CHOCOLATE TOPPED OATMEAL BARS RECIPE
An easy mix-and-pour cookie bar recipe that's made extra special with the chocolate & nut butter topping. Cut small, since these are rich and delicious!

- Preheat oven to 350 degrees. Line a 10 x 15-inch baking sheet** with parchment (for easy removal and cutting) or just lightly grease.
- Mix together the oatmeal, sugar, and nuts. Melt the butter or coconut oil and mix in the vanilla before adding to the oatmeal. Use the same measuring cup from the butter to measure the honey and add it to the oatmeal mixture, stirring all together.
- Press mixture firmly into the prepared pan and bake for 15-17 minutes, until browned. Rotate the pan halfway through baking if needed for even browning.
- Meanwhile, melt the chocolate and peanut butter together, on low on the stovetop or about one minute in the microwave and stirring to finish melting.
- Pour the chocolate topping over the warm bars, spreading evenly. Let cool before cutting into bars.

I baked about 100 dozen cookies for the holidays and these were everyone's favorite!! These bars can be frozen, just thaw 10 minutes before serving.

- Grease a 9x9 inch square pan.
- Melt butter in large saucepan over medium heat. Stir in brown sugar and vanilla. Mix in the oats. Cook over low heat 2 to 3 minutes, or until ingredients are well blended. Press half of mixture into the bottom of the prepared pan. Reserve the other half for topping.
- Meanwhile, melt chocolate chips and peanut butter in a small heavy saucepan over low heat, stirring frequently until smooth. Pour the chocolate mixture over the crust in the pan, and spread evenly with a knife or the back of a spoon.
- Crumble the remaining oat mixture over the chocolate layer, pressing in gently. Cover, and refrigerate 2 to 3 hours or overnight. Bring to room temperature before cutting into bars.

- In a mixing bowl, cream 1 cup butter and brown sugar.
- Beat in eggs and 2 teaspoons vanilla.
- Combine the oats, flour, 1 teaspoon salt and baking soda; stir into creamed mixture.
- Press two-thirds of oat mixture into a greased 15 x 10-inch baking pan.
- In a saucepan, combine milk, chocolate chips and remaining butter and salt.
- Cook and stir over low heat until chocolate is melted.
- Remove from the heat; stir in walnuts and remaining vanilla.
- Spread over the crust.
- Sprinkle with remaining oat mixture.
- Bake at 350° for 25 minutes or until golden brown.
- Cool.
- Cut into squares.

- Heat the oven to 350 F (180 C/Gas 4). Lightly butter a 10 x 15 x 1-inch sheet pan
- In a large bowl, cream together 1 cup butter and brown sugar. Beat in eggs and 2 teaspoons vanilla extract.
- In another bowl combine the flour, baking soda, and 1 teaspoon salt; stir in oats. Stir dry ingredients into the creamed mixture until well blended; set aside.
- Pat about three-quarters of the oat mixture into the bottom of the prepared sheet pan. Set aside the remaining oat mixture.
- In a heavy saucepan over low heat combine the sweetened condensed milk, chocolate chips, 2 tablespoons butter, and 1/2 teaspoon salt. Stir until the chocolate chips have melted and the mixture is smooth. Stir in 2 teaspoons vanilla and pecans or walnuts.
- Spread the filling mixture over bottom crust in the baking pan, and then crumble the remaining oat mixture evenly over the top.
- Bake the bars in the preheated oven for 20 to 25 minutes. Cool before cutting into squares.

- Preheat oven to 350 degrees F. Grease a 9 inch square baking pan.
- To prepare Filling: In a heavy pot, melt 2 tablespoons of the butter and chocolate chips. Add the evaporated milk and 1/4 cup of the white sugar. Bring to a rolling boil, stirring constantly. Remove from heat. Stir in nuts and cool.
- To prepare cookie base: Cream 1 1/2 cups of the butter and the brown sugar together. Add the vanilla and the egg, and beat until light and fluffy.
- Add the flour, baking soda, and 1 3/4 cups of the oats and blend well.
- Press 2/3 of this mixture into the bottom of the greased pan. Spread the cooled filling on top of the cookie crust.
- Mix the remaining 1/4 cup of oats with the remainder of the cookie base, and crumble over the filling. Bake for 25-30 minutes.

- Heat oven to 350 degrees. Grease and flour a jelly roll pan (10x15 or so).
- In large mixer bowl cream margarine and brown sugar until light and fluffy. Add eggs, vanilla and instant coffee.
- Combine oats, flour, baking soda and salt. Gradually add to creamed mixture.
- Batter will be stiff, stir in last part by hand, if necessary.
- Reserve approximately 2 cups dough. Press remainder evenly over bottom of jelly roll pan.
- Prepare chocolate filling:.
- Melt margarine in medium saucepan over low heat.
- Stir in cocoa and sugar.
- Add sweetened condensed milk.
- Cook, stirring constantly, until smooth and thick.
- Remove from heat and stir in vanilla.
- Spread filling over oatmeal mixture in pan. Sprinkle reserved oatmeal mixture over chocolate.
- Bake 25 minutes or until top is golden brown. Chocolate will stay soft.

- Preheat oven to 350 degrees with the rack in the middle position.
- Melt the butter in a large microwave safe bowl.
- Add the brown and white sugars and let cool a bit.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
