CINNAMON SNOWBALL COOKIES
Cinnamon Snowball Cookies are buttery cookies laced with cinnamon and coated in powdered sugar. These nut free cookies melt in your mouth and always show up on my holiday cookie tray.

Steps:
- Preheat oven to 350 degrees. Line a large baking sheet with parchment paper.
- Beat the butter with a mixer (or by hand) until smooth. Mix in the powdered sugar and beat for about 2 minutes or until light and fluffy. Add the vanilla extract and cinnamon. Mix until well combined, making sure to scrape the sides of the bowl. Gently mix in the flour and stir until just combined.
- Gather the cookie dough in a big ball and put in a covered bowl in the refrigerator for 1 hour.
- Divide the dough into 12 balls (about 1 inch each). Place on pan and bake for about 10 minutes or until bottom edges of the cookies start to turn golden brown.
- Let the cookies cool on a wire rack for 10 minutes then sprinkle or roll the cookies in additional powdered sugar. Sprinkle with extra cinnamon if desired.

- Preheat oven to 350 degrees F. Line two cookie sheets with parchment paper.
- Cream the butter, sugar, vanilla and cinnamon with an electric mixer. Stir in the cake flour followed by the cornflakes and nuts.
- Shape dough into small (3/4 inch) balls. Arrange on cookie sheets (these don't spread much) and bake for 20 to 25 minutes. Cool slightly and remove from pan. Roll in powdered sugar while warm. Sprinkle with some extra cinnamon if you feel like it
- Yield will vary, but you should get between 32 and 40 cookies
CINNAMON SNOWBALLS
I have been making these cookies for years. I don't remember where I got the recipe from originally but it's a Christmas cookie tray staple in our house. It's my son's favorite and he has been known to eat the whole batch at one sitting!

Steps:
- Heat oven to 300º.
- Beat butter until creamy.
- Sift together 3/4 cup confectioner's sugar, flour, salt, cinnamon and nutmeg.
- Gradually add to butter. Blend well.
- Stir in oats. Blend in vanilla and nuts.
- Mix well about 5 minutes.
- Shape to form small balls.
- Place on ungreased cookie sheets. Bake 25 minutes. Remove from sheets.
- While hot sprinkle with 1/2 remaining sugar. Cool and sprinkle again.

I've been making these popular treats for 40 years, much to my family's delight. They look impressive with chocolate and coconut wrapped around a chewy marshmallow center, yet they're surprisingly simple to assemble.

- Line a baking sheet with waxed paper; set aside. , In a large saucepan, combine the butter, milk, cocoa and vanilla. Cook and stir over medium heat until butter is melted and mixture is smooth. Remove from the heat; stir in cracker crumbs and 1-1/2 cups coconut. Let stand until cool enough to handle., Using moistened hands, wrap about 1 tablespoon of mixture around each marshmallow (dip hands in water often to prevent sticking). Roll in remaining coconut; place on prepared baking sheet. Cover and freeze until firm. Store in an airtight container in the refrigerator or freezer. May be frozen for up to 2 months.

NAN MAY'S SNOWBALLS
Growing up in Newfoundland, I looked forward to Christmas each year for the huge family get-togethers, and of course the food that went along with them. This recipe is one that my Grandmother made every year. Definitely one of my favourite Christmas cookies.

- Combine milk, sugar, butter, and cocoa powder in a large pot; bring to a boil for 3 minutes. Stir vanilla extract into the milk mixture; boil another 2 minutes. Remove pot from heat.
- Stir oats and 2 cups coconut into the milk mixture until thoroughly mixed; cool for 5 minutes.
- Spread 1/2 cup coconut onto a plate. Roll the mixture into 24 balls and roll in the coconut. Set on a sheet of parchment paper until finished.

- Cover two large baking dishes with plastic wrap, pulling so surface is taut. Drop 16 scoops of ice cream onto prepared dishes, dipping the ice-cream scoop in hot water as you work. Freeze balls until firm, at least 1 hour.
- Meanwhile, preheat oven to 350 degrees. On a rimmed baking sheet, toss coconut with cinnamon. Toast, tossing occasionally, 6 to 10 minutes; let cool.
- Working with one ice-cream ball at a time, remove from freezer, and roll in coconut mixture; return to dish in freezer. Freeze until set, at least 30 minutes (or up to 1 day).

- Line a 9x5-in. loaf pan with foil. Grease foil with 1/2 teaspoon butter; set aside. Pulse 3/4 cup coconut in a food processor until coarsely chopped. Add cream cheese and remaining butter; pulse until blended. Gradually add confectioners' sugar; pulse until blended. Press into prepared pan. Refrigerate, covered, at least 3 hours. , Microwave candy coating and shortening until melted; stir until smooth. Cool slightly. Using foil, lift coconut mixture out of pan. Gently peel off foil; cut into 36 pieces. Taking a few pieces at a time, roll each into a ball; keep remaining pieces refrigerated., Using a toothpick, dip balls one at a time in melted coating mixture, allowing excess to drip off. Roll in remaining coconut; place on waxed paper-lined baking sheets. Refrigerate until set. Store in an airtight container in refrigerator.
