Cinnamon Streusel Bread - Cinnamon Quick Bread with Icing image

This amazingly easy cinnamon bread is the perfect sweet bread to have with breakfast or as a dessert. This cinnamon swirl bread it topped with loads for crumbly streusel and topped with icing for the perfect finish.

Number Of Ingredients 17

1 stick butter (softened (I use salted))
¾ cup granulated sugar
1 egg
½ cup milk
½ cup sour cream
1 teas vanilla extract
2 cups flour (all purpose)
¾ teas salt
1 teas ground cinnamon
1 teas baking soda
1 teas baking powder
5 tbsp butter (cold)
⅔ cup brown sugar (packed)
½ cup flour (all purpose)
1 tbsp cinnamon
½ cup powdered sugar
2-3 teas milk

Steps:

  • Preheat oven to 350° F
  • With an electric mixer, cream the softened butter and ¾ cup sugar together until smooth
  • Add the egg and mix well
  • Add the milk, sour cream, and vanilla and mix together
  • Sift the flour, salt, cinnamon, baking soda and baking powder together
  • Mix the dry ingredients into the wet ingredients until combined and smooth
  • With a pastry cutter, cut the cold butter, brown sugar, cinnamon and flour together until it is crumbly. The crumbs should be about the size of the pea or a little larger. They will not be uniform in size
  • Add half of the batter to a prepared pan. Add 3-4 tablespoons of the streusel mixture on top.
  • Spoon the rest of the batter in top and even it out
  • With a knife, swirl the batter together just a little bit (optional)
  • Add the rest of the streusel topping evenly over the top of the batter
  • Bake uncovered in the preheated oven for 55 minutes or until a toothpick inserted in the center comes out clean (could be longer depending on the oven)
  • Whisk together the powdered sugar and milk until it is smooth. Only add 2 teaspoons at first to see if it's the right consistency. If it is still dry or lumpy add ½ teaspoon at a time until it is smooth
  • Let the bread cool for 10 minutes then with a knife, loosen it from the edges. After it is completely cool, carefully remove it from the pan and put it on a serving dish
  • Drizzle the icing over the top. Serve and enjoy!

Steps:

  • Preheat the oven to 350 degrees.

  • Put the mixture in the fridge while you make the bread batter.
  • Sift together your flour, sugar, baking soda and salt into a large bowl.
  • Into a second large bowl whisk together your buttermilk, egg, and canola oil.
  • Combine the dry ingredients into the wet ingredients and whisk until you can no longer see flour (do not overmix).
  • In a separate bowl, mix the 1/4 cup sugar and 2 teaspoons cinnamon for the swirl.
  • Pour half the batter into the loaf pan, then cover evenly with the cinnamon swirl mixture.
  • Pour the remaining batter into the loaf pan, then swirl the batter gently with a knife.
  • Cover evenly with the crumb topping.
  • Bake for 50-55 minutes, let cool for 15 minutes before removing from the loaf pan to cool completely.

  • Preheat oven to 350*F In a mixing bowl combine butter and brown sugar. Add egg and mix well, then scrape bowl. Slowly add buttermilk until fully incorporated. Add flour 1/2 cup at a time, mixing well after each time. Add salt and baking soda, mix then scrape sides of bowl. Gently stir in rhubarb. Pour mixture into 2 small bread pans. 2 teaspoons ground cinnamon

3/4 cup unsalted butter, room temperature

Steps:

  • Preheat the oven to 350°F and line a 1 pound loaf pan with parchment paper on all sides. Set aside.
  • In a small bowl combine all the ingredients for the cinnamon sugar swirl. Mix together and set aside.
  • In a stand mixer fit with the whisk attachment, cream the butter and sugars together until light and fluffy, about 2 minutes.
  • Scrape down the sides of the bowl and add the eggs and vanilla extract, beating until smooth and well combined.
  • In a separate bowl combine the flour, baking powder, baking soda, cinnamon and salt. Stir to evenly distributed everything.
  • Add about half of the dry ingredients and mix. Next, add the buttermilk and mix. Add the remaining dry ingredients and mix until no streaks of flour remain. Do not over mix.
  • Spoon half the batter into your prepared pan and use a greased rubber spatula to spread the batter to the edges. Top with the cinnamon sugar mixture. Spoon the remaining batter over the sugar and spread to the edges of the pan.
  • Use a butter knife to make big swirls in your bread, dragging your knife through the bread a few times.
  • Make the streusel topping (I usually just do this in the dirty bowl you made the batter in because I am lazy, but you can also use a clean bowl). Combine the flour, brown sugar, cinnamon, and salt and stir to combine. Add the melted butter and mix until the mixture resembles wet sand and clumps together.
  • Sprinkle the streusel evenly over the top of your bread.
  • Bake for 45 minutes or until a knife inserted into he middle comes out mostly clean and the bread is golden brown. Transfer to a wire rack to cool.
  • While the bread cools, make the vanilla glaze. Combine all the ingredients for the glaze in a small bowl and whisk together until smooth and creamy.
  • Once the bread is cool, drizzle with the glaze and enjoy!

CINNAMON STREUSEL BREAD (GLUTEN-FREE)

Went to a Gluten-Free baking class and this was one of the featured breads. Was quite delicious although I haven't made it myself yet. The outer layer was nice and crisp without being burnt and it had just the right amount of cinnamon and sugar. The recipe calls for Bette Hagman's Bean Flour Mix. *This recipe is 2 parts garfava bean flour, 1 part sorghum flour, 3 parts cornstarch, and 3 parts tapioca flour. **Soured milk can be substituted for buttermilk by adding normal milk to 1 tbsp of vinegar to total 3/4 cup.

  • Using an electric mixer, add liquid ingredients to the dry ingredients. You may require less milk, so add slowly. The consistency of the batter should be slightly thicker than cake batter and sticky.
  • Use the mixer at medium and high speed until smooth, about 3 minutes.
  • Split half to two-thirds of the mixture evenly between the 2 loaf pans.
  • Sprinkle the streusel mixture into each loaf pan. Swirl gently into batter.
  • Pour remaining batter into loaf pans, on top of the streusel swirl.
  • Sprinkle reserved cinnamon/brown sugar mixture on top of each loaf.
  • Bake bread at 350F for 40-45 minutes. Do not undercook. Check doneness with toothpick or cooking thermometer. Internal temperature should read 210-212F when done.
  • Remove bread from oven and place on wire rack. Allow to cool for 5 minutes before removing from pan.
