The cinnamon flavor's BIG in these bars. I bake them during the holidays to give as gifts to my daughters' teachers.

1/2 cup butter, softened
1 cup sugar
1 egg
1/2 cup all-purpose flour
1-1/4 teaspoons ground cinnamon
1/4 teaspoon salt
1 cup finely chopped pecans
Confectioners' sugar

Steps:

  • In a large bowl, cream butter and sugar. Add egg; beat well. Combine the flour, cinnamon and salt; add to creamed mixture and beat until smooth. Stir in pecans. Spread into a greased 8-in. square baking pan. , Bake at 350° for 35-40 minutes or until a toothpick inserted in the center comes out clean. Cut into small bars while warm; roll in confectioners' sugar.

1 1/2 pounds all-purpose flour
1/2 cup plus 2 tablespoons sugar
1 teaspoon salt
1 pound (4 sticks) cold butter, cubed
1/4 cup heavy cream
4 egg yolks
1 1/2 cups (3 sticks) butter, at room temperature
1 1/3 cups sugar
4 egg yolks
2 teaspoons vanilla extract
1/4 teaspoon salt
4 cups all-purpose flour
Food coloring
2 cups sugar
5 whole eggs plus 2 egg yolks
3/4 cup buttermilk
2 tablespoons finely ground cornmeal
1 1/2 tablespoons all-purpose flour
2 teaspoons ground cinnamon
1/2 teaspoon vanilla extract
1/4 teaspoon salt
1/2 cup brown butter, cooled
Nonstick cooking spray
All-purpose flour, for dusting
1 egg, whisked
Dragees, for decorating
Edible glitter, for decorating
Royal icing, for decorating

Steps:

  • For the crust: In a stand mixer fitted with the paddle attachment, combine the flour, sugar and salt. With the mixer running, drop in the butter and mix until the mixture resembles wet sand. In a small bowl, whisk together the cream and egg yolks, then pour into the mixer and whip until just combined. Turn the dough out onto a clean cutting board and cut in half. Using your hands, gently push each half of dough into a disc and wrap each in plastic wrap. Refrigerate for at least 6 hours or up to overnight.
  • For the cookie dough: In the bowl of a stand mixer fitted with the paddle attachment, beat the butter with the sugar. Beat in the egg yolks one at a time, then add the vanilla and salt. Add the flour, a little at a time, until incorporated. Divide the dough into small batches and color each with food coloring, as desired. Chill the dough for 1 hour before rolling. When ready to decorate the pie, roll the dough to 1/4-inch thick. Use cookie cutters or a knife to cut out shapes for decorating the pie. For the filling: In a large mixing bowl, whisk the sugar, eggs and yolks until the mixture turns a light, golden color. Then whisk in the buttermilk, cornmeal, flour, cinnamon, vanilla and salt. While whisking, slowly drizzle in the browned butter.
  • For the pie: Preheat the oven to 400 degrees F. Spray a 9-inch pie pan with cooking spray. Gently dust a clean work surface with flour, then place a pie dough disk on top and use a rolling pin to roll out the dough into a large circle, about 1/4-inch thick. Transfer the dough to the pie pan, then crimp the edges and prick the dough on the bottom with a docker or fork. Line the crust with parchment paper and fill with pie weights or dried beans to weigh the dough down. Bake until the dough just sets, 8 minutes. Remove the crust from the oven and reduce the oven temperature to 350 degrees F. Working quickly, use a pastry brush to brush the crust with egg wash. Carefully pour the filling into the crust.
  • Bake the pie until set but slightly jiggly, about 35 minutes, covering the edges of the crust with foil to prevent burning after about 10 minutes. Add the cookie dough topper decorations to the pie, then bake for 10 minutes more. Check the pie at about 40 minutes total; the center should still have a jiggle to it, but it should seem mostly set. Cool completely before decorating the pie with dragees, glitter and icing.

1 (18 1/4 ounce) box yellow cake mix
1/2 cup butter (melted)
3 eggs (divided)
1 (8 ounce) package cream cheese (softened)
4 cups confectioners' sugar
1 cup peanut butter chips
1 cup toffee pieces (divided)

Steps:

  • Set your oven to 350.
  • Grease a 13 x 9 pan.
  • With mixer, mix yellow cake mix, melted butter and 1 egg. Press into pan.
  • Next, beat cream cheese until creamy (takes a few seconds), add confectioners' sugar and two eggs and mix until well blended. Fold in peanut butter chips and ½ cup heath bar bits. Pour all this over yellow cake mixture. Sprinkle the rest of the heath bar bits on top and bake for 45 minutes. You can garnish with confectioners' sugar.

16 oz cream cheese
1 egg
1 cup sugar, divided
1 teaspoon vanilla
2 tablespoons cinnamon

Steps:

  • Preheat oven to 350°F (180°C).
  • In a bowl, beat cream cheese until smooth. Then, add half of the sugar, egg, and vanilla, and beat until smooth.
  • Roll out crescent dough and pinch the seams together.
  • Next, in a small bowl, mix the remaining half of the sugar with the cinnamon.
  • In a greased 9×13-inch (33x23 cm) baking dish, sprinkle half of the cinnamon sugar.
  • Lay down one crescent dough rectangle. Spread on cream cheese filling. Top with the other crescent dough rectangle, and sprinkle on the remaining cinnamon sugar.
  • Bake 30 minutes. Cool completely, then cut into 12 squares.
  • Enjoy!

I like this recipe because it is so simple to make. I read that cinnamon is very good for you. I found a cinnamon cookie here, but I didn't like that it didn't hold together. I took a recipe of mine and adapted it to the Cinnamon Cookie I wanted. If you choose to glaze this cookie, warm the frosting in the microwave so that it can be spread thinly.

1 cup sugar
1/2 cup vegetable oil
1/4 cup dark molasses
1 large egg
2 cups all-purpose flour
1 1/2 teaspoons baking soda
1 1/2-2 tablespoons cinnamon
1 teaspoon salt
1/2 cup ground pecans

Steps:

  • Mix sugar, oil, molasses and egg.
  • Stir in flour, soda, salt and cinnamon.
  • Mix well.
  • Press the dough into a solid ball and divide in half with a knife.
  • Shape each half into a strip 15" x 1-1/2" 3" apart on a greased cookie sheet or a cookie sheet lined with parchment paper. You may use a rolling pin to help flatten.
  • Bake 375° until edges are light brown and tops are cracked, 6-7 minutes (soft), 8-9 minutes (crisp).
  • If you want you can glaze them now coming out of the oven with a powdered sugar, milk & vanilla paste.
  • Warm glaze in microwave before spreading on warm cookies.
  • Cool 2 minutes.
  • Cut each strip crosswise into slices for cookie bars.
  • Let cool and enjoy.

12 cinnamon graham crackers
2 cups chopped walnuts
1 cup butter
1 cup packed brown sugar
½ teaspoon ground cinnamon

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease a 10x15 inch jellyroll pan.
  • Arrange cinnamon graham crackers with sides touching in a single layer to cover the bottom of the pan. Sprinkle the walnuts evenly over the crackers. In a small saucepan over medium heat, combine the brown sugar, butter and cinnamon. Cook stirring constantly until the mixture begins to boil. Continue to boil the syrup for 3 minutes without stirring. Remove from heat and pour over crackers.
  • Bake for 8 to 10 minutes in the preheated oven, until bubbly and slightly darker around the edges. Cool completely in the pan. Break into pieces and store in an airtight container at room temperature.
