CHOCOLATE MINT TART

Chocolate Mint Tart image

This chocolate mint tart is wonderfully reminiscent of a giant, elegant peppermint patty, tucked into a chocolate pastry shell. The mint flavor is subtle thanks to fresh-mint infused cream that is used both in the white chocolate ganache filling and billowy topping. But don't worry, dark-chocolate lovers: There is plenty here for you, too. The crisp crust is spiked with Dutch-processed cocoa and the middle layer is deep, dark bittersweet chocolate ganache. It's also very rich; a thin slice alongside a cup of coffee is the perfect after-dinner mint. This recipe has multiple chilling steps, so plan ahead if you're going to make it. It's more of an afternoon project, than a simple weeknight endeavor.

Time 1h15m

Yield One 9-inch tart

Number Of Ingredients 19

1 1/4 cups/160 grams all-purpose flour
1/2 cup/62 grams confectioners' sugar
1/4 cup/24 grams Dutch-processed cocoa powder
1/4 teaspoon kosher salt
1/2 cup/113 grams unsalted butter (1 stick), cold and cut into cubes
1 egg yolk
1 3/4 cups heavy cream
1 cup/15 grams fresh mint leaves, packed
10 3/8 ounces/297 grams white chocolate, chopped
2 tablespoons unsalted butter, softened
Pinch of kosher salt
1/2 teaspoon peppermint extract (optional)
1/2 cup heavy cream
3 1/2 ounces/99 grams bittersweet chocolate, chopped
2 tablespoons unsalted butter, softened
Pinch of kosher salt
1 cup reserved mint-infused cream
2 teaspoons confectioners' sugar
1/4 to 1/2 teaspoon peppermint extract, to taste

Steps:

  • Make the crust: In the bowl of a food processor, combine the flour, confectioners' sugar, cocoa powder and salt. Pulse to combine. Add the butter and pulse until the mixture resembles coarse meal.
  • In a small bowl, whisk the egg yolk with 1 tablespoon cold water. Add the yolk mixture to the food processor and pulse until it is evenly distributed. The mixture will appear crumbly, but should hold together very easily when pressed. Add a bit more water, 1 teaspoon at a time, if necessary. Turn the mixture out onto a piece of plastic wrap and form it into a disc. Wrap the disc in plastic and refrigerate for at least 1 hour.
  • On a lightly floured surface, roll the chilled dough into a circle 1/4- to 1/8-inch thick. Gently fit the dough into a 9-inch tart pan with a removable bottom and trim the top evenly. Repair any cracks or tears in the dough with the trimmings and reserve the trimmings, wrapped in plastic and kept at room temperature, to use later if necessary. Freeze for 30 minutes.
  • While the shell is chilling, heat oven to 375 degrees. Just before baking, dock the shell all over with a fork, and line the bottom and sides with aluminum foil. Bake the shell until it is cooked through and crisp, about 25 minutes. Remove the foil and, using the leftover dough, repair any cracks that may have formed. Cool the shell on a rack while you prepare the rest of the tart.
  • Make the white chocolate ganache: Heat the 1 3/4 cups heavy cream and mint leaves in a saucepan over medium-high until simmering. Turn off heat and let cream steep for at least 30 minutes and up to 1 hour.
  • Strain the cream through a fine mesh sieve, pressing on the leaves to extract as much cream as possible. Reserve 1 cup of the cream, covered, in the refrigerator.
  • Heat the remaining 3/4 cup of cream until simmering and pour it over the white chocolate in a large bowl or the bowl of a stand mixer. Whisk the mixture until smooth, then let it cool to room temperature, about 30 minutes. If the chocolate is resisting melting, set the bowl over a pan of simmering water and whisk until smooth.
  • Add the butter and a pinch of salt and whip the ganache on high speed for 10 minutes. It will go from slightly translucent to opaque and aerated. Taste and add the peppermint extract if desired. Pour the whipped ganache into the cooled tart shell, smooth the top and refrigerate until firm, about 1 hour.
  • Make the bittersweet ganache: Bring the cream to a simmer in a small saucepan. Add the chocolate, butter and salt to a heat-safe bowl and whisk in the hot cream until smooth. If the chocolate is resisting melting, set the bowl over a pan of simmering water and whisk until smooth.
  • Use a spatula to spread the bittersweet ganache over the cooled white chocolate ganache. Refrigerate until firm, about 1 hour.
  • Just before serving, make the mint cream topping: Whip the reserved 1 cup of infused cream with the confectioners' sugar to soft peaks. Add peppermint extract, if desired. Spread the whipped cream over the top of the ganache and serve the tart cold. Wipe off your knife in between slices for the cleanest cuts.

