Time 1h10m

Number Of Ingredients 12

1 tablespoon olive oil
1 chopped medium onion
4 carrots, thinly sliced
3 celery stalks, thinly sliced
1 tablespoon dried thyme leaves
Coarse salt and ground pepper
1 can (14.5 ounces) reduced-sodium chicken broth
1 bag (16 ounces) green split peas, picked over and rinsed
Ham bone plus 2 cups reserved ham from the recipe Glazed Ham with Apricot-Mustard Sauce, cut into 1/2-inch cubes
2 tablespoons butter
4 slices whole-wheat sandwich bread, crusts removed, cut into 1/4-inch cubes
1 to 2 tablespoons fresh lemon juice

Steps:

  • In a Dutch oven or 5-quart heavy pot with a lid, heat oil over medium. Add onion, carrots, celery, and thyme; season with salt and pepper. Cook until vegetables begin to soften, 5 to 8 minutes.
  • Add broth, split peas, ham bone, and 5 cups water. Bring to a boil, reduce heat to medium-low, and partially cover; simmer until peas are soft, 30 to 45 minutes.
  • Meanwhile, make croutons: In a large skillet, melt butter over medium heat. Add bread and cook, tossing occasionally, until browned and crisp, 6 to 8 minutes. Transfer to a paper-towel-lined plate.
  • Remove and discard bone from soup. Working in batches, puree only 1/2 the soup in a blender (don't overfill); return to pot. Add ham cubes, and simmer until heated through. If necessary, thin with water. Add salt, pepper, and lemon juice to taste. Serve topped with croutons.

CHUNKY SPLIT PEA SOUP WITH HAM RECIPE - (4.5/5)

Chunky Split Pea Soup with Ham Recipe - (4.5/5) image

Provided by Foodiewife

Number Of Ingredients 13

2 to 3 smoked ham hock or 1 large smoked ham shank (see instructions below for ham stock)
2 tablespoons olive oil
1 large onion, finely diced
2 celery stalks, diced
3 carrots, diced
3 cloves garlic, minced
1 pound bag (or about 2 heaping cups) split peas, rinsed and picked through
2 bay leaves
3 sprigs fresh thyme
3 quarts mixed ham and chicken stock (or stock of choice)
2 Yukon gold potatoes, diced
2 teaspoons Old Bay Seasoning (or smoked or hot paprika or combination)
Salt and freshly ground black pepper, to taste

Steps:

  • Ham Stock: Prepare the day before: Place the ham hocks or shank in a large kettle add 3 quarts of water. Bring to a boil, reduce heat and simmer covered for about an hour or until shank is tender. Strain broth into a container, setting aside meat to cool, and place container in the fridge overnight. When meat has cooled pull from the bones, dice and refrigerate. After stock has set overnight, remove the hard layer of fat and use stock in soup. Note: I used my pressure cooker for this at 30 minutes to make this on the same day of the soup. A quick freeze, then chill helped me to skim the fat pretty easily. Prep: Chop the onion, celery and carrots or use your food processor to make this quick. Bundle the fresh thyme with the bay leaves and tie with a kitchen twine for easy removal. Rinse the dried peas and pick through them before using. Dice the Yukon Gold potatoes into very small bite-size pieces. Chop the ham into small pieces. The pressure cooker made the ham so tender, that it broke apart very easily. In a large saucepan or Dutch oven, saute onion, celery and carrots in olive oil over medium-high heat for about 5 minutes, until they begin to soften. Add garlic and continue to sautee' another 2 to 3 minutes. Add dried peas, bay leaves, thyme and stock. Bring to a simmer and cook about 30 minutes, then add potatoes and cook another 30 minutes or until soup is thick, potatoes are soft and peas have almost but not quite disintegrated. Add ham meat and Old Bay Seasoning (or paprika) and cook another 10 minutes. Remove bay leaves and thyme stems and season, to taste, with salt and pepper. Purée very lightly with immersion blender or puree a couple of cups of the soup in the blender, so that soup remains very chunky.

