CINNAMON-SUGAR POPCORN
I first tried this when I was visiting my sister in West Virginia. After trying it, I loved it, however I neglected to ask her for the recipe. 10 years later, I have it, and I still love it! The kids can help make it if you use an air popper (which I did to reduce fat and calories...there's enough in the butter!) I used my deep dish lasagna pan to cook it in the oven. You can use a roasting pan or any other large, deep dish pan. It makes a lot, so either invite your friends or store it in an airtight container for later.

Steps:
- Preheat an oven to 250 degrees F (120 degrees C). Pop the popcorn using an air popper according to manufacturer's directions. Place into a large mixing bowl, and set aside.
- Melt the butter in a small saucepan over medium heat. Stir in the sugar, cinnamon, salt, and vanilla, and cook until thick and bubbly. Pour over the popcorn, and stir until the popcorn is evenly coated. Spread the popcorn into a large roasting pan.
- Bake in the preheated oven 10 minutes, then turn the heat off, and allow the popcorn to stay in the oven 20 minutes longer. Remove from oven, and cool completely before serving.

17 EASY SWEET POPCORN RECIPES

- Pop popcorn and place it in a large bowl, and preheat the oven to 250 degrees.
- Melt butter in a medium saucepan. Stir over medium heat and mix in salt, brown sugar, and corn syrup. Stir constantly while bringing to a boil
- Boil without stirring for 4 minutes and then remove from heat. Mix in vanilla and soda.
- Pour slowly over popcorn, stirring to coat.
- Place in 2 shallow baking dishes and pop in the oven to bake for 1 hour. Stir every 15 minutes. Let cool completely before breaking up the popcorn and eating!

- Line a large baking sheet with waxed paper.
- Combine crispy corn and rice cereal, honey graham cereal, peanut butter corn puff cereal, popcorn, chocolate pieces, and peanuts in a large bowl.
- Melt butter in a large saucepan over medium heat; whisk in flour until smooth, 2 to 3 minutes. Add brown sugar and corn syrup; bring to a boil, stirring occasionally, until sugar is dissolved, about 1 minute. Stir peanut butter into sugar mixture until creamy, about 3 minutes; pour over cereal mixture and gently toss until coated.
- Spread cereal mixture over prepared baking sheet and allow to cool, about 30 minutes. Once cooled, break mixture into chunks and store in an airtight container.

- Put the oil in a large saucepan with a tight-fitting lid over a medium heat. Toss the popcorn kernels in the oil to coat. Put the lid on, and keep over a medium heat until you hear the first popcorn pop, then turn the heat to medium-low. When you begin to hear lots of popping, give the pan a shake. Continue to shake frequently until the popping stops. Turn off the heat and leave in the pan.
- Line a large baking tray with baking parchment. Put the sugar and 60ml water into a medium heavy-based saucepan and bring to the boil. Stir until the sugar has dissolved, then leave over a medium heat, without stirring, for 6-8 mins. It should start to turn into a golden caramel, swirl it around and add the butter - stand back as it may spit a little. Stir well until combined.
- Pour the caramel over the popcorn in the pan and stir immediately to coat the popcorn, being careful not to touch the hot caramel. Carefully transfer onto the lined baking tray and press down with the back of a spoon to spread evenly. Leave to cool for 5 mins, then break apart and eat.

- Heat oven to 250 degrees. Place popcorn, cashews and pecans in a large roasting pan. Combine brown sugar, butter and corn syrup n a 2-quart saucepan. Cook over medium heat until mixture comes to a full boil (7 to 8 minutes). Continue boiling 2 minutes. Remove from heat; stir in baking soda (mixture will be foamy).
- Pour butter mixture over popcorn mixture in pan; stir well. Bake for 1 hour, stirring every 15 minutes. Remove from oven; place onto waxed paper or parchment paper. Cool completely. Do not break into pieces.
- Melt the chocolate chips and 1 tsp of shortening in a small bowl in the microwave for 30 to 45 seconds or in a small saucepan over low heat until melted.
- Separately, melt white baking chips with 1/2 tsp of shortening in a small bowl in the microwave for 30 to 45 seconds or in a small saucepan over low heat until melted.
- With a fork or spoon, drizzle over popcorn mixture. Let stand until chocolate in set (3 to 4 hours). Break popcorn mixture into pieces. Store in a container with tight-fitting lid or resealable plastic food bag.

CHUNKY, SWEET POPCORN MIX
I've been making this recipe for years. I used to put it in individual bags for the kids when I was a room mother. Anytime there's a party at my house, there's always a bowl of this on the table. And by the end of the party the whole bowl is empty. It's wonderful! Also get creative....try different cereals and different types of peanuts (Spanish, pecan, etc.).

Steps:
- In a large mixing bowl, combine popcorn, rice cereal, and peanuts.
- Put aside.
- In a sauce pan, put the brown sugar, corn syrup, margarine and salt.
- Boil for 5 minutes.
- Remove from the heat and add the baking soda.
- This will cause the mixture to "froth".
- Pour this over the popcorn mixture and stir to combine.
- Spread on a greased cookie sheet (you can cover the cookie sheet with parchment paper and spray this to make clean up easier) and bake at 250°F for 40 minutes.
- Mix once or twice while it is cooking.
- Let cool on the pan.
- Break apart and serve.
