Steps:

• In a medium saucepan, melt the butter and brown sugar together and boil until it turns a caramel color, about 2-3 minutes.
• Remove from the heat and add one teaspoon pure vanilla extract.
• Pour over the crackers, covering them evenly.
• Put the pan into the oven and bake for about 5 minutes, or until just bubbly, watching carefully.

• Arrange crackers on a cookie sheet in a single layer, and drizzle with sugar mixture. Bake at 425 degrees F (220 degrees C) for 5 minutes, or until edges begin to brown.
• Remove from oven and spread chocolate chips evenly over the top as they melt. Sprinkle with nuts, gently pressing into the melted chocolate. Cool until chocolate has hardened, and break into pieces. Store in refrigerator until ready to serve. Allow to cool, and break into pieces. Refrigerate until ready to serve.

Sprinkle with candy sprinkles. Cool completely, about 2 hours or until chocolate is set. Break into pieces. Store covered in refrigerator up to 1 week.

Steps:

• Combine hard cooked eggs (chopped fine), mayonnaise, chili powder, and salt & pepper.
• Spoon on the crackers and top with a dab of the taco sauce.
