CHORIZO AND RICE SOUP



Chorizo and Rice Soup image

2 tbsp olive oil
1 onion, chopped
1 leek, trimmed and sliced
2 garlic cloves, sliced
1 cup rice
150g chorizo, sliced
2 cup white wine
1,5l chicken stock
1 x 400g tin tomatoes, chopped
sea salt and freshly ground pepper
250ml fresh chervil leaves
2 x 125g bocconcini (buffalo mozzarella balls), torn

Steps:

  • Heat the oil in a large pan over medium heat. Add the onion, leek, garlic and chorizo and cook until browned, about 6-8 minutes.
  • Add the rice and cook, stirring, for 2 minutes. Reduce the heat to low, add the wine and 1 cup of the stock and cook, stirring, for about 1-2 minutes.
  • Add the remaining stock and the tomatoes, increase the heat to high and simmer for 20 minutes.
  • Stir through salt and pepper and top with chervil and mozzarella to serve.

½ cup shredded Parmesan cheese

Steps:

  • In a Dutch oven over medium heat, brown sausage (10 to 12 minutes).
  • Add onion and garlic. Continue cooking, stirring occasionally, until onion is softened (4 to 5 minutes).
  • Add remaining ingredients except Parmesan cheese.
  • Reduce heat to low; continue cooking 12 to 15 minutes.
  • Scoop into individual bowls and sprinkle with 1 tablespoon Parmesan cheese. Refrigerate leftovers.

4 fresh garlic cloves, minced
7 ounces chorizo sausage, cut into 1/4-inch slices
1 (8 ounce) can tomato sauce
1 small onion, minced
1 teaspoon Sazon Goya seasoning
2 (15 1/2 ounce) cans chickpeas, drained and rinsed
2 1/2 cups water
1 teaspoon chicken bouillon powder
1 teaspoon adobo seasoning
2 cups rice, cooked

Steps:

  • In a 4-quart saucepan, heat oil over medium heat. Add garlic, onions, Chorizo, Tomato Sauce and Sazón and cook for 5 minutes, stirring often.
  • Add Chick Peas, water and Bouillon and bring to boil. Lower heat and simmer, uncovered, for 25 minutes or until it reaches desired consistency. Season with Adobo.
  • Serve with hot, freshly cooked rice.

This simple Spanish-style Chickpea and Chorizo soup is a favorite at our house, making an appearance at least once a month (if not more!) during the chilly months. The recipe starts off simply--sliced Spanish-style chorizo sauteed with onions and garlic until fragrant. Then you add some rinsed canned chickpeas, tomatoes, a few spices, and chicken broth, and let the whole thing simmer for about half an hour or so. And that's really it! Serve it up right away or divide into batches for lunch tomorrow. This thing can be heated and reheated half a dozen times, and it always tastes fantastic. A chunk of crusty bread is optional, but definitely recommended.

1/2 pound Spanish-style cured chorizo, sliced
1 large onion, diced
3 large garlic cloves, crushed

1 cup white rice, cooked
1 medium white onion
1 garlic clove, finely chopped
2 chorizo sausage, chopped
olive oil
cumin
paprika
salt & pepper
4 slices bacon
chicken stock (optional)

Steps:

  • Boil lentils in 4 cups of water (or chicken stock), add bacon, salt & pepper to taste.
  • and cook until tender. About 20 minutes depending on the age of lentils.
  • Once the lentils are tender toss the bacon and put lentils aside. Do not drain.
  • In a separate pot heat the olive oil and brown the onions until they are clear.
  • Add chopped chorizo and cook for about 5 minutes.
  • Add cumin & paprika and mix in well.
  • Add cooked rice and mix in well.
  • Mix in the lentils & rice mix and cook for another 10 minutes stirring often.
  • Serve in bowl with the garnish of choice.
