- In a large bowl, mix flour and salt; cut in lard until crumbly. Gradually add milk, tossing with a fork until dough holds together when pressed. Divide dough in half. Shape each into a disk; wrap in plastic. Refrigerate 1 hour or overnight., For filling, in a large bowl, mix sugar, cinnamon and ginger. Add apples and toss to coat. Cover; let stand 1 hour to allow apples to release juices, stirring occasionally., Drain apples, reserving syrup. Place syrup and, if desired, bourbon in a small saucepan; bring to a boil. Reduce heat; simmer, uncovered, 20-25 minutes or until mixture thickens slightly and turns a medium amber color. Remove from heat; cool completely., Preheat oven to 400°. Toss drained apples with flour and salt. On a lightly floured surface, roll one half of dough to a 1/8-in.-thick circle; transfer to a 10-in. cast-iron or other deep ovenproof skillet. Trim pastry even with rim. Add apple mixture. Pour cooled syrup over top; dot with butter., Roll remaining dough to a 1/8-in.-thick circle. Place over filling. Trim, seal and flute edge. Cut slits in top. Brush milk over pastry; sprinkle with coarse sugar. Place on a foil-lined baking sheet. Bake 20 minutes., Reduce oven setting to 350°. Bake 45-55 minutes longer or until crust is golden brown and filling is bubbly. Cool on a wire rack.

Mix in a large bowl: 2 cups all-purpose flour I teaspoon salt 1 tablespoon sugar Then cut in using the dough blender: 6 tablespoons butter 6 tablespoons shortening 6 to 8 tablespoons ice water 1/2 teaspoon Nutmeg 1/2 teaspoon Cinnamon Wrap Pie Crust Dough Second Step: Chill the Pie Dough Wrap your pie crust in plastic wrap. Then place in refrigerator for 20 or more minutes, while you make the pie filling. First Step: Slice Apples Peel and slice your apples. Soak them in water with a tablespoon of lemon juice. This will prevent the first apple cut from. Apple Coating for Pie Second Step: Mix Filling Mix in large mixing bowl: 1 cup sugar 2 tablespoons flour 1/2 teaspoon cinnamon 1/4 teaspoon salt 1 tablespoon vinegar Apples and mixture Third Step: Mix Apples Now, drain the water off of the apples and mix them with the spices. All Finished! Now that you have finished the filling, it is time to assemble your pie. First Step: Cut Now that your pie crust has had plenty of time to cool, divide it into two, equal halves. Rolling Pie Crust Second Step: Rolling Pie Crust Roll one of the balls of pie crust out until it is around 1/8th of an inch thick. Crust in Pie Pan Third Step: Putting Crust in Pie Pan Once you have rolled out the dough, wrap it around the rolling pin and unroll it onto your pie pan. This will prevent the crust's edge from burning while it bakes. You will want to take the tinfoil off about ten minutes before the pie is done. This way, the apple pie will have a golden brown edge. Bake your pie at 400 degrees for 50-60 minutes. Apple Pie Second Step: Brush With Egg White For a glossy effect, brush a small portion of egg white on top of the crust when you remove the tinfoil. Sprinkle a small amount of Cinnamon Sugar over the top of the egg white for a sweet, sugary kick to your pie.

- Roll out bottom pie pastry on a lightly floured sheet of waxed paper and place in 9-inch standard pie pan; place in refrigerator for 15 minutes.
- In a big bowl, combine apples, brown sugar, lemon juice, and salt; toss well then set aside for 15 minutes.
- In a small bowl, mix the sugar and cornstarch together; stir this mixture into the apples along with the cinnamon.
- Transfer filling into the chilled pie shell; smooth the top with your hands.
- Roll out top pie pastry into a 10-inch circle on a sheet of lightly floured waxed paper.
- Moisten the edge of the pie shell with a pastry brush.
- Invert the top pastry over the filling, center, and peel off the paper.
- Press the top and bottom pastries together along the dampened edge.
- Trim the pastry and crimp or flute edges as desired.
- Using a fork, poke several steam vents in the top, including a couple along the edge so you can check the juices there later.
- Brush the top with a little milk and sprinkle with sugar.
- Put pie in 400° oven on center rack; bake for 30 minutes.
- Lower heat to 375° and rotate pie 180° (also slide a large foil-lined baking sheet onto the rack below to catch any drips).
- Bake about 25 more minutes or until golden brown.
- When done, there should be thick juices bubbling out of the steam vents along the edge.
- Place pie on a wire rack and let cool at least 2 hours, preferably longer, before serving.
OLD-FASHIONED CINNAMON CANDY APPLE PIE

- Cut lard into flour and salt, mix with enough ice water to hold together.
- Roll out half of dough and line an 8 or 9" pie pan. Roll another circle for top with other half.
- In large mixing bowl, stir together filling ingredients except apples and candies.
- Fold in apples well.
- Turn into pastry-lined pan and dot with butter.
- Sprinkle with 2 Tbl. cinnamon candies.
- Cover with top crust and seal edges.
- Cut slits in top, brush with milk.
- Sprinkle with a little sugar.
- Bake about 1 hour at 350 degrees.

This is my mother's apple pie. This is the recipe I use all the time and I love it. I also use a dash of nutmeg so if you wish you can put that in too.

- Prepare your pastry for a two crust pie. Wipe, quarter, core, peel, and slice apples; measure to 6 cups.
- Combine sugar and cinnamon. The amount of sugar used depends on how tart your apples are.
- Arrange apples in layers in pastry lined pie plate. Sprinkle each layer with sugar and cinnamon. Dot top layer with small pieces of butter or margarine. Cover with top crust.

- Preheat oven to 350°F (180°C) and spray a pie dish with nonstick oil.
- Peel and cut the apples into thin slices and place in a bowl.
- Add sugar, cinnamon and cornstarch to apples and stir.
- Cut each cinnamon roll in half and roll out with flour until thin.
