1 teaspoon ground cinnamon
½ teaspoon ground ginger
¼ teaspoon ground nutmeg
Kosher salt and cracked pepper to taste
2 tablespoons brown sugar

Steps:

  • Preheat oven 400 degrees F.
  • Scrub sweet potatoes and then oven roast, skin on for 40-45 minutes or until soft to the touch. Cool slightly. Gently cut the top third off the sweet potatoes and scoop filing into a bowl. Reserve skins if using.
  • Mash potatoes with a fork. Add yogurt and spices and mix well. Spoon filling back into the skins or into 6 lightly buttered ramekins. Sprinkle each with 1 tsp. brown sugar.
  • Set to bake for 15-18 minutes or until heated through.

Slices of sweet potato baked with cinnamon and brown sugar. The caramelized brown sugar make these potatoes taste like candy! I attended a catered dinner and the caterer served these with a beautiful turkey dinner. I begged for the recipe, been making it ever since.

¼ cup vegetable oil
2 pounds sweet potatoes, peeled and sliced
2 tablespoons brown sugar
1 teaspoon ground cinnamon
¾ teaspoon salt
1 pinch freshly ground pepper
1 tablespoon fresh lime juice

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Pour the oil into a 9x13 inch baking dish, and place in the oven until hot, about 5 minutes.
  • Add potatoes to the oiled dish, and bake for 20 minutes in the preheated oven, turning after 10 minutes. In a small bowl, mix together the brown sugar, cinnamon, salt, and pepper.
  • After the 20 minutes is up, remove the potatoes from the oven, and sprinkle with the brown sugar mixture. Stir to coat. Return to the oven, and roast for another 10 minutes, or until potatoes are tender and golden brown. Stir potatoes as necessary to allow them to brown evenly.
  • Remove potatoes to paper towels to drain, then transfer to a serving dish, and sprinkle with lime juice.

1/2 cup fat-free half-and-half
2 tablespoons brown sugar (or more)
1 teaspoon orange zest
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 tablespoon light margarine spread

Steps:

  • Preheat oven to 400 degrees.
  • Peel the sweet potatoes, then cut crosswise into 1/4 inch slices.
  • Arrange the sweet potato slices in even layers on the bottom of a nonstick 8 inch round or square baking pan.
  • In a small bowl, whisk together the half-and-half, brown sugar, orange zest, cinnamon, and nutmeg.
  • Pour the mixture over the sweet potatoes.
  • Dot with the margarine.
  • Bake, uncovered, for 35 to 40 minutes, or until the potatoes are tender, stirring once halfway through the baking time.

1 ⅓ cups white sugar, divided
2 teaspoons ground cinnamon
1 ¾ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon cream of tartar
½ teaspoon salt
¼ teaspoon baking soda
½ cup unsalted butter, softened
1 large egg, at room temperature
1 tablespoon vanilla extract
1 cup buttermilk, at room temperature
1 cup unsalted butter, softened
3 ½ cups powdered sugar
2 teaspoons vanilla extract
1 ¼ teaspoons ground cinnamon
¼ teaspoon salt
4 tablespoons heavy cream

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line 18 cupcake cups with liners.
  • Mix together 1/3 cup sugar and cinnamon for cupcakes in a small bowl. Set aside.
  • Whisk together flour, baking powder, cream of tartar, salt, and baking soda in another bowl until combined.
  • Cream together butter and 1 cup sugar in a large bowl until light and fluffy, 2 to 3 minutes. Add in egg and vanilla and mix an additional 2 minutes. Pour in half of the flour mixture and mix until just combined. Pour in buttermilk and mix until just combined. Add in remaining flour mixture and mix until just combined.
  • Place 1 tablespoon of batter in the bottom of each cupcake liner. Sprinkle 1/2 teaspoon of cinnamon-sugar over the batter. Add another heaped 1 tablespoon of batter on top. Sprinkle with an additional 1/2 teaspoon cinnamon-sugar mixture. Repeat layering in each cupcake liner.
  • Bake in the preheated oven until cupcakes spring back lightly when touched, 24 to 28 minutes. Allow to cool for several minutes in the pan before removing to a wire rack to cool completely.
  • For the frosting: Beat butter on high speed until lightened in color, about 2 minutes. Add in powdered sugar 1 cup at a time, mixing well after each addition. Mix in vanilla, cinnamon, and salt. Add in heavy cream and beat until frosting is light and fluffy, an additional 2 to 3 minutes. Frost cooled cupcakes as desired.

Steps:

  • Lightly spoon flours into dry measuring cups; level with a knife. Combine flours, potato, butter, salt, and cinnamon in a large bowl; mix well. Add water; press mixture together with hands. Turn dough out onto a lightly floured surface; knead until smooth (about 2 minutes).
  • Divide dough into 16 equal portions, shaping each into a ball. Working with 1 ball at a time (cover remaining dough to prevent drying), roll each into a 4-inch circle on a lightly floured surface (circles will be very thin).
  • Heat a medium cast-iron skillet over medium-high heat until very hot. Place 1 dough round in pan, and cook 2 minutes or until brown spots appear, turning after 1 minute.
  • Place the bread on a cooking rack over the eye of a gas burner. Hold bread over flame with tongs, turning until both sides of bread are puffed and brown spots appear.
  • (Some chapatis will puff more than others). Repeat procedure with remaining dough.
