1/4 cup butter, cubed
1/4 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon ground mustard
1/8 teaspoon pepper
1 cup milk
1 teaspoon dried minced onion
2-1/2 cups cubed fully cooked ham
1 cup frozen peas, thawed
2 hard-boiled large eggs, chopped
Pastry for single-crust pie (8 inches)

Steps:

  • Melt butter in a saucepan; stir in flour, salt, mustard and pepper until smooth. Gradually add milk and onion; bring to a boil. Cook and stir for 2 minutes or until thickened. Stir in ham, peas and eggs. Pour into an ungreased 8-in. square or 11x7-in. baking dish. On a floured surface, roll pastry to fit top of dish; place over filling. Seal and flute edges; cut slits in the top. Bake at 425° for 25 minutes or until crust is golden brown and filling is bubbly.

2 tablespoons butter
1 cup onion, chopped
1 (10 ounce) package frozen chopped broccoli
1 lb new potato, coarsely chopped
1 (10 3/4 ounce) can cream of potato soup, undiluted
1 (8 ounce) carton sour cream
1 cup sharp cheddar cheese, shredded
3/4 cup milk
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon pepper
2 1/2 cups ham, cubed
0.5 (15 ounce) package refrigerated pie crusts

Steps:

  • Melt butter in a large skillet over medium heat; add onion. Cook 10 minutes or until onion is tender and begins to brown, stirring often.
  • Cook broccoli according to package directions; drain well.
  • Cook chopped potato in boiling water to cover 10 minutes or until barely tender; drain.
  • Combine soup and next 6 ingredients in a large bowl, stirring well. Stir in onion, broccoli, potato, and ham.
  • Spoon ham mixture into a greased 3 1/2 quart casserole.
  • Unfold piecrust onto a lightly floured surface and press out fold lines. Roll pastr to extend 3/4 inch beyond edges of casserole. Place pastry over ham mixture. Seal edges, and crimp. Cut slits in top to allow steam to escape.
  • Bake, uncovered, at 400° for 45 minutes or until crust is golden.
  • Let stand 10 minutes before serving.

Easy (short-cut) vegetable and ham pot pie (perfect to make with Easter or Christmas leftovers!)

2 yukon gold potatoes, (cut into small chunks (I leave the peel on!))
1 cup fresh carrots, (sliced)
1 cup frozen green peas
2 cups chicken stock
1 tablespoon olive oil
1/4 cup yellow onion, (finely chopped)
2 cloves garlic, (minced)
1/2 cup fresh celery, (thinly sliced)
1/3 cup unsalted butter
1/3 cup white flour
1/4 teaspoon celery seed
1 teaspoon Italian seasoning
1/4 teaspoon dried thyme
1 tablespoon fresh flat leaf Italian parsley, (minced)
2/3 cup whole milk
1 and 3/4 cup chicken stock
1 cup frozen corn
1 and 1/2 cups pre-baked honey ham, (cubed)
1 large egg, (separated)
2 (9 inches each) unbaked Simple Truth pie crusts
Fine sea salt and freshly cracked pepper
Optional: fresh thyme, additional fresh parsley

Steps:

  • Preheat oven to 375 degrees F. In a large saucepan, combine the cut potatoes, carrots, and peas. Cover with 2 cups chicken stock and then boil for 10-15 minutes or until potatoes are fork tender. Remove from heat, drain and set aside.
  • In a large saucepan over medium heat, add the olive oil. Once shimmering, add in the onion and cook for 2-3 minutes and then add in the garlic. Cook for 30 seconds and then add in the celery. Stir until soft and translucent. Transfer this mixture right on top of the other veggies. Return the saucepan and add in the butter. Once melted, whisk into the flour and whisk for 3-4 minutes until the mixture is a light brown (adds tons of flavor). Season with salt and pepper to taste, celery seed, Italian seasoning, thyme, and Italian parsley. Slowly stir in chicken broth and milk. Simmer over medium-low heat until thick (if you like a thinner sauce, add more chicken broth and milk a little at a time until you reach your desired consistency). Add the corn and cubed ham to the other veggies and then combine the veggies with the sauce. Stir until combined. Taste and adjust seasonings (add more salt/pepper/spices as needed to preference).
  • Place one of the pie crusts in a 9" pie pan (use a deep-dish pie pan if you have one) and lightly brush with egg whites. Bake in the oven for about 5 minutes, remove, and pour in the sauce/veggie mix. Cover with the other crust and seal the edges. Cut some slits in the top, brush with egg whites and bake for about 35-40 minutes or until the crust is golden brown.
  • Serve if desired with fresh thyme/and or parsley.

DOUBLE-CRUST HAM POT PIE

1 (14 1/8 ounce) package ready-made pie crusts (follow package directions for easy handling)
1/2 lb diced ham
4 slices cooked and crumbled bacon (thick sliced)
2 tablespoons bacon grease
4 -5 small potatoes, peeled and diced small
0.5 (14 ounce) package bird's eye baby broccoli florets
1/2 cup sour cream
1 (10 1/2 ounce) can cream of chicken soup
1/4 lb Velveeta cheese (cubed)
1/2 cup evaporated milk
1/4 teaspoon cayenne pepper
1/4 teaspoon ground mustard
1 teaspoon onion powder
1 teaspoon dried basil
1 1/2 teaspoons ground black pepper
2 tablespoons melted butter
seasoned parmesan cheese (I used basil & oregano)

Steps:

  • Preheat oven to *425.
  • Bring potatoes to a boil and cook for approximately 7 minutes. Add broccoli and continue cooking until potatoes are tender. Drain and leave in colander.
  • Cook ham in reserved bacon grease until most of juice has evaporated and ham is slightly browned. Drain in colander over potatoes and broccoli.
  • In a large mixing bowl, combine sour cream, chicken soup, cayenne, ground mustard, onion powder, basil, and black pepper. Set aside.
  • In a saucepan, combine the Velveeta and evaporated milk, cook over medium heat, stirring frequently until cheese is melted.
  • Pour cheese mixture over sour cream/soup mixture.
  • Add ham mixture and stir everything together until combined.
  • Press one of the pie crusts into a deep dish pie pan or square baking dish.
  • Add filling mixture.
  • Top with remaining pie crust (in whatever fashion you like, just make sure it's crimped at edges and well vented).
  • Bake for 45-50 minutes, until crust is a nice golden brown. (I used the foil method to keep the edges of the top crust from over-browning).
  • Once pie is done, brush with melted butter and sprinkle with parmesan cheese.

Steps:

  • In medium bowl, stir remaining ingredients until blended. Pour over ham mixture.
  • Bake uncovered 35 to 40 minutes or until knife inserted in center comes out clean. Let stand 5 minutes before serving.

1/4 teaspoon red pepper sauce
1 cup shredded reduced-fat sharp Cheddar cheese (4 oz)
3/4 cup diced extra-lean reduced-sodium deli ham
1/2 cup chopped green onions
Quartered cherry tomatoes, if desired
Sliced green onions, if desired

Steps:

  • Heat oven to 350°F. Spray 9-inch glass pie plate with cooking spray.
  • In food processor or blender, place egg product, water, Bisquick mix, dry milk, yogurt, Parmesan cheese, mustard and pepper sauce. Cover; process 1 minute or until smooth. In medium bowl, stir egg product mixture, Cheddar cheese, ham and chopped onions until well blended. Pour into pie plate.
