CINNAMON SUGAR DONUT MUFFINS
Steps:
- Preheat oven to 350°F.
- In a large mixing bowl, combine flour, sugar, baking powder, salt and cinnamon.
- In a separate bowl, whisk together milk, egg, melted butter, and vanilla.
- Pour the milk mixture into the flour mixture and stir just until no big lumps remain. The batter will be a bit runny.
- Fill prepared muffin pan about ⅔ full of batter per spot. For mini muffins bake 12-14 minutes, for full-size muffins, bake 20-24 minutes.
- Remove from oven and let rest in pan for 5 minutes before placing the muffins on a rack to cool.
- Once cooled, combine sugar and cinnamon topping. Dip tops of muffins in the melted butter then roll the top in the cinnamon sugar to coat. Place back on the rack and repeat with remaining muffins.

- Preheat the oven to 375 degrees farenheit. Spray a muffin pan or mini muffin pan with nonstick spray.
- In a large mixing bowl, add the flour, sugar, baking powder, salt, cinnamon, and nutmeg. Whisk them together.
- In another bowl, add the milk, eggs, melted butter, and vanilla extract. Stir them together till smooth.
- Add the liquid mixture to the dry mixture, and stir just until no big lumps remain.
- Scoop the batter into the prepared muffin pans, filling each spot about 2/3 full.
- Bake mini muffins for 8 to 11 minutes, or regular muffins for 15 to 20 minutes. Or until an inserted toothpick comes out clean.
- Let the muffins cool for 5 minutes in the pan, then transfer them to a cooling rack to cool for another 5 to 10 minutes.

- Preheat oven to 350°. In a large bowl, combine flour, baking powder, salt, nutmeg and cinnamon. In a small bowl, combine sugar, oil, egg and milk; stir into dry ingredients just until moistened. , Fill greased or paper-lined muffin cups half full; place 1 teaspoon jam on top. Cover jam with enough batter to fill muffin cups three-fourths full. Bake until a toothpick comes out clean, 20-25 minutes. , Place melted butter in a small bowl; combine sugar and cinnamon in another bowl. Immediately after removing muffins from the oven, dip tops in butter, then in cinnamon sugar. Serve warm.

- Preheat the oven to 350 degrees F. Lightly grease a 12-cup muffin tin with cooking spray. Set aside. (See note for mini muffin tin.)
- For the muffins: in a medium bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In a separate bowl, whisk together the egg, vanilla, milk (or buttermilk), oil (or melted butter).
- Add the wet ingredients to the dry ingredients and mix with a rubber spatula until just combined and no dry streaks remain. Don't over mix.
- Scoop the batter into the prepared muffin tin, filling the cups 2/3 full. Bake for 15-18 minutes until the tops spring back lightly to the touch.
- Let the muffins cool for a few minutes before removing them from the muffin tin to a cooling rack to cool completely.
- For the topping: in a small bowl, whisk together the sugar and cinnamon.
- Dip the top of the muffins in the melted butter. Roll the top of each muffin in the cinnamon and sugar until evenly coated with cinnamon and sugar.

- Preheat oven to 375 degrees F (190 degrees C). Grease 24 mini-muffin cups.
- Mix 1/2 cup sugar, 1/4 cup margarine, and nutmeg in a large bowl. Stir in the milk, then mix in the baking powder and flour until just combined. Fill the prepared mini muffin cups about half full.
- Bake in the preheated oven until the tops are lightly golden, 15 to 20 minutes.

- Preheat oven to 375 degrees F (190 degrees C). Grease muffin cups or line with paper muffin liners.
- In a large bowl, cream together shortening and 1 cup sugar; beat in egg. Stir together flour, baking powder, salt and 1/4 teaspoon cinnamon. Stir flour into egg mixture alternately with milk. Spoon batter into prepared muffin cups.
- Bake in preheated oven for 20 minutes, or until a toothpick inserted into center of a muffin comes out clean. While muffins bake, combine 1/2 cup sugar and 1 teaspoon cinnamon.
