A great quesadilla recipe that tastes like its been made with slow-cooked barbecued chicken!

4 (5 ounce) skinless, boneless chicken breast halves
½ cup barbeque sauce
⅓ cup chopped fresh parsley
¼ teaspoon garlic, finely minced
8 (9 inch) flour tortillas
2 small plum tomatoes, seeded and chopped
2 cups shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a medium saucepan lightly salted water to a boil; add chicken breasts and reduce heat to medium-low. Cover and gently simmer until chicken is no longer pink in the center, 15 minutes. Drain.
  • Let chicken cool until it can be easily handled. Shred chicken with your hands; return to empty sauce pan. Stir barbeque sauce, parsley, and garlic into chicken.
  • Lay 4 tortillas on a baking sheet. Evening spread chicken mixture among the 4 tortillas, leaving a 1-inch border around the outer edge. Top each tortilla with 1/4 tomatoes and 1/4 Cheddar cheese. Place another tortilla atop each filled tortilla.
  • Bake quesadillas in the preheated oven until cheese is melted, 5 to 7 minutes. Cut into wedges to serve.

Wanted to make something different for a football party over the weekend and my wife and I came up with this quesadilla recipe for all of you smokehouse burger lovers!

1 pound lean ground beef
½ onion, cut into 1-inch pieces
1 cup barbeque sauce
4 flour tortillas
1 cup shredded Cheddar cheese
1 cup French-fried onions

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir beef and onion in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Stir barbeque sauce into ground beef mixture and simmer until heated through, about 5 minutes.
  • Preheat quesadilla maker or preheat oven to 350 degrees F (175 degrees C)
  • Spread 1/2 the ground beef mixture onto a tortilla and top with 1/2 the Cheddar cheese and 1/2 the French-fried onions; top with a second tortilla. Repeat with remaining ingredients.
  • Cook each quesadilla in quesadilla maker or on a baking sheet in preheated oven until golden brown and cheese is melted, 5 to 10 minutes. Cut into triangles with a pizza cutter.

These take awhile to make but are way worth the hard work. Quesadillas are so versatile, you can fill them with almost anything!

4 8-inch flour tortillas
1 c mexican cheese blend
1 can(s) diced green chiles, drained
18 oz refrigerated barbecue sauce
2 c shredded chicken
1 c salsa
1/4 c sour cream
1/4 c sliced green onion

Steps:

  • 1. Take boneless chicken breast, wrap in foil and place in a glass bake pan. Bake for 40 minutes. Shred chicken with two forks and add to barbecue sauce. Spray the tortillas with cooking spray to keep them from sticking to the pan and make them a little crispier. Coat only one side and place (coated side down) on a cutting board or waxed paper. Sprinkle 1/4 cup of cheese over half of each tortilla. Top with green chiles and barbecue sauce with chicken. Fold tortillas in half, pressing gently. Preheat oven to 350. In a hot 10-inch skillet cook quesadillas, two at a time, over medium heat for 6 to 8 minutes or until golden brown, turning once. Place quesadillas on a baking sheet. Keep warm in preheated oven for up to 30 minutes. Repeat with remaining quesadillas. Cut each quesadilla into 3 wedges. Serve with salsa, sour cream, and green onion.

Bacon, Tomato, & Avocado Quesadillas: Prepare as above, except substitute cheese for cheddar; use 8 crisp-cooked and crumbled bacon slices, 2 small seeded and coarsely chopped tomatoes, and 1 seeded, peeled, and chopped avocado for the filling. Flip top side down and cook until both sides of tortilla are brown, and quesadilla filling has warmed through with cheese melted.
