80 saltine crackers, finely crushed (2 pkgs)
1 tablespoon paprika
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon salt
1 teaspoon sugar
1/2 teaspoon pepper
1/2 cup vegetable oil
2 -3 lbs chicken pieces

Steps:

  • Preheat oven to 425°F.
  • Mix all ingredients except for chicken in a large bowl. Place some of the mixture in a plastic bag. Add chicken pieces one at a time and shake.
  • On a large foil-lined baking sheet place pieces of chicken.
  • Bake for 30 minutes. Turn and bake 15 more minutes or until done.
  • Store remaining mixture in fridge for next time.
  • Coating can also be used on fish or pork.

ADDITIONAL INGREDIENTS:
2 eggs
1/2 cup milk
1 broiler/fryer chicken (3 to 3-1/2 pounds), cut up

Steps:

  • In a large bowl, combine the first eight ingredients. Store in an airtight container in a cool, dry place for up to 1 year. Yield: 3 batches (2-1/2 cups total)., To prepare chicken: Place about 3/4 cup of coating in a large resealable plastic bag. In a shallow bowl, beat eggs and milk. Dip chicken pieces into egg mixture, then place in the bag; seal and shake until coated. , In a large skillet, heat 1/2 in. of oil over medium-high heat. Brown chicken on all sides; remove to a greased 13x9-in. baking pan. Bake, uncovered, at 350° for 50-60 minutes or until juices run clear.
