MEATLOAF WITH CHILI SAUCE
Covering the cooked meatloaf with chili sauce then returning it to the oven for a few minutes gives a slightly sweet, mildly spicy glaze on top.

- Preheat oven to 350 degrees, with rack in center. In a large bowl, pour milk over bread; let soak, about 30 seconds. Add sirloin, pork, onion, garlic, 1/2 cup chili sauce, parsley, Parmesan, eggs, 1 1/2 teaspoons salt, and 1/2 teaspoon pepper. Using your hands, mix until combined; do not overmix or meatloaf will be dense.
- Divide mixture in half. Gently pat each half into a log, and place each log in an 8 1/2-by-4 1/2-inch loaf pan. Do not press down or into corners.
- Bake 50 minutes. Brush tops of loaves with remaining 1/4 cup chili sauce; continue cooking until juices run clear and an instant-read thermometer inserted into thickest part registers 160 degrees, about 10 minutes.
- Remove from oven; let rest 5 minutes. Turn loaves out of pans; slice each into eight 3/4-inch-thick slices.

LEFTOVER MEATLOAF CHILI
Got leftover meatloaf and you're tired of sandwiches (like if anyone could be;) and you want something different? Try this very good recipe. Be careful though, the way that this is written it's very spicy. (Well at least to me anyway :)). I let this simmer for about 30 minutes for a better flavor. - Heat and stir until seasonings are well blended.

- Preheat oven to 375°. Place a rack in a 15x10x1-in. baking pan; place a 12x8-in. piece of foil in center of rack. In a large bowl, combine eggs, ketchup, onion, green pepper, crushed saltines, salt and pepper. Add beef; mix lightly but thoroughly. Place over foil rectangle and shape into a 9x6-in. loaf. Bake until a thermometer reads 160°, 50-60 minutes. Let stand 10 minutes before slicing., Transfer meat loaf to a serving plate, discarding foil. Pipe or spread 1 cup mashed potatoes over meat loaf. Sprinkle with parsley. Serve with remaining mashed potatoes.

Steps:
- In a large bowl, beat egg with a fork.
- Add bread crumbs, salt and pepper.
- Gently mix in ground beef.
- Set aside.
- In a large frying pan, heat oil on medium-high heat.
- Add onion; cook for 5 minutes or until softened.
- Add sweet pepper and chili powder.
- Cook for another 4 minutes.
- Let cool slightly and then add to beef mixture.
- Add kidney beans and salsa.
- Pack into an 8 by 4 inch loaf pan.
- Bake in preheated 350F (180C) degree oven for 60-75 minutes.
- Drain off fat.
- Sprinkle cheddar cheese on top of meatloaf and return to oven for 5-7 minutes or until cheese is bubbly.
NEW MEXICO GREEN CHILE MEATLOAF
Growing up in New Mexico, we had access to the Hatch green chile (the best!). I add green chile to a lot of my recipes and it rather sets this meatloaf off. It's very good cold, made into sandwiches the second day.

- Preheat the oven to 350 degrees F (175 degrees C).
- Mix ground beef, stuffing mix, milk, green chiles, onion, egg, jalapeno ketchup, Worcestershire sauce, parsley, salt, garlic powder, and pepper together for meatloaf in a bowl until thoroughly combined. Form into a loaf shape and place in a baking dish.