CHOCOLATE-MINT TORTE

Chocolate-Mint Torte image

This mousselike dessert is so airy it's liable to float right off your plate. Combine that texture with the cool flavor of peppermint-laced chocolate, and you have a treat that just might send you to cloud nine.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes     Cake Recipes

Number Of Ingredients 11

Vegetable-oil cooking spray
8 ounces semisweet chocolate, chopped
1 stick unsalted butter, cut into small pieces (8 tablespoons)
1/4 cup heavy cream
3 large eggs
2 tablespoons sugar
1/2 teaspoon pure peppermint extract
1 teaspoon unsweetened Dutch-process cocoa powder, for dusting
18 fresh mint leaves (preferably peppermint), for garnish
Chocolate Mint Leaves
Freshly whipped cream, for serving (optional)

Steps:

  • Set a roasting pan on lowest rack of oven. Fill pan halfway with water. Preheat oven to 350 degrees. Coat a 9-by-4 1/2-inch loaf pan with cooking spray. Cut parchment paper large enough to cover bottom and to hang over long sides of loaf pan. Place in loaf pan; coat with cooking spray.
  • Put chocolate and butter in a medium heatproof bowl set over a pan of simmering water. Heat, stirring, until melted. Remove from heat; let cool slightly.
  • Put heavy cream in the bowl of an electric mixer fitted with the whisk attachment. Beat on medium-high speed until soft peaks form, 1 to 2 minutes. Transfer to a small bowl; set aside.
  • Put eggs and sugar in the clean bowl of an electric mixer fitted with the whisk attachment and whisk on medium-high speed until tripled in volume, 3 to 4 minutes. Gently fold half of the chocolate mixture into egg mixture until almost incorporated; fold in remaining chocolate mixture. Fold in reserved whipped cream and the peppermint extract.
  • Reduce oven temperature to 325 degrees. Pour batter into prepared loaf pan. Set loaf pan in roasting pan. Bake until chocolate loses its sheen and appears set when loaf pan is jiggled, about 25 minutes.
  • Carefully transfer roasting pan to a heatproof surface. Remove loaf pan from water bath; let cool completely on a rack.
  • Pulling up on parchment, remove torte from pan; transfer to a baking sheet. Refrigerate 30 minutes.
  • Using an offset spatula, gently loosen torte from parchment and then invert onto a serving platter.
  • Using a sieve, lightly dust torte with cocoa. Garnish with fresh and chocolate mint leaves, and whipped cream if desired.

CHOCOLATE TEA

Chocolate Tea image

I wrote this because there are an astounding lack of chocolate tea recipes on the internet. The first time I heard about Chocolate Tea was doing a web search on Chocolate. There seem to be a few companies out there who sell chocolate tea. I like to stay up late and had run out of coffee. I was in real need for a good tasting caffene beverage. I first thought chocolate tea would be yucky. We are conditioned to accept chocolate with coffee as a rule but not tea. I was very mistaken! Tea and Chocolate goes very well with each other and it is also very good for your body. Both Tea and Chocolate are loaded with antioxidents. You may however not want to give this to small children because of the caffene. Not having a recipe to follow, I created one. (This One) I used these ingredients because I had them on hand and it was quicker than hunting around for my pepermint extract or messing with my powered Cocoa. This being said, If you do want to use powered cocoa or pepermint extract instead of the Ovaltine and Lifesavers please do so. Experiment. This recipe is "OpenSource" :-) You will have to adjust the sugar levels to taste. If you like you can even omit the mints. I used them and I find it gives the beverage that spceial something. This recipe makes one large coffee cup of beverage. If you use regular size coffee cups you may get two servings out of this if serving each person one serving each. To serve 1 serving each to 2 or 3 people using large coffee cups, double or tripple the recipie accodingly Enjoy ! Please let me klnow if you like it! :-)

Provided by John Phoenix

Categories     Beverages

Time 6m

Yield 1 serving(s)

Number Of Ingredients 6

1/2 cup water
1/2 cup milk
2 -3 Lifesavers candies, wint o green mints
2 personal size tea bags
2 teaspoons sugar
4 teaspoons ovaltine, chocolate malt

Steps:

  • Place water and mints into pot or sauce pan and bring to boil on medium high heat.
  • Reduce heat by 1/4 and add milk. Stir slowly every now and then (You reduce the heat so the milk will not burn).
  • When milk/water is almost to boil again, turn off heat.
  • This should ensure the added milk is hot enough and the mints are all melted.
  • Pour into coffee cup/s and add tea bags. Let tea bags steep for as long as desired.
  • Remove tea bags and add sugar.
  • Add 4 teaspoons of Ovaltine; stir.
  • Enjoy ! Cation: Chocolate Tea will be HOT.