SPLIT PEA WITH HAM SOUP

Split Pea with Ham Soup image

Categories     appetizer

Time 1h15m

Yield 6 servings

Number Of Ingredients 15

1 pound green split peas, picked over, rinsed and drained
2 large smoked ham hocks
1 large carrot, roughly chopped
1 stalk celery, roughly chopped
1 large onion, roughly chopped
10 sprigs fresh parsley
4 sprigs fresh thyme
1 bay leaf
6 cups low-sodium chicken broth or stock, water or a combination of both
Kosher salt and freshly ground black pepper
Simple Salad, for serving, recipe follows
8 to 12 large handfuls prewashed baby mixed greens (about 1 pound)
Extra-virgin olive oil
Vinegar (balsamic, white or red wine, or cider (just not white distilled)
Kosher salt and freshly ground black pepper

Steps:

  • Combine the peas, hocks, carrots, celery and onions in a large soup pot or Dutch oven. Tie the parsley, thyme and bay leaf together with kitchen string. Add the herb bundle, stock and 1 teaspoon salt. Bring to a boil over high heat. Lower the heat to a simmer; cover and cook until the peas are tender, 50 minutes to 1 hour.
  • Remove the pot from the heat, and remove the hocks to a bowl to cool. Remove the meat from the hocks, discarding the bones, fat and skin. Cut the meat into cubes. Remove the herb bundle from the soup and discard.
  • Puree the soup with an immersion blender or in batches in a blender to desired consistency. Heat the soup to a simmer with the meat and season with salt and pepper. Serve in heated bowls. Serve with the Simple Salad.
  • Although the salad is prewashed, still give it a soak in a big bowl of cold water for about 5 minutes. Lift the salad out of the water, so any grit is left in the bowl. Put it in a salad spinner; don't pack it in or the greens will get bruised. Spin dry. If you don't have a spinner, lay on a clean towel and gently pat dry.
  • Put the greens in a big bowl. Drizzle 3 tablespoons (a regular soup spoon is fine ¿ you don't need the measuring type) of olive oil over the greens. Drizzle with 1 tablespoon vinegar. Sprinkle with salt and pepper. Using tongs or 2 forks, toss just enough so that all the greens are lightly dressed. Transfer to 4 salad plates and serve immediately.

SPLIT PEA SOUP WITH HAM

Split Pea Soup With Ham image

This is a hearty, fairly low-fat and low-sodium split pea soup recipe, sure to warm you on a cold day. It is among the most potent comfort foods there are, and it has never failed to please my family.

Provided by E. J. Hilden

Categories     Ham

Time 6h15m

Yield 8 serving(s)

Number Of Ingredients 13

2 lbs dried split peas
1 lb ham steak, cured and smoked
8 ounces mushrooms (white or criminy)
8 ounces carrots, sliced
1 large strong yellow onion
1/4 cup chopped fresh parsley
6 whole fresh garlic cloves
3 tablespoons extra virgin olive oil
4 stalks celery
Italian herb seasoning
fresh ground black pepper
fresh ground sea salt
1/2 gallon cold fresh water

Steps:

  • Cut the ham steak into small cubes and set aside in a large bowl.
  • Chop the onion coarsely, and add to the ham.
  • Chop the garlic, add to the ham.
  • Chop the carrots and celery, add to the ham.
  • slice the mushrooms, add to the ham.
  • Heat olive oil in the bottom of a large, 8 quart stock pot. When the oil is hot, add the ham, onion, garlic, carrots, celery, and mushrooms. Saute' ingredients until vegetables are partly cooked, stirring frequently. This takes about ten or fifteen minutes.
  • Add 1/2 gallon of water (give or take). Bring the soup to a boil, then reduce heat to low. Add parsley, and add your favorite dehydrated italian herb blend to taste. Cover the stock pot and let simmer, slowly, for a minimum of three hours. This allows the vegetable and ham broth to develop, and will be very fragrant. Stir once in a while, not not all that often.
  • After about three hours, turn the stove off but leave the stock pot on the burner, for one hour. This further develops the broth.
  • Bring broth to boil again, and stir in two pounds (one common, normal sized bag) of dried green split peas. Wait for the soup to come to a rolling boil, then reduce temperature to low. Simmer, stirring once in a while, for an hour or so.
  • The soup is cooked when the peas have become soft and have broken down into the liquid. They should retain their sweet-ish character. Add salt and pepper to taste as you serve. I find that the ham and garlic add enough salt for me, but other folks might want a little more.
  • I have also prepared this broth a day ahead of time and let it sit in the fridge overnight, which fully develops the stock and blends its flavors. You can cut the stock simmering time if you want, but the longer you take with it, the better the soup tastes.
