1 cup oatmeal
1 cup pear juice
1 bartlett pear, peeled, seeded and grated
1 teaspoon ground cinnamon
1 pinch salt
3 tablespoons raisins (or golden raisins)
1/2 cup low-fat vanilla yogurt

Steps:

  • Note: I also tested this recipe using canned pears in their own juice and think canned pears would be a suitable substitute for fresh.
  • In a cast iron skillet on medium-high (depends on your range)heat dry roast the oatmeal and cinnamon for approximately 4-5 mintes. DO NOT burn. Remove pan from heat.
  • In a saucepan combine the pear nectar with 3/4 cup water. Cook slowly over medium heat just until bubbles appear around the edges. DO NOT boil.
  • Add the toasted oats, the grated pear, and salt. Cook mixture stirring constantly, until the oats are tender; about 10-12 minutes.
  • Stir in the raisins just before serving.
  • Top each serving with a dollop of yogurt.

1-1/2 cups plain nonfat Greek-style yogurt
1 cup water
1/3 cup maple-flavored or pancake syrup
1-1/4 cups steel-cut oats
1 pkg. (3.4 oz.) JELL-O Vanilla Flavor Instant Pudding
3/4 cup raisins
3 Tbsp. flax seed
2 pears
1 cup chopped walnuts, toasted

Steps:

  • Whisk first 4 ingredients in slow cooker sprayed with cooking spray until blended. Add all remaining ingredients except pears and nuts; mix well. Cover with lid.
  • Cook on LOW 3-1/2 to 4 hours, stirring after 2 hours.
  • Chop pears. Stir into oatmeal. Serve topped with nuts.

1 can (15 oz) pear halves in juice
2 cups old-fashioned or quick-cooking oats
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/3 cup chopped walnuts, toasted*
1/4 cup packed brown sugar
1 cup fat-free (skim) milk

Steps:

  • Drain pears, reserving juice in 4-cup measuring cup. Add enough water to juice to measure 3 1/2 cups liquid. Chop pears; set aside.
  • In 2-quart saucepan, heat juice mixture to boiling. Stir in oats, cinnamon and salt. Cook over medium heat about 5 minutes for old-fashioned oats (about 1 minute for quick-cooking oats), stirring occasionally. Gently stir in chopped pears.
  • Spoon oatmeal into serving bowls. Top with walnuts, brown sugar and milk.
