8 ounces cream cheese, at room temperature
1/2-pound unsalted butter, at room temperature
1/4 cup granulated sugar plus 9 tablespoons
1/4 teaspoon kosher salt
1 teaspoon pure vanilla extract
2 cups all-purpose flour
1/4 cup light brown sugar, packed
1 1/2 teaspoons ground cinnamon
3/4 cup raisins
1 cup walnuts, finely chopped
1/2 cup apricot preserves, pureed in a food processor
1 egg beaten with 1 tablespoon milk, for egg wash

Steps:

  • Cream the cheese and butter in the bowl of an electric mixer fitted with the paddle attachment until light. Add 1/4 cup granulated sugar, the salt, and vanilla. With the mixer on low speed, add the flour and mix until just combined. Dump the dough out onto a well-floured board and roll it into a ball. Cut the ball in quarters, wrap each piece in plastic, and refrigerate for 1 hour.
  • To make the filling, combine 6 tablespoons of granulated sugar, the brown sugar, 1/2 teaspoon cinnamon, the raisins, and walnuts.
  • On a well-floured board, roll each ball of dough into a 9-inch circle. Spread the dough with 2 tablespoons apricot preserves and sprinkle with 1/2 cup of the filling. Press the filling lightly into the dough. Cut the circle into 12 equal wedges?cutting the whole circle in quarters, then each quarter into thirds. Starting with the wide edge, roll up each wedge. Place the cookies, points tucked under, on a baking sheet lined with parchment paper. Chill for 30 minutes.
  • Preheat the oven to 350 degrees F.
  • Brush each cookie with the egg wash. Combine 3 tablespoons granulated sugar and 1 teaspoon cinnamon and sprinkle on the cookies. Bake for 15 to 20 minutes, until lightly browned. Remove to a wire rack and let cool.

Steps:

  • In a large bowl, beat butter and cream cheese until smooth. Combine flour and salt; gradually add to cream cheese mixture and mix well. Divide dough into fourths. Wrap each portion; refrigerate for 1 hour or until easy to handle., Roll out each portion between 2 sheets of waxed paper into a 12-in. circle. Remove top sheet of waxed paper. Combine sugar and cinnamon. Brush each circle with 1 tablespoon melted butter. Sprinkle each with 3 tablespoons cinnamon-sugar and 2 tablespoons pecans. Cut each into 12 wedges., Roll up wedges from the wide end; place pointed side down 2 in. apart on ungreased baking sheets. Curve ends to form a crescent shape. , Bake at 350° for 24-26 minutes or until golden brown. Remove to wire racks. Brush warm cookies with remaining butter; sprinkle with remaining cinnamon-sugar.

2 cups all-purpose flour
⅛ teaspoon salt
14 tablespoons butter, cut into pieces
1 cup small curd cottage cheese, drained
½ cup white sugar
1 teaspoon ground cinnamon
¼ cup raspberry spreadable fruit
1 cup chopped pecans

Steps:

  • Place flour, salt, and butter in a food processor. Process until the mixture resembles coarse crumbs, then add the cottage cheese. Continue processing until the dough comes together. Divide dough into four equal portions and wrap in plastic. Refrigerate for at least 4 hours.
  • Preheat an oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
  • Combine sugar and cinnamon in a bowl. Roll out each portion of dough on a floured surface to an 1/8 inch thick circle. Spread 1 tablespoon of raspberry spreadable fruit, then sprinkle with the sugar mixture and 1/4 cup of pecans on each circle. Gently press the filling into the dough using a rolling pin. Steps:

  • To make the dough, place the cream cheese and the butter in an electric mixer fitted with a paddle. Cream at a low speed until combined, about 2 minutes. Add the flour and salt and mix until a very soft dough is formed, about 2 more minutes. Cover with plastic wrap and refrigerate for at least 2 hours.
  • Preheat the oven to 350 degrees and line 2 cookie sheets with baking parchment (or a Silpat baking mat).
  • Mix the ingredients for the apricot or chocolate filling and divide the dough into 4 balls. Bake in the oven on the middle and lower racks, switching after 12 minutes, also switching back to front. Continue baking about 13 more minutes, or until golden brown. Remove the rugelach to racks to cool.
  • Sprinkle the apricot and chocolate rugelach with confectioners' sugar just before serving.

Tried these cookies a few years ago for Christmas, and have been making them ever since. Looks like you put a lot of work into them, but they are really not very difficult. These are always the first to go on our cookie tray, and I often end up making extra batches. (I made 4 batches this year!) Prep. time includes refrigeration time.

4 ounces cream cheese, softened
1/3 cup butter, room temp
1/4 cup sugar
2 tablespoons maple syrup
1/4 teaspoon salt
1 large egg yolk
1 1/2 cups flour
1 cup finely ground walnuts
1/3 cup sugar
2 tablespoons maple syrup
1/8 teaspoon cinnamon
1 large egg white
1 teaspoon water
1 -2 teaspoon sugar

Steps:

  • Beat together cream cheese, butter, sugar, maple syrup, salt and egg yolk in large bowl until smooth.
  • Beat in flour just until blended.
  • Shape into ball and refrigerate about 2 hours.
  • Meanwhile prepare filling: Stir together walnuts, 1/3 c sugar, maple syrup, and cinnamon in medium bowl.
  • Preheat oven to 350°. Grease 2 large baking sheets.
  • Divide chilled dough in half, and roll one half out on lightly floured surface to 1/8-inch thickness.
  • Trim dough to form a 10-inch circle.
  • Spread half of walnut mixture evenly over dough.
  • Cut circle into 16 wedges, like you would cut a pizza (A pizza-cutter works great).
  • Starting with wide end, roll up each wedge jelly-roll fashion (Will look like a little crescent roll).
  • Place on baking sheet, point side down.
  • Repeat with remaining half of dough.
  • Lightly beat egg white with water, and brush over cookies.
  • Sprinkle with sugar.
  • Bake 15-20 minutes or until lightly browned.
