CHICKEN CORDON BLEU CHOWDER

Chicken Cordon Bleu Chowder image

Chicken Cordon Bleu is a French dish where chicken is stuffed with ham and swiss. The only thing better than that is morphing it into a chowder.

Provided by Jeffrey

Categories     Soups & Stews

Time 21m

Number Of Ingredients 13

4 tablespoons (1/2 stick) salted butter
2 shallots, diced
8-10 ounces diced pancetta or bacon (you can usually find diced pancetta in 4-5 ounce packages in the fancy meat section of your market)
1 tablespoon (3 cloves) crushed or minced garlic
1 whole 4-5 lb chicken, cut into quarters, skin on
1 cup dry white wine (like a Chardonnay)
6 cups chicken or garlic broth (I used 3 teaspoons Garlic Better Than Bouillon, 3 teaspoons Chicken Better Than Bouillon + 6 cups water)
4 cups (16 ounces) shredded Swiss cheese
1 cup heavy cream or half & half
3 tablespoons cornstarch + 3 tablespoons water to form a slurry
1/2 - 1 pound ham of your choice (I used Black Forest), thinly sliced and diced
1-2 tablespoons Dijon mustard (optional)
1/2 tablespoon of Creole or Cajun seasoning (I used Tony Chachere's, also optional)

Steps:

  • Add the butter to the Instant Pot and hit "Sauté" and adjust to the "More" or "High" setting. Once the butter's melted, sauté the shallots and pancetta for 5 minutes. Then, add the garlic and sauté for 1 minute more.
  • Take a slotted spoon and reserve the cooked pancetta in a paper towel-lined bowl and set aside (it's okay if some/most of the shallots get taken out with it).
  • Add the wine and deglaze (scrape) the bottom of the pot to free it of any caked-on pancetta grease. Then, add the broth and chicken to the pot. Secure the lid, move the valve to sealing position and hit "Keep Warm/Cancel" and then "Manual" or "Pressure Cook" for 10 minutes at High Pressure. Quick release when done.
  • Carefully remove the chicken with tongs and set aside to cool.
  • Stir in the cream. Then, in batches, whisk in the Swiss cheese until very melty and then use an immersion blender to purée.
  • Hit "Keep Warm/Cancel" and then hit "Sauté" and adjust to the "More" or "High" setting. Once bubbling, immediately stir in the cornstarch slurry and stir until it thickens and turn the pot off so the bubbles die down.
  • Once the chicken's cooled, pick off the meat by hand and discard the skin, bones and cartilage. Add the chicken back to the soup in the pot along with the diced ham and the reserved pancetta/shallots. Add the Dijon and Creole seasoning if using, stir well and serve.
  • Top with croutons or oyster crackers.

For a weeknight standby, get Tyler Florence's Chicken Cordon Bleu recipe, a breaded cutlet wrapped around salty prosciutto and nutty Gruyre, from Food Network.

Provided by Tyler Florence

Categories     main-dish

Time 45m

Yield 4 servings

Number Of Ingredients 11

4 chicken breasts skinless and boneless
4 thin slices prosciutto di Parma
1/2 pound Gruyere, grated
1/4 cup all-purpose flour
Kosher salt and freshly ground black pepper
1 cup panko bread crumbs
4 sprigs fresh thyme, leaves only
1 clove garlic, peeled and finely minced
2 tablespoons unsalted butter, melted
2 eggs
Extra-virgin olive oil

Steps:

  • Preheat oven to 350 degrees F.
  • Lay the chicken breast between 2 pieces of plastic wrap. Using the flat side of a meat mallet, gently pound the chicken to 1/4-inch thickness. Remove the top sheet of plastic and lay 2 slices of prosciutto neatly over the top to cover the breast and sprinkle a quarter of the cheese over the prosciutto. Tuck in the sides of the breast and roll up tight like a jellyroll inside the plastic wrap. Squeeze the log gently to seal and twist both ends tight to form a nice log. Repeat with remaining chicken.
  • Season the flour with salt and pepper. Mix the bread crumbs with thyme, garlic and kosher salt, pepper, and melted butter. The butter will help the crust brown. Beat together the eggs and season so the flour, the eggs and the crumbs are all seasoned.
  • Remove the plastic wrap. Lightly dust the chicken with flour, dip in the egg mixture and gently coat in the bread crumbs. Lightly coat a baking pan with olive oil and carefully transfer the roulades onto it. Bake for 20 to 25 minutes until browned and cooked through.
  • Cut into pinwheels and serve on top of Brussels Sprout Hash with Chicken Jus and Cranberry Chutney, if desired.

