes. Add boiling water to pan as necessary to maintain water level.
  • Let cool slightly in the bowl, and invert onto a plate. Garnish with hazelnuts.

This recipe was created after I miscalculated a recipe for brownies. The brownies were horrible but the result was a perfect chocolaty sponge cake. I make it ever since and it's perfect for a layer cake, frosting or on it's own.

1 1/3 cups sugar, divided
Unsalted butter, for pans
8 large eggs
1 teaspoon pure vanilla extract
1/2 cup Dutch process cocoa
1/2 cup cake flour
Milk Chocolate Frosting

Steps:

  • In a saucepan, combine 1/3 cup each sugar and water over medium-high heat and cook, stirring, until sugar dissolves. Remove simple syrup from heat; let cool.
  • Preheat oven to 425 degrees. Butter two 8-by-2-inch round cake pans. Line bottoms with parchment rounds; butter parchment. In the bowl of a standing mixer fitted with the whisk attachment, combine eggs and remaining 1 cup sugar. Whisk on medium speed until quadrupled in volume and mixture holds a 3-second ribbon, about 10 minutes. Whisk in vanilla.
  • In a bowl, combine cocoa and flour. Sift over egg mixture; using a large rubber spatula, carefully fold into egg mixture, cutting through center and lifting gently over sides. Divide batter among prepared pans. Bake until cake pulls away from sides of pan and is springy to touch, 15 to 17 minutes. Remove from oven. Run a small knife around sides of pan. Invert onto rack; remove parchment, and re-invert onto rack to cool completely.
  • Using a serrated knife, trim tops of cakes horizontally to level surface. Halve each cake horizontally to form 2 layers. Transfer 1 layer to a serving platter; generously brush with simple syrup and spread 3/4 cup frosting on top. Set another cake layer on top, and repeat process with remaining simple syrup, frosting, and cake layers. Frost top and sides of cake in a swirling motion. Refrigerate until set, about 1 hour.

1 pinch salt
2 teaspoons baking powder
5 medium eggs
1 1/4 cups sugar

1 ounce dark chocolate (Melted)
1/2 cup milk
4 ounces butter
2 cups heavy whipping cream
4 tablespoons powdered sugar
4 tablespoons chocolate syrup, like Hershey's

2 teaspoons vanilla

Steps:

  • Sift flour, cocoa, salt and baking powder. Set aside.
  • Beat eggs and sugar until thick and creamy. Add oil and vanilla.
  • Beat 5 minutes.
  • Add melted chocolate.
  • Place milk and butter in saucepan and stir until butter has melted and mixture comes to a boil. Remove at once.
  • Add milk mixture alternately to the egg mixture with sifted dry ingredients. (I do not let it cool before alternately adding with the dry ingredients.).
  • Pour into 2- 9 inch round greased and floured (or use cocoa) pans and bake at 350* for 10-15 minutes.(do not overbake, layers are thin).
  • Cool, fill and frost as desired.
  • Filling instructions:.
  • Beat all ingredients until spreading consistency (I beat quite stiff). Decorate with white chocolate shavings.
  • Note: There is enough whipped frosting to generously fill in between the layers.

150g plain flour, plus 1 tbsp
50g cocoa
8 eggs, separated, at room temperature
200g caster sugar
5 eggs whites
200g caster sugar
250g walnuts, chopped, plus a handful to decorate
1 tbsp plain flour
1 tbsp potato starch
100g double cream
100g chocolate, chopped

Steps:

  • Heat the oven to 170C/150C fan/gas 3½. Line a 30 x 22cm shallow baking tin with baking parchment. Sift the flour and mix it with cocoa, then set aside. Beat the egg whites until stiff, then add the sugar to them in small batches. Add the egg yolks, one by one, whisking constantly. Tip in the flour mixture and gently fold everything together with a spatula. Pour the prepared batter into the lined tin and bake for 35 mins. Cool for 5 mins, remove from the tin and re-line the tin with baking parchment.
  • To make the meringue, whisk the whites until stiff, then gradually whisk in the sugar, one tablespoon at a time. When you have a stiff and shiny meringue, fold in the finely chopped walnuts, flour and star t ch. Spread the mixture into the re-lined tin and cook for 40 mins on the same heat. Remove from the oven and leave to cool.
  • For the chocolate glaze, heat the cream over low heat, then remove from the heat, pour the chopped chocolate into it and mix it until it melts and becomes shiny.
  • Cut the cooled chocolate sponge cake and meringue into two layers. Put the nut meringue on top of the bottom layer of sponge and sprinkle on some of the reserved walnuts. Add another layer of meringue and then the upper layer of chocolate sponge cake and cover the top with chocolate glaze. Decorate with walnuts. Put the finished cake in the fridge for 1-2 hrs before serving.
