CHRISTMAS MORNING CROISSANTS
Growing up in France, we often enjoyed buttery croissants for breakfast with steaming cups of hot chocolate. I've tried to re-create the experience for my family with this recipe, and now, it's a Christmas tradition. -Tish Stevenson, Grand Rapids, Michigan

Steps:
- In a large bowl, dissolve yeast in warm water; let stand for 5 minutes. Melt 1/4 cup butter; set aside. Combine 1 cup flour, sugar and salt; add to yeast mixture. Add the milk, 1 egg and melted butter; beat until smooth. , Place remaining flour in a large bowl; cut in remaining butter until crumbly. Add yeast mixture; mix well. Do not knead. Cover and refrigerate overnight. , Punch dough down. Turn onto a lightly floured surface; knead about six times. Divide dough into four pieces. Roll each piece into a 16-in. circle; cut each circle into eight wedges. , Roll up wedges from the wide ends and place point side down 3 in. apart on ungreased baking sheets. Curve ends to form crescents. Cover and let rise in a warm place for 1 hour. , Beat water and remaining egg; brush over rolls. Bake at 325° for 20-25 minutes or until lightly browned. Serve warm.

TOO EASY CROISSANTS
These a are very good & easy Croissant rolls . The recipe was given to me by my daughter Peggy. Prep time does not include chill time because it may differ.

Steps:
- Proof the yeast in the warm water and set aside.
- Beat egg yolks,stir in warm milk,sugar,salt, yeast mixture,and 2/3cup of the flour.
- Beat until smooth and set aside.
- Cut butter into remaining flour until partcles are the size of LARGE PEAS.
- Pour in yeast mixture.
- Mix lightly with a spatula just until flour is moistened.
- Cover and chill at least 2 hours or up to 3 days.
- IT MUST BE COLD WHEN ROLLING OUT. If it gets too warm and the butter starts to melt, fold into thirds and refrigerate for 30 minutes.
- Turn out onto a floured board and knead lightly.
- Divide into thirds.
- Roll each into 16 inch diameter circle and cut into 12 pie shaped wedges.
- Roll wedges starting at the wide end.
- Place point side down on a greased baking sheet.
- Cover with towel and let rise at room temperature until doubled.
- Brush each with beaten egg white.
- Bake in a 375 degree oven for about 20 minutes.
- Serve warm or re-heat in low oven-- do not microwave.
- Makes 36 small, but you can make as big as you want.

CHRISTMAS MORNING WIFE SAVER (BREAKFAST CASSEROLE)
I certainly cannot take credit for this recipe but it is a Christmas classic. There are lots of little things to personalize this recipe. I have suggested using red and green bell peppers because they are Christmas colors! I also use grated cheese and spread it over the Canadian bacon instead of cheese slices. I have used regular bacon in this recipe, but I find that it overpowers the rest of the flavors. Make this tasty breakfast dish the night before and just pop it in the oven on Christmas morning; let it cook while you open gifts and sip your rum-spiked coffee!

- Butter a 9x13-inch baking dish. Cut and fit 8 slices of bread to fit over entire bottom of dish. Cover bread with slices of Canadian bacon and sharp Cheddar cheese. Cut and fit remaining 8 slices of bread to completely cover bacon and cheese.
- Whisk eggs with salt and black pepper in a bowl. Whisk dry mustard, onion, diced green and red bell pepper, Worcestershire sauce, and hot sauce into eggs. Whisk in milk until egg mixture is smoothly combined. Pour egg mixture evenly over the casserole. Cover the dish and refrigerate overnight.
- Preheat oven to 350 degrees F (175 degrees C).
- Pour melted butter evenly over the casserole and sprinkle corn flake crumbs over the top.
- Bake in the preheated oven until set and lightly browned, about 1 hour. Let casserole stand for 10 minutes before serving.

- Heat a skillet over medium heat. Crumble sausage into skillet; cook and stir until browned and crumbly, 5 to 7 minutes; drain and discard grease. Cool sausage.
- Grease a 9x13-inch baking dish. Line the baking dish with crescent roll dough.