CRISPY, CREAMY CHICKEN CORDON BLEU RECIPE BY TASTY

Crispy, Creamy Chicken Cordon Bleu Recipe by Tasty image

There's nothing we love more than a crispy, succulent, perfectly-fried piece of fried chicken. But we also love gourmet meals. You know, the ones that you sit down to in the candlelight? Those ones. Well, our easy chicken Cordon Bleu is the best of both worlds: sounds fancy but really? It's just some really, really good fried chicken. That, we can promise.

Provided by Matthew Johnson

Categories     Dinner

Yield 6 servings

Number Of Ingredients 19

4 boneless, skinless chicken breasts
salt, to taste
pepper, to taste
1 tablespoon garlic powder
1 tablespoon onion powder
16 slices swiss cheese
½ lb ham, thinly sliced
peanut oil, or vegetable oil, for frying
1 cup all-purpose flour
4 eggs, beaten
2 cups panko bread crumbs
3 tablespoons butter
2 cloves garlic, minced
3 tablespoons all-purpose flour
2 cups milk
¼ cup dijon mustard
1 cup shredded parmesan cheese
salt, to taste
pepper, to taste

Steps:

  • Sprinkle the chicken breasts with salt, pepper, garlic powder, and onion powder, tossing to coat evenly.
  • On a cutting board, place a chicken breast between two sheets of plastic wrap and pound until about ½ inch (1 cm) thick with a meat mallet, rolling pin, or heavy pan.
  • Remove the plastic wrap and place 2 slices of Swiss cheese, then 2 slices of ham, then another layer of Swiss cheese, and another layer of ham. Evenly roll the chicken and place onto a new sheet of plastic wrap.
  • Wrap the chicken in the plastic wrap tightly and use the excess plastic on the sides to twist, firming up the roll of chicken cordon bleu as you work. Tie the excess plastic. Repeat with the remaining ingredients, then chill the rolls in the fridge to set for 30 minutes.
  • Meanwhile, preheat a tall-sided pan with 2 inches (5 cm) of oil to 325°F (170°C).
  • After the rolls are set, prepare 2 separate large, wide dishes with the flour, beaten egg, and bread crumbs. Dredge the chicken first in the flour, then the egg, and then bread crumbs.
  • Place the breaded chicken cordon bleu in the oil and cook for about 5 minutes per side, or until the outside is an even golden brown. If a good color is achieved and the chicken's center is still not 165°F (75°C), place the chicken cordon bleu on a wire rack set over a baking sheet and finish the chicken in the oven at 325°F (170°C) until that temperature is reached.
  • Meanwhile, prepare the sauce. In a 1 ½-quart saucepan over medium heat, melt the butter and cook the garlic until soft. Add the flour and whisk for 1 minute.
  • Add the milk and whisk until fully combined with the roux and no lumps remain. Continue whisking until the mixture comes to a simmer and has thickened.
  • Add the mustard, Parmesan cheese, salt, and pepper and whisk to combine. Remove the pan from the heat.
  • Slice the chicken and serve drizzled with Dijon sauce.
  • Enjoy!

ORIGINAL CHICKEN CORDON BLEU

Original Chicken Cordon Bleu image

This classic French chicken dish, adapted from Jane and Michael Stern's book "American Gourmet," more than lives up to its name ("cordon bleu" means "blue ribbon"). It's also far easier to make than you may think. A chicken breast is pounded thin (we've been known to cheat by using pretrimmed cutlets), then wrapped around a slice of smoked ham and a bit of Swiss cheese, and secured with toothpicks. The roulade is coated in egg and bread crumbs, then pan-fried until golden brown, and a simple white wine cream sauce finishes it off.

