PORK CHOP CASSEROLE
I cut this out of a cooking magazine, probably Taste Of Home and changed it to suit or our tastes. It sounds like a very flavorful way to have pork chops and to keep them moist. I haven't made them yet but plan to make them and serve them over mashed potatoes, yummy!!!!! Note: This recipe also works great in a crock pot. My friend and I have decided that it is easier to just mix all the sour cream with the soup and broth in the beginning.

Steps:
- In a shallow bowl, combine the flour, salt and pepper; dredge pork chops.
- Heat oil in a large skillet; cook pork chops for 4 to 5 minutes per side or until browned.
- Place pork chops in a single layer in an ungreased 13x9x2 inch baking dish.
- Combine cream of mushroom soup, chicken broth and 1/2 cup sour cream; pour over chops.
- Sprinkle with half of the French fried onions.
- Cover and bake at 350 degrees Fahrenheit for 45 to 50 minutes.
- Stir remaining sour cream into the sauce.
- Top chops with remaining onions.
- Return to oven, uncovered, for 10 minutes.

- In a large bowl, mix hash browns, melted butter, soup, salt, pepper, onions, sour cream, and cheese. Blend thoroughly. (Blend after each ingredient is added). Put into a 3 quart casserole (sprayed with Pam). Cover with potato chips Cover and place in oven set @ 350 degrees for 45 minutes.
- For a main dish, add 2 cups cooked cubed ham, chicken or turkey to mixture.

RHUBARB PORK CHOP CASSEROLE

- In a large skillet, brown pork chops in oil and season with salt and pepper. Remove to a warm platter. Mix 1/4 cup pan drippings with bread crumbs. Reserve 1/2 cup sprinkle remaining crumbs into a 13-in. x 9-in. x 2-in. baking dish. Combine rhubarb, sugar, flour and cinnamon spoon half over the bread crumbs. Arrange pork chops on top. Spoon remaining rhubarb mixture over chops. Cover with foil and bake at 350° for 30-45 minutes. Remove foil. Sprinkle with reserved bread crumbs. PORK CHOP DINNER CASSEROLE
My grandma Lorraine Stromgren would listen to WCCO Radio's Joyce Lamont as she broadcasted a daily recipe. My grandma would sit by the radio with pencil in hand to write down those recipe favorites! A cookbook was published in 1979 after 10 years of recipes being broadcasted. Of over 2,000 recipes that had been broadcasted, the cookbook has the recipes that were the listeners' favorites.

Steps:
- Cook sliced potatoes in boiling salted water for 5 minutes- Drain and set aside.
- Spread the thawed beans in the bottom of a greased 13x9 inch baking pan.
- Combine soups, salt and pepper and spread HALF of this mixture over the means.
- Arrange the cooked potatoes over this, and top with the rest of the soup mixture.
- Brown the pork chops on both sides in oil; then arrange them on top of the potatoes.
- Sprinkle meat with salt and pepper.
- Cover the pan with foil and bake 45 minutes at 350 degrees.
- Take dish from oven, remove the foil, sprinkle onions over the top, and return the pan, uncovered, to bake another 5 minutes.

Meanwhile, in a greased 13-in. x 9-in. x 2-in. baking dish, combine rice, water, tomato sauce and taco seasoning mix well. Arrange chops over rice top with green pepper. - Heat oil, garlic, and Worcestershire sauce in a large skillet. Dampen chops and treat with tenderizer. Sprinkle chops with salt and pepper. Add chops to skillet and brown on both sides. Peel and slice potatoes and onions. Layer potatoes and onions in a lightly greased casserole dish. Place the chops on top. Cover with 1/2 cup water. Cover and bake at 350 degrees for one hour. Salt and pepper to taste.
