LIME CILANTRO RICE

Steps:
- Heat the oil in a large saucepot over medium-high heat. Add the rice and toast until lightly golden, about 1 minute. Add the stock, lime peel, salt and 1 1/2 cups water and bring to a boil. Cover the rice, reduce the heat to low and simmer until all of the liquid is absorbed, about 15 minutes. Let the rice stand, covered, about 5 minutes, then stir in the lime zest, juice and cilantro. Transfer to a serving bowl and top with more cilantro leaves and green onion.

Steps:
- In a medium saucepan, heat the oil over medium-low heat. Add the onion and cook, stirring frequently, until soft and translucent, about 5 minutes. Do not brown; lower the heat if necessary.
- Add the garlic and rice and sauté for 2 to 3 minutes, until toasty and fragrant.
- Add 2½ cups water, along with the salt and pepper and bring to a boil. Reduce the heat to low, cover, and simmer for 10 to 15 minutes, until the rice is tender and the water is absorbed. Taste the rice; if it is still a bit firm, add a few more tablespoons of water and cook a few minutes more.
- Off the heat, add the lime juice, butter, and cilantro; then mix and fluff the rice with a fork. Taste and adjust the seasoning if necessary.

- 1. Add the oil to a heavy sauce pan and heat on low. Add the garlic/onion and saute a little until onion is limp. Add the raw rice, make sure you have rinsed it twice under cool water and drained or strained real well of all the excess water. Add to the garlic/onion and oil and begin to stir real good so as to incorporate all the oil and garlic real good into the rice. Saute like this for about two minutes.
- 2. Add the chicken broth, salt, lime juice and bring to a boil. As soon as it starts to boil. Reduce heat to low Cover and cook for about 15/20 minutes or according to the rice package directions.
- 3. When the rice is done, add the lime zest and the chopped cilantro and stir into the rice to mix in real well. Serve Immediately. You can serve with any type meat or chicken or fish.

Though diced fresh onion could season the rice, onion powder is a savory bedrock with its concentration of umami, especially once bloomed in oil. This aromatic dish plays to the strengths of the cilantro plant: The stems cook with the rice, lending their peppery brightness, and the tender leaves confetti the dish for a final viridescent flourish.

- Melt the butter in a medium saucepan over medium heat. Add the oil, then stir in the onion powder and cilantro stems until fragrant, about 30 seconds. Add the rice and stir until oil-slicked, just a few seconds.
- Add 1 1/2 cups water, raise the heat to high and bring to a simmer. Reduce the heat to low, cover the saucepan and cook until all of the water is absorbed, 17 to 20 minutes. Remove from the heat and let the rice sit, covered, to steam for 10 more minutes.
- Fold in the salt, cilantro leaves, jalapeño and lime juice. Taste for seasoning, adding more salt and lime juice as desired.
PERFECT CILANTRO LIME RICE
How to make delicious and flavorful cilantro lime rice that tastes even better than your favorite restaurants! Stock or broth substituted for the water adds additional flavor. We love using chicken or vegetable stock. If you do use stock, take care to add salt to taste since the stock may already have some salt added.

- Rinse the rice with cold water until the water runs clear. Drain well in a fine-mesh sieve and set aside. This removes excess starch and helps the rice cook up fluffy and light.
- Heat a medium saucepan with a tight-fitting lid, over medium heat. Add the oil or butter. When hot, add the rinsed rice and onion. Cook, stirring often, until the rice turns from translucent to a brighter white and the onion is soft, 3 to 4 minutes. Add the garlic and cook, stirring it around the pan until fragrant, but not browned, about 30 seconds.
- Pour in the warm water or stock and stir, knocking any grains of rice that are stuck to the sides of the pan. Season with salt, reduce the heat to the lowest setting and cover with a lid. Cook, covered for 15 minutes.
- Remove the pan from the heat and leave alone (still covered) for 10 minutes. Uncover and test a grain of rice. If the rice is still a little hard, place the lid back onto the rice and place over low heat for another 5 minutes. If the rice looks too dry, scatter a tablespoon or two of extra water over the rice before placing back onto the heat.
- When the rice is done, scatter the lime juice and cilantro on top. Use a fork to gently fluff the rice and incorporate the lime juice and cilantro into the rice. Serve.

- Preheat a deep cast iron pan or skillet with butter. Add rice and cook on medium-high until rice turns golden brown.
- Add in water, lime zest, and salt. Stir to combine.
- Bring it to a boil and turn the heat down to low. Cover the rice with a lid and let it cook for 15 minutes.
- Remove rice from heat and let it sit for 10 minutes. Using a fork, fluff the rice to loosen the grains from one another.

- Bring the rice, water, and chicken bouillon to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the rice is tender, 20 to 25 minutes. Remove from the heat, add the lime juice, cilantro, and salt; fluff with a fork and serve.