Provided by Molly O'Neill

Categories     dinner, main course

Time 45m

Yield 4 servings

Number Of Ingredients 11

4 large boneless and skinless chicken breast halves (about 1 1/2 pounds)
4 thin slices smoked ham
2 ounces Swiss cheese, cut into 4 equal "fingers"
1/4 cup flour
1/2 teaspoon salt
1/4 teaspoon pepper
1 large egg, beaten
3/4 cup fresh bread crumbs
1/4 cup unsalted butter
3/4 cup plus 2 tablespoons chicken stock
3/4 cup white wine, heavy cream or additional chicken stock

Steps:

  • Lay the chicken breasts between pieces of wax paper and use a mallet to pound them to 1/4 inch to 1/8 inch thick. Take care not to pound holes in the chicken. Layer each breast with the ham, then place a finger of cheese in the center. Roll up to completely enclose the ham and cheese and secure with toothpicks.
  • In a medium bowl, combine the flour, salt and pepper. Lightly dredge the chicken in the seasoned flour, then dip in the egg and coat with bread crumbs. Place on a baking sheet and chill at least 15 minutes and up to 4 hours.
  • In a large skillet over medium heat, heat the butter. Add the chicken and cook, turning carefully with tongs, until browned, about 8 to 10 minutes. Add 1/2 cup of the stock to the skillet, reduce the heat to medium-low, cover and simmer until the chicken is cooked through, 10 to 15 minutes. Move the chicken to a warm platter.
  • Add the remaining 2 tablespoons of stock to the skillet, raise the heat to high, and cook, stirring up browned bits clinging to the bottom, for 1 minute. Add the wine (or heavy cream or additional stock), lower the heat and simmer, uncovered, until the consistency of gravy, about 45 seconds. Pour over the chicken breasts and serve.

CHICKEN CORDON BLEU

Chicken Cordon Bleu image

Chicken breasts are pounded thin, wrapped around ham and cheese, breaded, and pan-fried in this classic Swiss dish. Make it a balanced meal by serving with a lightly dressed salad of winter chicories.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Chicken     Chicken Breast Recipes

Time 40m

Number Of Ingredients 8

4 small boneless skinless chicken breasts (6 ounces each), tenderloins removed
Kosher salt and freshly ground pepper
6 ounces thinly sliced Swiss cheese
6 ounces thinly sliced ham
1/2 cup unbleached all-purpose flour
2 large eggs
1 1/4 cups panko breadcrumbs
1/4 cup safflower or other neutral-flavored oil

Steps:

  • Use a sharp knife to slice a chicken breast horizontally, starting at the thickest part and cutting almost to the other side (do not cut all the way through) until, when opened, breast lies flat. Place between two pieces of plastic wrap. Pound to an even 1/4 inch thick. Remove top layer of plastic; season with salt and pepper. Repeat with remaining chicken. Layer 1 1/2 ounces each of cheese and ham over surface of a breast; fold in half to enclose filling. Repeat with remaining chicken, cheese, and ham.
  • Preheat oven to 200 degrees. Place flour in a shallow dish; season with salt and pepper. Beat eggs with 2 tablespoons water in another dish; season with salt and pepper. Place panko in a third dish; season with salt and pepper. Heat 2 tablespoons oil in a large skillet over medium. Meanwhile, dredge a breast in flour, shaking off excess. Dip in eggs, turning to evenly coat. Dredge in panko, pressing gently to adhere. Transfer to a plate; repeat with remaining chicken. Add half the chicken to skillet and cook, turning once halfway through, until chicken is cooked through and golden brown, and cheese is melted, 14 to 16 minutes. Transfer to a wire rack set over a rimmed baking sheet to drain. Keep warm in oven. Cook remaining chicken with remaining 2 tablespoons oil. Serve immediately.
