1 (15 ounce) can cream of coconut
1/2 cup marshmallow cream
1 teaspoon rum extract
1 (8 ounce) container Cool Whip, thawed

Steps:

  • Place the can of cream of coconut in a bowl of hot water to soften.
  • Beat the cream cheese until creamy.
  • Open the can of cream of coconut and spoon it into the cream cheese. Beat again.
  • Add the marshmallow cream and extract and beat again.
  • Fold 2 cups Cool Whip into the creamed mixture gently. Refrigerate until chilled.
  • Serve with your favorite fruit.

3/4 cup fat-free milk
1/2 cup fat-free sour cream

Steps:

  • In a blender, combine the first five ingredients; cover and process for 1 minute or until smooth. Serve with fruit. Store in the refrigerator.

1 cup white sugar
½ cup all-purpose flour
¼ teaspoon salt
3 cups milk
4 egg yolks
3 tablespoons butter
1 ½ teaspoons vanilla extract
1 cup flaked coconut
1 (9 inch) pie shell, baked

Steps:

  • In a medium saucepan, combine sugar, flour and salt over a medium heat; gradually stir in milk. Cook and stir over medium heat until the mixture is thick and bubbly. Reduce heat to low and cook 2 minutes more. Remove the pan from heat.
  • Place a strainer over a clean mixing bowl; set aside.
  • Beat the egg yolks slightly. Gradually pour 1 cup of the hot custard mixture into yolks, whisking constantly. Return the egg mixture to the saucepan and bring the entire mixture to a gentle boil. Cook and stir 2 minutes before removing the pan from heat. Immediately pour custard through the strainer.
  • Stir butter, vanilla, and coconut into the hot mixture. Pour the hot filling into the baked pie crust. Cool and refrigerate until set, about 4 hours.

graham crackers, Nilla Wafers, or banana, (for serving)

Steps:

  • In a large bowl, combine the pudding powder and milk; whisk vigorously for 2 minutes until very thick. Set aside.
  • In another large bowl with an electric mixer, beat the cream cheese and powdered sugar until combined and fluffy; add in the Cool Whip and continue to mix until combined. Fold in the sweetened coconut flakes.
  • Combine the pudding mixture with the Cool Whip mixture.
  • Chill in the refrigerator for 1-2 hours to thicken and set completely.
  • Sprinkle some toasted coconut flakes over the top and serve with graham crackers, Nilla Wafers, or banana!

8 oz brick cream cheese - softened
8 oz frozen whipping cream - thawed
1/2 cup powdered sugar
4 tbsp caramel sauce
1 1/2 tsp coconut extract
1/2 cup toasted coconut plus 4 Tablespoons - toasted

Steps:

  • Preheat oven to a low broil. Line a cookie sheet with parchment paper. Spread the coconut flakes on to the cookie sheet.
  • Low broil the coconut flakes for 2-3 minutes or until they begin to brown. If your flakes are a bit dried out, they may brown faster. Set aside to cool.
  • In a large mixing bowl, add the cream cheese, Cool Whip, powdered sugar, caramel sauce and coconut extract. Stir with a rubber spatula to combine.
  • Fold in the toasted coconut flakes.
  • Cover and chill for at least one hour before serving.
  • Transfer to your serving bowl and sprinkle with the reserved toasted coconut. Serve with cookies, pretzels, graham crackers and/or fresh fruit.
