MOM'S CHUCKWAGON BEANS
One of my Mom's most requested recipes. Great for large family gatherings, pot-lucks and cookouts! This is very hearty; not mushy at all. I've actually made this for a main dish since it's so filing. Enjoy!

Steps:
- Cook bacon.
- Brown ground beef with the diced onion.
- Place first 3 items in a large oven roaster (I use an Enamelware roaster).
- To this, add the 3 cans of beans; do not drain beans.
- Mix all other ingredients together in a medium bowl.
- Pour over meat and beans and stir well.
- Bake at 350 for 1 hour covered.
- Remove lid or foil and bake for 20 more minutes.

BEEFY CHUCKWAGON SOUP
Just right for lunch or dinner with your favourite cornbread. I put Tabasco Sauce on the table for those that like to kick up the heat a bit. Enjoy!

- Cook bacon in a large stockpot over medium-low heat.
- Cook until crisp; remove bacon with a slotted spoon to paper towels to drain.
- To the drippings, add beef, chopped onion, celery, and garlic.
- Cook, stirring, until beef is browned.
- Add the carrots, beef broth, tomatoes, chile peppers, Worcestershire sauce, salt, and chipotle pepper.
- Bring to a boil; reduce heat to low, cover, and simmer for 30 minutes, or until vegetables are tender.
- Add the drained beans.
- Taste and add pepper and more salt, if necessary. Simmer for about 15 minutes longer.

CHUCKWAGON CASSEROLE
A hardy casserole of ground beef, seasoned with onion and bell pepper, some beans and corn, a little mixture of chili seasonings and topped off with rustic, cornmeal dusted biscuits.

Steps:
- Preheat oven to 375 degrees F.
- Heat olive oil in a large skillet and sauté the onion and bell pepper until soft but not browned, about 5 minutes. Add the garlic and cook another minute.
- Add the ground beef and cook until browned; drain excess fat if needed. To the beef, add the beans, corn, tomato soup, milk, cheese, chili powder, Worcestershire sauce and Cajun seasoning. Stir over medium heat until well blended. Taste; add salt and pepper, as needed.
- Transfer to a 9 x 13 inch casserole dish. Bake uncovered at 375 degrees F for 15 to 20 minutes, or until hot.
- Meanwhile, melt the butter and set aside to cool. Remove the casserole from the oven, dip the biscuits in the butter and scatter on the top of the casserole dish. Sprinkle the tops of all of the biscuits with cornmeal. Return to the oven and bake uncovered, at 375 degrees F, for an additional 20 to 25 minutes OR until biscuits are cooked through and golden brown. Check bottoms of center biscuits and return to oven if not cooked through.
- Serve immediately with a green vegetable or a side salad.
CHUCKWAGON GROUND BEEF SOUP WITH BEANS
Steps:
- In a Dutch oven or stockpot over medium heat, cook the bacon until crisp. Remove the bacon to paper towels to drain.
- Add the ground beef, onions, and celery to the bacon drippings; cook, stirring, until the beef is no longer pink. Add the garlic and cook for 1 minute longer. Add the carrots, beef broth, tomatoes, peppers, Worcestershire sauce, salt, chili powder, and chipotle or cayenne pepper.
- Bring to a boil; reduce heat to low, cover, and simmer for 30 minutes, or until vegetables are tender.
- Drain the canned beans and ad them to the stew. Taste and add pepper and more salt, if necessary.
- Simmer the soup for about 15 minutes longer.

CHUCK WAGON BEANS
Another of my husband's favorites. I got this recipe out of a cookbook called "Dining with Pioneers". It's apparently a collection of recipes by a group from Tennessee. This one was submitted by someone named Mae Hallum from Memphis.

- In a Dutch oven or other large, heavy, oven proof pot fry bacon until crisp and set aside.
- Drain fat.
- In the same pan, cook ground beef, onion and celery until meat in brown and the onion and celery are tender.
- Meanwhile, dissolve bouillon cubes in boiling water.
- Add bouillon to meat mixture with the remaining ingredients and mix well.
- Cover and bake 1 hour and 15 minutes in a 375 degree oven until hot and bubbly.
- Crumble bacon over beans and serve.
- This makes a LOT of beans. I usually halve the recipe.
CHUCK WAGON BEANS
This is a recipe that my Mom fixed for all of us at home. This is from her old Betty Crocker cookbook circa 1971.

This dish has been a favorite since my girls where little. It is a combination of a really good chili and vegetables and pasta to make a soup--a real warm up kinda soup.

- In a large pot add 1 tbsp oil over medium high heat add onions, celery and mushrooms and cook till onions are slightly tender add ground beef and cook till browned. Make sure you keep the beef from sticking or clumping. Drain any fats.
- Add remaining ingredients up to but not including the pasta. Cook over medium heat for 1 hr or until veggies are somewhat tender.
- Add your cooked pasta and serve with a dollop of sour cream and some grated cheddar cheese.

- In skillet, cook onion, bacon, garlic, and hamburger until bacon is crisp, onion is tender, and meat is browned. Drain.
- In a bowl, combine onion mixture, lima beans, baked beans, red kidney beans, butter beans, garbanzo beans, catsup, molasses, brown sugar, mustard, and Worchestershire sauce.
